1 cup wild rice, rinsed
Coarse salt and freshly ground black pepper
2/3 cup coarsely chopped chestnuts (either fresh or from a jar or can), toasted
1/2 cup finely chopped onion
2 teaspoons finely chopped fresh thyme
1 teaspoon finely chopped fresh sage
3 tablespoons finely chopped flat-leaf parsley, plus more for garnish
1 1/2 tablespoons finely chopped fresh dill
4 Cornish game hens, rinsed and patted dry
1 cup pomegranate juice
2 cups homemade or canned store-bought low-sodium chicken stock
1/2 cup white wine, optional
1/2 cup all-purpose flour
1 cup plain Greek yogurt
2 cloves garlic, finely chopped
2 tablespoons extra-virgin olive oil
2 tablespoons finely chopped fresh mint
1/4 cup pomegranate seeds
1/2 cup crumbled feta cheese

Steps:

  • In a 2-quart saucepan, combine rice, 3 cups cold water, and 1 teaspoon salt. Bring to a boil over high heat. Immediately reduce heat to low, cover, and cook until all the liquid has evaporated, 45 to 55 minutes.
  • Preheat the oven to 375 degrees with rack in center of the oven. Transfer rice to a large bowl, along with chestnuts, onion, thyme, sage, parsley, and dill; stir to combine. Lightly season the cavity of each game hen with salt, and loosely fill with equal amounts of stuffing, leaving a little space in each for the rice to expand during roasting. Any remaining stuffing may be baked in a covered heatproof dish; set aside.
  • Using kitchen twine, truss hens by tying the legs together tightly, looping each side of the string around a wing, and bringing the string all the way around the bird tightly to hold the legs together and the wings close to the body.
  • Season hens with salt and pepper, and place breast side down on a rack set in a roasting pan. Roast for 15 minutes, and baste with pomegranate juice. Continue basting with remaining pomegranate juice every 15 to 20 minutes. During the last 25 minutes of roasting, place the reserved stuffing into the oven to heat. When 10 minutes remain, flip the hens over and continue roasting until the hens are dark golden brown and the juices run clear when pierced at the thigh. Total cooking time for hens will be 50 to 55 minutes or until an instant-read thermometer inserted into the thickest part of the thigh, not touching the bone, should register 175 degrees to 180 degrees.
  • Remove hens and stuffing from the oven. Transfer hens to a platter. Cover with foil, and let rest for 10 to 15 minutes. Place roasting pan on the stove over medium-low heat. Add 1/2 cup chicken stock. Using a wooden spoon, scrape up any browned bits from the roasting pan. Add wine, if using. Sift flour into the roasting pan, and stir to combine. Slowly whisk in 1 1/2 cups stock. Cook until mixture has thickened, 5 to 6 minutes. The consistency of the gravy may be adjusted with a teaspoon or two of stock or wine. Season with salt and pepper.
  • In a small bowl, combine the yogurt, garlic, and olive oil. Gently stir in the mint and pomegranate seeds. Season with salt and pepper.
  • Place a hen on each of 4 plates. Spoon gravy over hens and garnish with parsley, feta cheese, additional stuffing, and yogurt sauce.

3 lb bone-in lamb shoulder, cut by butcher into 6 large chunks
7 cups water
1/2 teaspoon black pepper
2 teaspoons salt
1/4 cup clarified butter (see cooks' note, below)
1/4 cup pine nuts (1 1/2 oz)
1 large onion, chopped
1 1/2 teaspoons ground turmeric
1/2 teaspoon ground allspice
2 cardamom pods*, lightly cracked
1 (2-inch piece) cinnamon stick
2 cups stabilized whole-milk yogurt
2 cups long-grain white rice
4 (5-inch) rounds pita bread, halved
Accompaniment: 3 small red onions, quartered

Steps:

  • Combine lamb and 4 cups water in a wide 5-quart heavy pot (add more water to just cover lamb if necessary). Bring to a boil over moderate heat, skimming froth from surface. Once liquid is clear and at a full boil, add pepper and 1 teaspoon salt, then cover and simmer 30 minutes.
  • While meat is simmering, heat butter in a 12-inch heavy skillet over moderate heat. Add pine nuts and cook, stirring occasionally, until golden, about 5 minutes. Transfer nuts with a slotted spoon to paper towels to drain. Add onion to skillet and cook, stirring occasionally, until softened and golden, about 12 minutes. Stir in turmeric, allspice, cardamom pods, and cinnamon and cook, stirring, until fragrant, about 2 minutes.
  • Add onion mixture to lamb and simmer, covered, 1 hour. Remove lid and briskly simmer until liquid is reduced by half, about 1 hour more. Add yogurt, gently shaking and swirling pot to incorporate.
  • Simmer lamb over moderately low heat, uncovered, stirring occasionally in one direction only (or yogurt may curdle), until sauce is slightly thickened and meat is very tender, 30 to 40 minutes. Season sauce with salt and pepper if necessary and discard cinnamon stick.
  • While sauce simmers, bring remaining 3 cups water with remaining teaspoon salt to a boil in a 3-quart saucepan with a tight-fitting lid. Add rice and stir once, then reduce heat to low and cook, covered, 20 minutes. Slide pan off heat (do not lift) and let stand, covered, 5 minutes. Fluff rice gently with a fork.
  • Line a 3-quart shallow serving bowl with a single layer of pita halves (reserve remaining pita to serve alongside), then mound rice on top of bread. Spoon 1/2 cup sauce over rice to moisten and arrange meat over rice. Sprinkle with pine nuts and spoon 1/2 cup sauce over meat, then arrange reserved pita and red onions around edge of bowl. Pour remaining sauce through a sieve into a sauceboat or small bowl and serve on the side.

Ground red pepper is commonly found in North African & some Asian dishes, if you cannot find it use hot paprika or a mix of regular paprika with a little cayenne added.

1 large onion, finely sliced
6 tablespoons vegetable oil
1 1/2 lbs boneless chicken or 1 1/2 lbs lamb, cut into small chunks
1 -2 garlic clove, peeled and crushed
8 ounces yogurt
salt
1/4-1/2 teaspoon ground red pepper
1 teaspoon coriander powder
1 lb basmati rice
1/4 teaspoon saffron, soaked in about 1 tablespoon warm water
1 teaspoon ground cardamom

Steps:

  • Fry the sliced onion in the oil until soft and golden brown. Add the chicken or lamb pieces and fry until golden brown. Add the garlic and fry for a minute or two. Now add the yogurt, salt, red pepper and ground cilantro. Simmer over a medium heat until the meat is tender (about 40 minutes).
  • Meanwhile wash and soak the rice in plenty of water for about 30 minutes.
  • Bring 5 cups water to a boil in a large pan and add the rice. Bring back to a boil and cook for 2 to 3 minutes, then strain in a colander.
  • Take one half of the rice and put in a large pan. Add the chicken and its juices. Add the remaining half of the rice and s sprinkle the saffron and cardamom and a little more red pepper over it.
  • Cover the pan with a tightly fitting lid and increase the heat for a minute or so to bring back the juices to a boil, then place the pan in a preheated oven at 300°F for about 45 minutes.

1 teaspoon ground allspice
3/4 teaspoon ground cinnamon
1/4 teaspoon ground pepper
1 medium onion, chopped
2 tablespoons extra virgin olive oil
1 cup basmati rice, rinsed in several changes of water
2 1/2 cups chicken or turkey stock
Salt to taste
3 garlic cloves
2 cups shredded turkey
2 cups drained yogurt or thick Greek-style yogurt
2 tablespoons fresh lemon juice
1/4 cup crushed or finely chopped walnuts

Steps:

  • Mix together the allspice, cinnamon and pepper, and divide into two equal portions (1 teaspoon each). Set aside.
  • Heat 1 tablespoon of the olive oil over medium heat in a heavy 2- or 3-quart saucepan. Add the onion and a pinch of salt. Cook, stirring, until tender, about five minutes. Add the rice and 1 teaspoon of the spice mixture, and stir until the grains begin to crackle. Add 2 cups chicken stock and salt to taste (1/2 to 3/4 teaspoon). Bring to a boil, reduce the heat and simmer 15 minutes until the liquid has been absorbed by the rice. Remove the lid, place a kitchen towel over the pot and then return the lid. Allow to sit undisturbed for 10 minutes.
  • Heat the oven to 350 degrees. Oil a 2-quart baking dish. Heat the remaining tablespoon of oil over medium heat in a large, heavy skillet. Add the garlic. In a few seconds, as soon as it begins to smell fragrant, add the remaining spices and the turkey. Stir together for about a minute until the turkey is coated with the mixture. Remove from the heat. Season to taste with salt.
  • Spread the rice in the casserole in an even layer. Top with the turkey. Douse with the remaining stock.
  • Place the garlic in a mortar and pestle with a pinch of salt, and puree. Stir into the yogurt, along with the lemon juice. Spread over the turkey in an even layer, making sure to completely cover the meat so that it doesn't dry out in the oven. Sprinkle on the nuts. Place in the oven, and bake 15 to 20 minutes, just until warmed through. Do not allow the yogurt to bubble. Serve hot or warm.

Steps:

  • Blanch sugar snaps in boiling salted water until crisp-tender, about 4 minutes. Drain, refresh under cold running water, drain and pat dry. Place in a bowl and toss with the olive oil, the salt and pepper.
  • Place the rice in a bowl and toss in the basil, lime juice, 1 teaspoon of salt and pepper.
  • Place the cucumbers in a bowl and toss with the lemon juice, salt and mint.

1 pint plain yogurt
4 teaspoons ghee or clarified butter
3 cloves
3 cardamom pods
3 cinnamon sticks
3 green chiles, chopped
3 large onions, chopped
3 tomatoes, diced
1/2 cup fresh cilantro leaves
1/4 cup fresh mint leaves
1/2 cup water
1/2 teaspoon salt
2 cups basmati rice
3 teaspoons ghee or clarified butter
3 cloves
3 cardamom pods
3 sticks cinnamon
1 bay leaf
1 teaspoon black cumin seeds
3 1/2 cups water
1 1/2 teaspoon salt
1 pinch saffron (or yellow food coloring)
1/4 cup milk
1 large onion, peeled sliced and fried, for garnish
1/8 cup cashews, for garnish
1/8 cup raisins, for garnish
2 peeled and quartered hard boiled eggs, for garnish

Steps:

  • Place lamb in a bowl, coat with yogurt, cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
  • Begin preparing rice by soaking in water for 20 minutes. Drain and set aside.
  • Prepare masala 1 by grinding together garlic clove and ginger to a fine paste. This can be done through the feed tube of a running food processor and finished with a mortar and pestle or molachete.
  • Prepare masala 2 by grinding coriander seeds, fennel seeds and poppy seeds (either manually with a mortar and pestle or with a coffee grinder). Then make a fine paste by adding the red chiles through the feed tube of a food processor followed by the dry ground spices.
  • Prepare masala 3 by grinding together coconut, cashew nuts and yogurt (in that order) through the feed tube of a running food processor.
  • To begin cooking the lamb, heat 4 teaspoons ghee in a wok and swirl to coat inside surface. Add 3 cloves, 3 cardamom pods, and 3 cinnamon sticks, and "toast" briefly in the wok. Then, add chopped green chiles and onion and fry until mixture turns golden brown (be careful not to burn). Add masala 1 and stir well, cooking for a few minutes. Add masala 2 and stir well, cooking for a few minutes to integrate flavors. Add the diced tomatoes and cook for 2 minutes. Transfer marinated lamb to wok and also add cilantro and mint leaves. Reduce heat and simmer for 5 minutes, then add 1/2 cup water and salt. Cover and cook for 15 minutes, then stir in masala 3. Cover and cook until the sauce becomes thick.
  • For the rice:
  • Heat 3 teaspoons ghee in another wok or saucepan and add cloves, cardamom pods, cinnamon stick, bay leaf and cumin seeds, and fry for 1 minute. Add the rice and stir for about 2 to 3 minutes to "toast" the rice. Add the 3 1/2 cups water and salt, bring to a boil, then reduce heat, cover and let cook until the water is absorbed, about 15 to 20 minutes. When rice is done, remove from heat and allow to cool.
  • Preheat oven to 350 degrees F.
  • The biryani will be layered in a dish. A 13 by 9-inch ovenproof dish (such as the type used for lasagna) or something similar would be suitable. Divide rice into 3 parts and the lamb mixture into 2 parts. Grease the dish and arrange 5 alternate layers of rice and meat, beginning and ending with rice. Dissolve the saffron (or yellow food coloring) in the 1/4 cup milk and spoon it over the top layer of rice. Cover the biryani (with foil) and bake for 30 minutes. Let rest for a few minutes before serving.
  • Transfer to a serving plate to reveal layers. Garnish with fried onions, cashew nuts, raisins and hard boiled eggs.

This cooling Indian dish is perfect as an accompaniment to grilled meats. Curry leaves can be found at your local Indian store. If you can't find them, they can be omitted, but they do add a unique flavor and smell.

1 dried red chile pepper, broken in half
1 teaspoon black mustard seeds

1 cup plain yogurt
salt to taste

Steps:

  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, 20 to 25 minutes.
  • Heat the ghee in a small skillet over medium heat. Add the broken chile pepper, and cook until fragrant, about 30 seconds. Stir in the black mustard seeds, and cook until they begin to pop, about 30 seconds more. Remove from the heat, and stir in the turmeric, curry leaves, and asafoetida powder.
  • Whisk the milk, yogurt, and spice ghee together in a large bowl until smooth. Fold in the rice until well mixed. Season to taste with salt, then allow to cool to room temperature before serving.

Rice isn't actually "ruined" when it sticks to the bottom of the pot. Indeed, in a lot of places and across the Middle East, stuck-pot rice is encouraged for its sticky, crusty deliciousness. This is a dead-easy way to cook it, before serving with yogurt and spices. It's homey and delicious, beautiful and fragrant, all at once.

1 1/2 cup basmati rice, well rinsed
Freshly ground black pepper
1/4 cup peanut oil, or neutral oil like grape seed or corn oil
1/4 cup plain yogurt, preferably whole-milk
1 tablespoon lime juice
1 tablespoon good curry powder.

Steps:

  • Fill a medium pot with lightly salted water, and bring to boil. Stir in rice, return to boil and lower heat so water is at a lively simmer. Cook undisturbed 5 minutes; drain, and set aside. Rice will be only partly done. Season to taste with salt and pepper.
  • In a large mixing bowl whisk together 2 tablespoons oil, the yogurt, lime juice and curry powder. Season to taste with salt and pepper, and whisk until smooth. Add rice, and toss gently to coat with yogurt mixture.
  • Put 2 remaining tablespoons oil in a large heavy-bottom pot with tight-fitting lid, and turn heat to medium-high. Add rice mixture, pressing it down in pan with fork. Wrap clean kitchen towel around lid of pot so it completely covers inside of lid; gather corners on top so they do not fall anywhere near stove. Place lid on pot, sealing tightly. Mixture will sizzle immediately.
  • When rice and spices are fragrant - in 3 to 5 minutes - turn heat down very low. Cook undisturbed about 30 minutes; rice should smell toasty but not burned. Remove from heat, and let sit 5 minutes more.
  • Carefully remove lid and cloth, and turn pot upside down over a platter. If rice comes out in a single crust, terrific. If not, use a spatula to scrape crisp pieces out of pan and onto remaining rice. Season to taste with salt and pepper, and serve immediately.

1 (3 1/2 lb) whole chickens
1 small onion, chopped
1/2 teaspoon fennel seed
1/4 teaspoon chili pepper flakes
3 cardamom seeds, remove husks
1/2 inch cinnamon stick
1 garlic clove, minced
1/8 teaspoon turmeric
1/4 teaspoon salt
1/4 teaspoon paprika
1 -2 tablespoon curry powder, for the chicken (Optional , 1 tablespoon ,or more)
1 tablespoon curry powder, for the rice sticks (Optional, 1 tablespoon (or more)
1 inch piece fresh ginger, remove skin and chopped up
2 small tomatoes
1/2 cup coconut milk
1/4 cup yogurt
7 ounces rice sticks (2 packets)
14 1/2 ounces chicken stock, can
1 orange, cut up into slides
6 tablespoons oil
1 tablespoon ghee

Steps:

  • Cut chicken up into bite size pieces removing the skin, fat and discarding the backbone. Use a folk to hold the tomato and then over a flame, which will cause the.
  • skin to blister. then remove the skin. Do the same with the second tomato and then chop both tomatoes up.
  • Cooking Instructions-.
  • In a big pot add 3 tablespoons oil and 1 tablespoon gee. Add the onion, fennel seeds, pepper flakes, cardamom seeds, cinnamon stick, garlic, turmeric, salt, paprika, ½ teaspoon curry powder (or more to taste), ginger, chopped tomatoes. Cook and stir until the onions are a nice brown.
  • Add the coconut milk and yogurt. Stir until smooth.
  • Add the chicken pieces and toss.
  • Cook uncovered, stirring from time-to-time for about 1 hour... until the sauce is reduced to a thick consistency.
  • While the chicken is cooking (15 minutes before it is finished), in a big wok add the can of chicken broth and bring to a boil. When boiling turn off the heat and add the rice sticks. Toss with a folk to loosen up the strands. Let sit for about 5 plus minutes. Remove into a colander.
  • In the dried wok, add 3 tablespoons oil and ½ teaspoon curry powder (or more to taste). Add the rice sticks, toss with a folk to loosen the strands and cook to "al dente".
  • Remove the rice sticks to a nice size plate and spread out.
  • Add the chicken pieces in the center and with the sauce on top.
  • Add slices of orange around the edges of the plate.
  • Serve and enjoy!

  • Bring water to a boil in a medium saucepan. Add rice, cover and cook over low heat until barely tender (about 15 minutes).
  • Meanwhile, in a medium saucepan, bring the stock to a simmer over moderately high heat. Add the chicken and simmer until cooked through (about 10 minutes). Using a slotted spoon, transfer the chicken to a plate. Skim any fat from the surface of the stock.

Steps:

  • Bring water to boil in saucepan and add rice. Return to boil, then reduce heat, cover and simmer until tender and water is absorbed, 20 to 25 minutes.
  • While rice is cooking, toast mustard seeds and dal in skillet sprayed with nonstick cooking spray and oil until mustard seeds begin to pop, 2 to 3 minutes.

The combination of warm spices, fluffy rice and tender meat with the crispy, fried nuts is so delicious, it has become a meal in its own right. For a more elaborate presentation, you can top it with shredded chicken or lamb. Whichever way you serve it, you're in for a real treat, with a recipe so simple it can easily make its way into your weekly dinner rotation. Hashweh pairs perfectly with a salad of finely chopped cucumbers, tomatoes and onions dressed with lemon, olive oil, salt and some dried mint.

2 1/2 teaspoons ground allspice
1 1/2 teaspoons ground cinnamon
1/2 teaspoon black pepper

2 3/4 cups calrose, jasmine or basmati rice
2 tablespoons unsalted butter or ghee
2 tablespoons olive oil, plus more for nuts
1 1/2 pounds ground or minced lamb or beef (see Tip)
4 scant cups homemade or store-bought chicken stock

1/2 cup/3 ounces pine nuts
1 cup/4 ounces slivered almonds
2 Persian or other mini cucumbers

1 1/2 cups plain Greek yogurt
1 garlic clove, crushed
1/2 teaspoon lemon juice

Steps:

  • Make the rice: Mix together allspice, cinnamon, black pepper and nutmeg and set aside. Rinse rice in a colander until the water runs almost clear, then soak in cold water for 15 minutes. Drain and let stand for 15 minutes.
  • While rice soaks and drains, heat butter and olive oil in a large Dutch oven or nonstick pot over medium-high. Once the butter starts to sizzle, add half of the spice mixture and fry for a few seconds until fragrant. Add meat and cook, breaking the meat up finely with a wooden spoon, until any released water evaporates and the meat is nicely browned, 10 to 15 minutes. (It is important for the meat to be in small even-size pieces.)
  • Add drained rice to the pot, along with remaining spices, and stir to combine and coat with the oil. Pour in the stock and bring to a boil. Taste for seasoning: the stock should be saltier than you would like your finished dish to be, so add more salt to your liking, but do so generously.
  • Once the mixture boils, lower the heat to maintain a simmer, cover the pot and cook until the liquid has mostly evaporated but the rice is still easy to stir with a spoon and not sticking to the bottom, 8 to 12 minutes. Give the rice a final mix, turn off the heat, then wrap a clean tea towel or paper towels around the lid and cover again. (The towel will absorb excess moisture.) Let sit to steam in the residual heat for 20 minutes.
  • While the rice cooks, prepare the topping: Place a small skillet over medium-high and pour in enough oil to thinly coat the bottom (1 to 2 tablespoons). Add pine nuts and stir to coat evenly with the oil. Reduce heat to heat to low and continue to stir until nuts are a light golden color, about 4 minutes. Remove from the heat and drain nuts on a plate lined with paper towels. Repeat with slivered almonds.
  • While the rice rests, make the yogurt: Coarsely grate the cucumber and place in a colander in the sink. Sprinkle with salt, mix and set aside for 10 minutes to allow juices to drain. Give the cucumbers one final mix, pressing on them with the back of a spoon to ensure any excess liquid drains. Transfer to a bowl and add the yogurt, garlic and lemon juice and season with salt. Whisk until well combined, taste and add more salt if you'd like.
  • Fluff rice with a large fork, transfer to a serving platter and top with toasted nuts. Serve, passing the yogurt around for each person to place a dollop over their rice.

150 g nonfat plain yogurt
1 1/2 tablespoons curry powder
2 tablespoons coriander, divided between rice and chicken
4 chicken breasts, skinless, raw
150 g basmati rice
1 vegetable stock cubes or 1 beef bouillon cube
1 medium carrot, grated
1 medium red pepper, deseeded and chopped
1 green chilies or 1 red chili, deseeded and chopped
1 tablespoon mint

Steps:

  • Mix the yogurt and curry powder together in a glass or plastic bowl and add the first T of chopped coriander.
  • Place the chicken breasts between sheets of cling film, then use a meat mallet or rolling pin to beat them out until slightly flattened. Add them to the yogurt mixture, stirring to coat. Cover, chill and leave to marinate for at least 30 minutes or overnight.
  • Cook the rice with the stock cube until tender. Drain and rinse with cold water to cool quickly. add the carrot, red pepper, chilli, mint and remaining T of coriander.
  • Grill the chicken breasts for about 6 minutes on each side until thoroughly cooked.
  • Serve chicken with rice salad.

2 ears fresh corn
1.5 cups zucchini, cut into 1/2" pieces
1/2 cup sweet onion, sliced into thin wedges

4 slices thick sliced bacon
1 piece medium avocado
1/2 cup greek yogurt
1 ounces juice of 1/2 lemon
2 tablespoons olive oil
1 tablespoon water
1 tablespoon parsley, fresh
1/2 teaspoon salt
1/2 teaspoon basil, dried

Steps:

  • OK, you need to cook the wild rice in advance and let it cool. The rest takes only 20 minutes
  • Shuck the corn and drop into unsalted water. Set heat to high. Bring to boil, wait 3 minutes and turn off. Remove ears from pot to cool.
  • Chop zucchini into 1/2" pieces. Combine with sliced onion and olive oil, and either saute on high heat or roast in a convection toaster oven (I do the latter) until onions start to brown and zucchini starts to soften. Don't overcook.
  • Cook the bacon. The bacon is key, find meaty, thick strips. Drain and chop into generous pieces.
  • Combine avocado, yogurt, lemon juice, olive oil, water, parsley, salt and basil in a food processor and whirl until smooth and creamy. Add water to desired consistency. You want about the same as the greek yogurt, not sour cream thick, not runny.
  • Cut the kernels off the corn.

1 1/4 teaspoons salt
1/4 cup cold milk
1/2 cup plain yogurt (preferably the Greek or acidophilus variety), lightly beaten with a fork or whisk
3-4 cherry tomatoes, quartered and lightly salted
1/4 cup finely chopped cilantro
2 teaspoons olive or canola oil
1/4 teaspoon urad dal (use yellow split peas or lightly crushed raw peanuts as a substitute)
1/2 teaspoon whole brown mustard seeds
2-3 dried hot red chilies
10 or so fresh curry leaves (optional)

Steps:

  • Combine the rice, 3 cups water, and the salt in a medium pan and bring to a boil. Cover tightly, turn heat to very, very low, and cook 25 minutes. Empty rice into a wide bowl and add the milk. Stir to mix and to cool off the rice a bit. Now add the yogurt and mix again. Add the tomatoes and cilantro and mix them together.
  • Put the oil in a small pan or frying pan and set over medium-high heat. When hot, put in the urad dal. Let it turn reddish. Put in the mustard seeds and chilies. As soon as the mustard seeds pop and the chilies darken, add the curry leaves. A second later, pour the oil and spices over the yogurt-rice mixture. Stir to mix.

1 medium yellow onion, finely chopped
1 (2-inch) piece ginger, peeled, finely grated
2 garlic cloves, finely grated
1 1/2 cups yellow split peas, rinsed
2 teaspoons ground coriander
1 teaspoons ground turmeric
1/2 teaspoon ground cardamom
Pinch of crushed red pepper flakes
Kosher salt
1 lime
1 small red onion, very thinly sliced into rounds, rinsed
Pinch of sugar
1/2 cup plain whole-milk Greek yogurt
Cooked Jasmine or basmati rice (for serving)
Freshly ground black pepper

Steps:

  • Heat ghee in a medium pot over medium-high. Add onion and cook, stirring occasionally, until softened and lightly browned around the edges, 5-7 minutes. Add ginger and garlic and cook, stirring often, just to take the edge off garlic, about 30 seconds. Add 1/3 cup water and simmer, stirring occasionally, until water evaporates, about 1 minute. Add split peas, coriander, turmeric, cardamom, and red pepper flakes and cook, stirring, until fragrant, about 30 seconds. Add 4 cups water and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until split peas are very tender and most of the liquid is absorbed, 12-14 minutes; season with salt. Cover with a lid and keep dal warm over low heat while you make the toppings.
  • Finely grate zest from lime into a small bowl. Cut lime in half and squeeze juice into bowl (you'll have about 2 Tbsp.). Add red onion, sugar, and a large pinch of salt and toss, squeezing onion with your hands to help it soften quickly.
  • Mix yogurt and 2 Tbsp. water in a small bowl; season with salt.
  • Serve dal over rice drizzled with salty yogurt and topped with onion and pepper.
  • Dal (without yogurt and onion) can be made 1 day ahead. Let cool; cover and chill.
