An elegant, easy 15-minute creamy smoked salmon pasta recipe that is deeply satisfying, brightened with lemon and chives.

1 pound long, flat pasta, such linguine, fettuccini, or tagliatelle
6 ounces smoked salmon, cut into pieces
6 tablespoons (3 ounces) butter
2 lemons, zested and juiced
2/3 cup heavy cream
3 tablespoons minced chives (can substitute 2 tablespoons thinly-sliced scallions)
kosher salt

Steps:

  • Bring a pot of salted water to a boil and cook pasta until just shy of al dente. Drain, reserving some pasta water.
  • While the water is boiling, melt the butter in a large skillet over medium heat. Add the salmon, lemon juice, half of the lemon zest, and half of the chives. Cook for a few minutes, stirring occasionally. Stir in the cream and cook over low heat (the cream should be at a simmer) for about 5 minutes.
  • Add the drained pasta to the cream mixture. Cook for a few minutes, tossing to coat. Taste for seasoning. If the pasta looks a little dry, add pasta water a tablespoon or two at a time until it is creamy enough.
  • Serve immediately, topped with the remaining chives and lemon zest.

1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
1 ounce smoked salmon, cut into small pieces
1 tablespoon reduced-fat cream cheese

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.
  • Melt the butter with the olive oil in a saucepan over medium-low heat; when the mixture begins to bubble, add the shallots and cook until softened. Stir the salmon, cream cheese, and milk into the shallot mixture. Mix the reserved water from the pasta into the mixture. Transfer to a large bowl and toss with the pasta to serve.

Despite what an Italian might otherwise recommend, I like to serve this dish with freshly grated Parmesan cheese.

1/4 cup extra-virgin olive oil
1 small onion, chopped
1/4 pound smoked salmon, chopped
1 cup heavy cream (a.k.a. whipping cream)
3 tablespoons capers, drained
Salt and freshly ground black pepper to taste
N/A freshly ground black pepper
1 pound pasta, cooked al dente, drained (reserving about 1/4 cup of the cooking water), and tossed with olive oil
N/A olive oil
Freshly grated imported Parmesan cheese

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, but not browned. Add the smoked salmon and continue cooking just until the salmon turns opaque, 1 to 2 minutes. Pour in the cream and add the capers. Taste and adjust seasoning with salt and pepper. Be careful how much salt you add because the smoked salmon and capers are both salty. Add the pasta and toss to coat. If there doesn't appear to be enough sauce, add a couple of tablespoons of the pasta cooking water to thin it down. Serve with freshly grated Parmesan cheese.

2 cloves garlic, finely chopped
2 shallots, finely chopped
200 ml white wine
200 ml double cream
1/2 grated lemon, zest of
2 tablespoons lemon juice
2 tablespoons chopped fresh chives
200 g smoked salmon, slices cut into strips
500 g pasta (eg. fettuccine, linquini, tagliatelle)
salt, black pepper
4 teaspoons salmon roe (optional)
1/4 cup chopped fresh flat leaf parsley

Steps:

  • Melt butter in a large frying pan over medium low heat.
  • Add shallots and garlic and cook, stirring occasionally, until soft, 5 minutes.
  • Add wine and simmer until reduced by half, 3 minutes.
  • Add cream, lemon zest and juice, chives and salmon.
  • Heat over medium low heat, without boiling, until hot through, 1 minute.
  • Add salt& pepper to taste.
  • Meanwhile, cook pasta, drain, reserving 1/2 cup pasta water.

12 ounces penne rigate or other short pasta
1 1/2 teaspoons unsalted butter
3 tablespoons minced shallot
1/4 cup dry white wine
1 cup heavy cream
1 teaspoon fresh lemon juice
4 ounces thinly sliced smoked salmon, cut into 1-inch pieces
2 tablespoons chopped fresh chives

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. Meanwhile, in a small saucepan, melt butter over medium. Add shallot; season with salt and pepper. 2 tablespoons olive oil
1 tablespoon capers (optional)
1 (300 ml) carton cream
1 lemon, juice of
2 teaspoons Dijon mustard
100 g smoked salmon, sliced
1/2 bunch chives, snipped
1/4 cup grated parmesan cheese

Steps:

  • Cook pasta in plenty of boiling water.
  • Heat oil in frying pan.
  • Add capers.
  • Fry for 1 minute or until capers burst.
  • Stir in cream.
  • Bring to boil.
  • Blend in juice and mustard.
  • Reduce heat.

1 red chilli, deseeded and finely chopped
120g pack smoked salmon trimmings
zest 1 lemon and juice to taste
good handful snipped chives or finely chopped spring onions

  • Cook the spaghetti for 10 mins or following pack instructions until al dente.
  • Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli to soften it.

350g farfalle
200g tub light soft cheese
squeeze lemon juice
145g pack gravadlax , torn into pieces, or smoked salmon trimmings
bunch chives , snipped

Steps:

  • Cook the pasta following pack instructions. Once it's cooked, drain, reserving some of the water, and tip it back into the pan. Add the soft cheese, lemon juice and gravadlax or smoked salmon with some pepper and mix well. Add a little of the pasta water to help form a creamy sauce, and heat through.
  • Add most of the chives, stir, and divide the pasta mixture between bowls. Serve with the remaining chives scattered on top.
