GRILLED OR FRIED SKIRT STEAK

Skirt steak is an inexpensive cut of beef taken from the diaphragm muscle. It ranks with filet mignon as my favorite juicy and tender cut. It comes in long, narrow strips about 3/4 lb. each. The grain runs across the narrow side and so for serving the steak should be cut into serving-size pieces with the grain so that it can then be cut into bites against the grain.

2 pounds beef skirt steak
2 tablespoons lemon juice
⅓ cup prepared spicy brown mustard
1 pinch salt and pepper to taste
1 cup blue cheese dressing

Steps:

  • In a small bowl, stir together the lemon juice and mustard. Trim away most of the fat from the steaks, and rub with the mustard marinade. Place into a resealable bag, and marinate in the refrigerator for at least 1 hour, and up to 24 hours.
  • Preheat a grill or large skillet for medium-high heat.
  • Grill or fry steaks for about 5 minutes per side, or to your desired degree of doneness. Remove from the heat, and let the meat rest for 5 to 10 minutes to let the juices settle. Cut each steak along the grain into 3 or 4 pieces. Serve with blue cheese dressing.

I, too, saw Alton Brown put his skirt steak right on top of the dusted coals. I figured I could simply get my grill pan super hot and cook the steaks as if I were cooking outdoors. I use my own mix of Emeril Lagasse's BAM as a dry rub and I also use a bit of meat tenderizer. FYI This IS Fajita Meat where I live. :) Skirt Steak is usually packaged in one long strip so you can choose how much you want to eat by the inch!

2 lbs skirt steaks
1 teaspoon meat tenderizer
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon garlic
1 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon parsley
1 teaspoon paprika
1 teaspoon onion powder
2 tablespoons olive oil

Steps:

  • Cut steaks to desired length.
  • Sprinkle tenderizer on both sides of steaks.
  • Sprinkle spices on both sides of steaks.
  • Get actual spice mix recipe from Emeril's site.
  • Put oil into a bowl.
  • Lay the meat into the oil.
  • Turn over and oil the other side of the steaks.
  • Place steaks on dry hot surface of your grill pan.

Skirt steaks, aged provolone, prosciutto and sage turn the tastebuds on in this unusually delicious dish. Easy, yet impressive and the assembly can be done hours in advance and stored in the fridge until ready to cook. I highly recommend getting a good, aged provolone. 2 lbs skirt steaks, trimmed well of fat
fresh ground black pepper, to taste
6 ounces aged provolone cheese, sliced
2 bunches fresh sage
12 slices prosciutto
1/4 cup extra virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut the steak into 3 1/2 to 4-ounce pieces. Pound each steak out evenly to about 25 percent of its original thickness. Season them with pepper. On top of each steak place a slice of provolone, some sage leaves, and 2 slices prosciutto. Roll them up into a pinwheel (log) and secure with toothpicks.
  • Heat the oil in a skillet over medium-high heat and sauté the pinwheels until they are brown on both sides. Place them in the oven and roast until they are medium rare, about 7-9 minutes. Let the steaks rest for 5 minutes before carving them into bite-sized wheels.
  • Put the skillet back on medium-high heat. Add the remaining sage leaves and cook until they are crispy. Drain them on paper towels; use them to garnish steak.
