SHRIMP FRA DIABLO
A thick, spicy sauce of garlic, olive oil, and fire-roasted tomatoes is sauteed with shrimp or your favorite seafood. Legend has it that it was named for Michele Pezza, also known as 'Fra Diablo' (Friar Devil), who helped push Napoleon's forces out of Naples. Serve the sauce over hot pasta, or, my favorite, hot couscous cooked with olive oil and garlic.

SPAGHETTI DIABLO WITH SHRIMP
The sauce was tangy and sharp, mellow by my standards for spice, but just right for Nancy and Quinn. Topped with the shrimp, Pecorino cheese and some parsley, it was very satisfying.

Steps:
- Bring 4 quarts water to a boil in large Dutch oven or stockpot.
- While water is heating, heat 12-inch heavy-bottomed skillet over high heat for 4 minutes.
- Meanwhile, toss shrimp with half of red pepper flakes, 2 tablespoons olive oil, and ¾ teaspoon salt.
- Add shrimp to hot skillet and quickly arrange in single layer; sear until bottom of shrimp forms small spot of crust, about 30 seconds.
- Remove skillet from heat, turn shrimp over, and add cognac; pause until cognac has warmed slightly, about 5 seconds, and return to high heat.
- Wave lit match over pan until cognac ignites, shaking pan.
- When flames subside, 15 to 30 seconds later, remove shrimp to medium bowl and set aside.
- Allow empty skillet to cool, off heat, for 2 minutes; return to burner over low heat; add 3 tablespoons olive oil and 3 tablespoons garlic and cook, stirring constantly, until garlic foams and becomes sticky and straw colored, 7 to 10 minutes.
- Add remaining red pepper flakes and 3/4 teaspoon salt, sugar, tomatoes, and wine, increase heat to medium-high, and simmer until thickened and fragrant, about 8 minutes longer.
- Stir in reserved shrimp (with accumulated juices), remaining 1 tablespoon garlic, and parsley and simmer until shrimp have heated through, about 1 minute longer.
- Off heat, stir in remaining 1 tablespoon olive oil.
- Meanwhile, add pasta and 1 tablespoon salt to boiling water, stir to separate pasta, and cook until al dente; reserve 1/3 cup pasta cooking water and drain pasta.
- Transfer drained pasta back to now empty Dutch oven or stockpot; add about 1/2 cup sauce (sauce only, no shrimp) and 2 to 3 tablespoons reserved pasta cooking water; toss to coat.
- Divide pasta among warm serving plates, top with a portion of sauce and shrimp, and serve immediately.
DIABLO PASTA WITH BACON WRAPPED SHRIMP
Steps:
- In a large food processor, blend the chipotles, garlic, Worcestershire, tomatoes, beer and cilantro.
- Add the puree to a nonstick skillet and heat until the sauce bubbles.
- Making 2 servings at a time, heat 1 stick butter with 2 teaspoons habanero in a large skillet. When the butter is melted, add one-third of the pasta and one-third of the Diablo sauce. Mix together for 20 seconds, remove from the heat and reserve. Repeat 2 more times.
- Top with 1 bacon wrapped shrimp per serving.
- Preheat the oven to 350 degrees F. Place the bacon on a baking sheet and bake until half cooked, 8 to 10 minutes. Let the bacon cool to room temperature.
- Wrap each shrimp with 1 slice of bacon and secure with a toothpick. Grill until the shrimp is fully cooked and the bacon is crispy, 2 to 3 minutes.
DIABLO SHRIMP
Steps:
- Bring a large pot of lightly salted water to a boil. Cook angel hair at a boil, stirring occasionally, until cooked through yet firm to the bite, 4 to 5 minutes; drain.
- Melt butter in a large skillet over medium-low heat. Stir olive oil, jalapeno pepper, and red pepper flakes into the melted butter; cook until the flavors of the peppers infuse into the butter mixture, about 10 minutes. Remove and discard the jalapeno slices if desired; they will make this dish really hot if you leave them in. Stir white wine into the butter mixture; cook another 5 minutes. Add shrimp and capers. Increase heat to medium; cook and stir the shrimp until they are bright pink on the outside and no longer transparent in the center, about 5 minutes. Add drained pasta to the shrimp mixture; toss to coat. Top with Parmesan cheese to serve.

SHRIMP AND CALAMARI DIABLO
Very simple and spicy recipe that you can modify to control the heat. Just adjust the red pepper flake as desired. I used some fresh chopped mozzarella that I melted with a blowtorch because I was almost out of Pecorino Romano, and used it all during the cooking. I also used Barilla's Arrabbiata sauce for some extra flavor in place of tomato puree. Use the pasta of your liking. I wanted to use black squid ink pasta but couldn't find any in the short time I had. I went with angel hair and it was fine!

Steps:
- Heat oil in non stick skillet, add garlic, green onions, red pepper flake and pepperoni, bring to simmer.
- Turn up heat and add wine while stirring constantly. Bring to near boil.
- Add shrimp and cook for one minute, then flip and cook for another minute. (I hate overcooked shrimp, so at this point I removed shrimp and placed in a bowl.).
- Add squid rings and tentacles. They will cook very quickly so pay close attention. After 2 minutes return shrimp to skillet. Reduce heat to simmer.
- Add your tomato puree. This is where you can be creative. I actually used one cup of Barilla's Arrabbiata sauce for extra kick!
- Grate in some of the fresh Pecorino Romano cheese and stir inches Remove from heat.
- Serve over your choice of pasta with rest of grated Pecorino Romanao and garnish with fresh chopped parsley. Enjoy!

Steps:
- 1. Wrap tortillas in foil and place in 350 degrees oven to warm. Peel, devein & cut shrimp into bite size pieces then set aside.
- 2. In large skillet add 2T canola or olive oil, onions & bell peppers saute until softened 2 minutes.
- 3. Add minced garlic, chopped tomatoes with liquid, cumin, red pepper flake, garlic powder & 1/2 squeezed lime and let simmer for 10 minutes to reduce.
- 4. Stir in shrimp, cabbage, cilantro & 1/2 finely chopped jalapeno and shut heat off. The shrimp will finish cooking in the hot tomato liquid. *Tip: I added 4oz. chopped imitation crab meat to these and it turned out great.
- 5. Build tacos by adding the shrimp filling to a soft shell tortilla and top with a squeeze of lime juice, shredded cheese & sour cream & jalapeno slices. These are a bit spicy but you can reduce the heat by eliminating part of the red pepper flake and/or jalapenos.

TOMATO-SHRIMP SCAMPI DIABLO
This dish evolved from my spicy omelette sauce recipe. This chunky sauce just "screamed out" to have seafood added and since butter, vermouth, and garlic are integral to this particular blend, I figured I could add shrimp and call it a scampi of sorts. You could also add calamari rings, bay scallops, mussels, and/or fish chunks if you wished and it would only add to this dish's superb flavor. In any case, it's not pop-your-eyeballs-out hot but you can supplement the heat from the cooking oil by adding a little Tabasco as directed. This is a shrimp dish that will be quickly devoured by a small crowd as I discovered when I first served it as one of multiple appetizers at a family gathering -- it was the first to disappear. As a meal, you can serve this over either cooked Basmati rice or egg noodles. I've offered some ingredient substitutions which have, so far, worked beautifully for me. As a final comment, I love to take this dish camping and cook it in a wok right over an open campfire. Enjoy this dish -- you won't be bored with it, I guarantee that much!

Steps:
- In a large no-stick skillet over medium heat, pour in the cooking oil and the butter.
- When the oil has heated some, drop in the onion and minced garlic and sauté, stirring frequently, until the onion has tenderized, (about 6-8 minutes).
- Next add the stewed tomatoes with the juice and the salsa verde. Allow this blend to reduce for about 5 minutes, uncovered, stirring frequently.
- Add the honey, the vermouth, the raw shrimp, and the Tabasco (if using) and sautee for 6 more minutes, stirring constantly. (If adding mussels and/or fish chunks, cook for an additional 3 minutes and until all mussels have opened -- discard any mussels which fail to open after a few minutes).
- NOTE: If adding additional seafood, you may wish to add some extra liquid during the final sauté. I recommend using canned chicken broth which I have used with great success in this dish.
- You can serve this dish (on small plates) as an appetizer -- or, as a meal, you can serve it over either cooked rice or egg noodles.

Steps:
- While thawing shrimp, combine all items above except the shrimp whisk together and pour into a 1 gallon zip lock bag. (I like to make this the day before and let it hang out in the fridge for 24 hours before marinating the shrimp)
- Once shrimp is thawed, rinse with cold water and let drain for a couple of minutes.
- Pierce each shrimp a couple of times with a fork and add to the zip lock bag and then mix the 2 pounds well with the marinade after which let marinate in the fridge for 1 to 1.5 hours while laying flat turning and mixing once or twice.
- Soak wooden skewers in warm water for at least 30 minutes before grilling time. (Last 1/2 hour of the marinating time of the shrimp)
- Place a sheet of aluminum foil on the grill grate and grease with vegetable oil.
- Skewer all the shrimp and pour the rest of the marinade on the greased aluminum foil on the grill to form a base layer (like when doing lasagna) and heat up the grill using medium heat.
- Lay skewers on the aluminum foil on the grill (may be done in batches) over medium heat a couple of minutes on each side and remove when pink. (Do not overcook!)
- Remove from grill, de-skewer and enjoy!
