4 salmon fillets (4 ounces each)
1/4 teaspoon coarsely ground pepper, divided
4 ounces uncooked fettuccine
2 garlic cloves, minced
1 tablespoon reduced-fat margarine
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 cup fat-free milk
4 tablespoons grated Parmesan cheese, divided

Steps:

  • Place salmon, skin side down, on a broiler rack coated with cooking spray. Sprinkle with 1/8 teaspoon pepper. Broil 4-6 in. from the heat for 10-12 minutes or until fish flakes easily with a fork. Meanwhile, cook fettuccine according to package directions. , In a small saucepan, cook garlic in margarine for 1 minute or until tender. Stir in the flour, salt and remaining pepper; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 3 tablespoons cheese. , Drain fettuccine; toss with sauce. Serve with salmon. Sprinkle with remaining cheese.

8 ounces dry fettuccine pasta
¼ cup butter
1 cup milk
1 tablespoon all-purpose flour
1 cup freshly grated Parmesan cheese
½ pound smoked salmon, chopped
1 cup chopped fresh spinach
2 tablespoons capers
¼ cup chopped sun-dried tomatoes
½ cup chopped fresh oregano

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccine, and cook for 11 to 13 minutes or until al dente; drain.
  • In a medium saucepan over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
  • Crumble salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute pepper in oil until tender. 1-1/2 cups sliced fresh mushrooms
1 small zucchini, sliced

1/2 lb dry fettuccine pasta
1 (8 ounce) package cream cheese
3/4 cup grated parmesan cheese
1/2 cup margarine
1/2 cup milk
1 teaspoon garlic powder
1/4 teaspoon dried basil
1 pinch ground nutmeg

1 tomatoes, seeded and cut

Steps:

  • Bring a large pot of lightly salted water to a boil.

1/2 pound medium asparagus
4 ounces smoked salmon
Salt
1 tablespoon unsalted butter
1 tablespoon minced shallots
1 cup heavy cream
Freshly ground black pepper
1 teaspoon lemon juice
10 ounces fresh green fettuccine noodles
2 tablespoons minced fresh dill
2 ounces salmon caviar, optional

Steps:

  • Snap ends off asparagus. Slant-cut spears in 1-inch lengths. Steam until just tender, 3 to 4 minutes. Rinse under cold water, pat dry on paper towels and set aside. Cut salmon in slivers and set aside.
  • Bring a large pot of salted water to a boil. Melt butter in a large, heavy skillet. Add shallots and sauté over low heat until soft, about 3 minutes. Stir in cream, increase heat and simmer about 5 minutes, until slightly thickened. Add salmon and remove from heat. Season with pepper and lemon juice. Stir in asparagus.
  • Boil fettuccine 2 to 3 minutes, until just tender. Drain, but allow a bit of moisture to cling to noodles. Transfer to a warm shallow serving dish. Reheat sauce to a simmer, check seasonings, fold in dill and pour over fettuccine. Serve at once, mixing ingredients with pasta as you serve. Top each portion, if desired, with heaping teaspoon of salmon caviar.

¼ cup butter
1 tablespoon finely chopped onion
1 tablespoon fresh minced garlic
¼ pound smoked salmon, cut into thin strips
1 large tomato, diced
salt and freshly ground black pepper to taste
3 tablespoons vodka
2 cups heavy whipping cream
1 ½ pounds dry fettuccine pasta
2 tablespoons black caviar
⅔ cup freshly grated Parmesan cheese
1 tablespoon chopped fresh parsley

Steps:

  • Melt butter in a saucepan or wok over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add salmon and tomato and season with salt and pepper.
  • Increase heat to high and cook, stirring constantly, for 2 minutes. Pour in vodka, reduce heat, and simmer, until liquid is reduced by half, 3 to 5 minutes. Pour in cream and simmer until liquid reduced by half again, 3 to 5 minutes. Adjust seasoning with salt and pepper.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain, add to sauce and toss to coat.

8 ounces snap peas, strings removed, cut into thirds
4 tablespoons unsalted butter
1 shallot, thinly sliced
1 12-ounce skinless wild salmon fillet, cut into 2-inch pieces
Freshly ground pepper
1/4 cup chopped mixed herbs (such as dill, parsley and/or chives)
Juice of 1/2 lemon

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the snap peas during the last 2 minutes of cooking. Reserve 1 cup of the cooking water, then drain.
  • Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add the shallot and cook, stirring, until slightly softened, about 2 minutes. Add the salmon; season with 3/4 teaspoon salt and a few grinds of pepper. Cook, turning once, until the salmon is just cooked through, about 3 minutes. Transfer to a plate.
  • Add the pasta and snap peas to the skillet along with 1/2 cup of the reserved pasta cooking water, the remaining 2 tablespoons butter, the herbs and lemon juice. 1 pound salmon, cut into cubes
1 pound shrimp, peeled and deveined
1 cup butter
1 tablespoon garlic, minced
1 cube Knorr Chicken Stock
1/2 packet of Sazon Goya
1 teaspoon paprika
1/4 teaspoon black pepper
1 jar alfredo sauce
1 box of linguine

Steps:

  • In a large saucepan add all ingredients (butter, garlic, stock cube, paprika, pepper, Sazon) and simmer until butter and stock cube are melted. (You will have to stir so that everything melts). In the meantime, in a larger pot, bring linguine to a boil. (cook about 15-20 minutes). Once mixture has melted, put salmon in and simmer until salmon is cooked on both sides. Add the shrimp and bring heat down to low, cover pan and let simmer for about 10 minutes (until pasta is done). Drain the pasta (you can reserve the pasta water,as you will have to fill the Alfredo jar with water). Add everything from the saucepan into the pasta. Empty the jar of Alfredo sauce and halfway up again with water (you can use the pasta water, or put clean water-makes no difference). Bring to a boil and let simmer for about 5-10 minutes so all the ingredients come together. Serve with Garlic bread! DELICIOUS! *Depending on what consistency of the sauce you like, you can use two jars of Alfredo sauce, and fill one jar with water.

4 medium leeks (white and light green parts), halved lengthwise, sliced
2 zucchini, halved lengthwise, sliced crosswise
1 cup half and half
5 ounces soft milk goat cheese (such as Montrachet), crumbled
1 pound fettuccine
1/4 pound smoked salmon, chopped

Steps:

  • Heat 1/4 cup olive oil in heavy large skillet over medium-high heat. Add sliced leeks and sauté until golden and tender, about 10 minutes. Add sliced zucchini and sauté until beginning to soften, about 3 minutes. Add 1 cup half and half and crumbled goat cheese and stir until goat cheese melts. Remove sauce from heat. Season sauce with salt and generous amount of pepper.
  • Meanwhile, cook fettuccine in large pot of rapidly boiling salted water until pasta is just tender.
  • Drain fettuccine and return to pot. Add sauce to fettuccine and toss until thoroughly coated. Transfer fettuccine to large bowl. Top pasta with smoked salmon and serve immediately.

This low fat creamy fettuccine dish is simple and easy to prepare. I use home smoked salmon, but any kippered style salmon works great.

2 garlic cloves, minced
1 tablespoon flour
1 1/2 cups skim milk
2 tablespoons light cream cheese
3/4 cup parmesan cheese
8 ounces smoked salmon
1 lb fettuccine

Steps:

  • Sauté garlic in margarine for 1 minute--do not let it brown.
  • Add flour and incorporate completely.
  • Add skim milk a little at a time and mix until flour has dissolved.
  • Cook on medium heat stirring continuously for 8 minutes.

  • Cook for 2 minutes.
  • Add parmesan cheese and salmon.

"Healthy alfredo sauce" is probably an oxymoron, but this is the way I always make a creamy sauce for pasta. It's obviously not an authentic alfredo, but we like it. I created this dish to use up some smoked salmon, and we totally enjoyed it. While I think you can adjust most of the ingredients here to your taste, I wouldn't mess with the smoked salmon or the capers, since they really are the dominant flavors.

1/2 cup low fat cottage cheese
1 tablespoon parmesan cheese, shredded
1 tablespoon flour
1/4 teaspoon black pepper, freshly ground

3/4 cup green bell pepper, chopped
1/4 cup onion, chopped
1 teaspoon olive oil

Steps:

  • Boil and prepare fettuccine as directed on package instructions; drain and set aside.
  • (Before draining, reserve about 1/4 cup of pasta cooking water, which you can use later to thin the sauce or moisten the vegetables as you cook them, if necessary).
  • Place cottage cheese, 1 Tbsp parmesan cheese,flour, black pepper, lemon juice, garlic, and dill weed in a food processor bowl and pulse until smooth; set aside.
  • In a large nonstick pan or wok, heat oil over medium heat and saute green pepper and onion for about 3 minutes.
  • Turn heat down to low or low-medium and allow the pan to cool enough that the next ingredients won't burn.
  • Add tomatoes, capers, salmon, and sauce to the pan; stir and cook for 1-2 minutes or until heated through.
  • Add pasta and parsley and continue to cook on low for 1-2 minutes.
  • Remove from heat and serve, topping individual servings with pepper, lemon pepper, and parmesan to taste.

5 oz dried linguini pasta
1 tablespoon olive oil
handful pre-sliced swiss brown mushrooms
1 bunch asparagus, roughly chopped
1 clove garlic, crushed
1 1/4 cup pure cream
small handfull chopped continental parsley
salt and pepper
5 oz hot smoked salmon

Steps:

  • To start, fill your kettle with water and bring it to the boil. While water is heating place a pot on the stove over medium heat to warm up. Once the kettle has boiled, transfer water to the pot. Season water with salt and throw in the linguini, cooking for the time outlined on the packet - usually around 7 mins (this kettle to pot trick is one my mother often uses to speed up a midweek pasta). While the linguini is cooking, heat olive oil in a frypan over medium-high heat and sautee mushrooms, asparagus and garlic for 3 mins. Lower heat to simmer and pour in the cream. Simmer for another 3 minutes then add parsley, salt and pepper and stir well to combine. Then remove from heat. When linguini is cooked, strain the water from the pot and transfer the linguini into the frypan with the cream mixture. Stir the pasta through the sauce till well combined. Flake the hot smoked salmon into small pieces and stir the majority of it through the pasta reserving a few pieces to place on top of the dish after plating. Divide the pasta between two bowls, top with the remaining salmon, add a sprinkle of chopped parsley and enjoy.

  • In a Dutch oven, cook fettuccine according to package directions, adding the asparagus during the last 2 minutes of cooking; drain., In a large skillet, combine the water, broth, 1 cup champagne, onion, tarragon and 1/4 teaspoon pepper. Bring to a boil. Reduce heat; add fillets and poach, uncovered, for 8-10 minutes or until fish flakes easily with a fork., In a small saucepan, bring the remaining champagne, garlic, basil, brown sugar, salt and remaining pepper to a boil; cook until reduced to 1/2 cup. Whisk in butter until melted. Pour over fettuccine mixture; toss to coat. Serve with salmon.

3 ounces fettuccine
8 ounces asparagus, trimmed, each spear cut on diagonal into 4 pieces
1/2 cup whipping cream
2 tablespoons (1/4 stick) butter, room temperature
1 1/2 teaspoons grated lemon peel
4 tablespoons grated Parmesan cheese
2 teaspoons fresh lemon juice
2 tablespoons salmon caviar
2 tablespoons chopped fresh chives

Steps:

  • Cook pasta in large pot of boiling salted water until almost tender, stirring occasionally, about 6 minutes. Add asparagus and cook until pasta is tender but still firm to bite, about 3 minutes longer. Drain. Transfer to large bowl.
  • Meanwhile, stir cream, 1 tablespoon butter, and lemon peel in heavy small saucepan over medium-high heat until mixture comes to simmer. Reduce heat to low. Whisk in 2 tablespoons cheese. Cook until sauce is smooth and thickens slightly, stirring constantly, about 1 minute.
  • Add sauce to pasta and asparagus and toss to coat. Add remaining 1 tablespoon butter, 2 tablespoons cheese, and lemon juice; toss again to coat. Season to taste with salt and pepper. Divide pasta mixture between 2 warm bowls. Spoon salmon caviar atop pasta. Sprinkle with chives and serve.

We're fortunate to live in the Pacific NW where we can catch our own fresh salmon. We always smoke some too. Here's a simple and fast recipe from Bon Appetit. The goat cheese goes well with the salmon.

1/4 cup olive oil
4 medium leeks, halved lengthwise, sliced
5 ounces goat cheese, crumbled
2 zucchini, halved lengthwise, sliced
1 cup half-and-half
1 lb fettuccine pasta
1/4 lb smoked salmon, chopped

Steps:

  • Heat 1/4 cup olive oil in heavy large skillet over medium-high heat. Add sliced leeks and sauté until golden and tender, about 10 minutes. Add sliced zucchini and sauté until beginning to soften, about 3 minutes. Add 1 cup half and half and crumbled goat cheese and stir until goat cheese melts. Remove sauce from heat. Season sauce with salt and generous amount of pepper.
  • Meanwhile, cook fettuccine in large pot of rapidly boiling salted water until pasta is just tender.
  • Drain fettuccine and return to pot. Add sauce to fettuccine and toss until thoroughly coated. Transfer fettuccine to large bowl. Top pasta with smoked salmon and serve immediately.

1/2 cup bottled clam juice
1 tablespoon Wondra flour
12 ounces fettuccine, freshly cooked
6 ounces thinly sliced smoked salmon, cut crosswise into 1/2-inch-wide strips
4 green onions, chopped
1/4 cup chopped fresh dill or 1 tablespoon dillweed
1 tablespoon drained capers
Lemon wedges

Steps:

  • Bring cream, clam juice and flour to boil in heavy large skillet over medium-high heat, stirring frequently. Add pasta; toss until sauce thickens, about 2 minutes. Add salmon, green onions, dill and capers; toss to blend. Season with salt and pepper. Serve with lemon wedges.
