PECAN TURTLES
I made these "turtle-like" concoctions one Christmas for a sweets exchange. My dad saw them on the counter waiting to be boxed up and couldn't believe I made them. - Line baking sheets with waxed paper; lightly coat with cooking spray and set aside. Butter the sides of a heavy saucepan with 1 teaspoon butter. Cube remaining butter; place in pan. Add the corn syrup, brown sugar and salt. Cook and stir until sugar is melted., Gradually stir in milk. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until a candy thermometer reads 248° (firm-ball stage), about 16 minutes. Remove from the heat; stir in vanilla. Gently stir in pecans. Drop by rounded teaspoonfuls onto prepared baking sheets. Refrigerate until firm, about 12 minutes. , In a microwave, melt chips and shortening; stir until smooth. Drizzle over clusters. Chill until firm. Store in the refrigerator.

- 1. Melt butter in saucepan. Stir in sugar, milk, corn syrup, and salt. Bring to a boil--Reduce to very low heat. Cook, Stiring almost constantly 25 - 30 minutes or until hard ball stage in cold water. Remove from heat. Stir in vanilla and pecans. Drop in 1 1/2 inch wide mounds from spoon onto buttered foil. With spoon spread small amount of melted chocolate over each candy. Let stand until firm. Wrap each turtle separately in plastic wrap.

- 1. Preheat oven to 300 degrees. Cover a large cookie sheet with aluminum foil, shiny side up. Spray with cooking spray to cover.
- 2. Place 3 pecan halves in a Y shape on the foil until you have 24 Y shapes. Place 1 unwrapped caramel in the center of each Y.
- 3. Bake in preheated oven just until caramel is melted, about 9-10 minutes. While caramels are melting in oven, heat shortening and chocolate chips in microwave in 30 second intervals, stirring to melt until just melted.
- 4. Remove caramels and pecans from oven when caramel is just melted. Spoon chocolate over candies and refrigerate at least 30 minutes or until chocolate is set.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine flour, 1 cup brown sugar, and softened butter in large mixer bowl. Beat at medium speed for 2 to 3 minutes or until mixture resembles fine crumbs. Pat mixture evenly onto bottom of ungreased 13x9-inch baking pan. Sprinkle pecans evenly over crumb mixture.
- Combine 2/3 cup butter and remaining 1/2 cup brown sugar in small saucepan. Cook and stir over medium heat until entire surface is bubbly; cook, stirring constantly, 1/2 to 1 minute more. Pour into pan, spreading evenly over crust.
- Bake in preheated oven until entire surface is bubbly, 18 to 20 minutes. Remove from oven; immediately sprinkle with chocolate pieces. Let stand 2 to 3 minutes to allow chocolate to melt; use a knife or small spatula to swirl chocolate slightly. Cool completely in pan on a wire rack. Use sharp knife to cut into 48 bars.

If you can unwrap caramels and rip open bags of pecan halves and semi-sweet chocolate, you can make these Easy Turtles.

- Microwave caramels and milk in microwaveable bowl on HIGH 2-1/2 to 3 min. or until caramels are completely melted, stirring after each minute. Cool.
- Meanwhile, place nuts in mounded groupings of about 3 nuts each into 36 clusters, about 3 inches apart, on parchment-covered baking sheet.
- Spoon about 2 tsp. caramel sauce over center of each nut cluster. (Caramel sauce should "glue" the clusters together.)
- Freeze 15 min. or until caramel sauce is firm.
- Melt chocolate as directed on package. Dip nut clusters, 1 at a time, into chocolate, turning to completely coat nuts. Return to baking sheet. Refrigerate 15 min. or until chocolate is firm.

Steps:
- 1. Unwrap Rolo candies and place in bowl for later.
- 2. Arrange the pretzels in a single layer on a parchment lined cookie sheet. Place one chocolate covered caramel candy on each pretzel.
- 3. Bake on 300 degrees for 5 minutes. Place in oven to soften rolos, approximately 5 minutes. Check occassionally, don't let them melt.
- 4. Take out of oven.
- 5. Push a pecan half on top of each rolo
- 6. Set in a cool area or fridge to harden.
- 7. Remove from fridge and store in bag or container.
- 8. ENJOY
