1/2 cup KRAFT Balsamic Vinaigrette Dressing
1 onion, finely chopped
2 cloves garlic, minced
1 can (28 oz.) diced tomatoes, undrained
2 cups penne pasta, uncooked
1 lb. cooked cleaned medium shrimp
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat large nonstick skillet on medium-high heat. Add dressing, onions and garlic; cook 2 min. Stir in tomatoes; cook 12 min., stirring occasionally. Meanwhile, cook pasta as directed on package.
  • Add shrimp to sauce in skillet; cook 2 min. or until heated through. Remove from heat.
  • Drain pasta; toss with shrimp mixture. Sprinkle with cheese.

8 ounces uncooked thin spaghetti
1 tablespoon olive oil
3/4 pound uncooked shrimp (26-30 per pound), peeled and deveined
2 cloves garlic, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
1 can (14-1/2 ounces) petite diced tomatoes, undrained
10 fresh basil leaves, torn
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese

Steps:

  • Cook spaghetti according to package directions., In a large skillet, heat oil over medium-high heat. Add shrimp; cook until shrimp begin to turn pink, 1-2 minutes. Add garlic and pepper flakes; cook 1 minute longer., Add tomatoes; bring to a boil. Reduce heat; simmer, uncovered, until shrimp turn pink, 2-3 minutes, stirring occasionally. Remove from heat; stir in basil, salt and pepper. Serve with spaghetti and cheese.

Made with shrimp, angel hair pasta, parmesan cheese, ripe tomatoes and basil, Pasta Pomodoro tastes amazing, and is perfect for date night or family dinner!

1 pound shrimp (deveined, peeled and tails removed)
2 tablespoons + 1 teaspoon olive oil, divided
4-5 large tomatoes, chopped into bite sized pieces (if using smaller tomatoes such as Roma increase to 6-7)
3 cloves garlic, finely chopped
2 tablespoons chopped fresh basil, plus more to garnish
1/4 teaspoon crushed red pepper flakes (optional)
12-16 ounces angel hair pasta (or other long pasta)
1/2 cup fresh grated parmesan cheese, plus more to taste
salt & pepper to taste

Steps:

  • In a large pot, add water and bring to a boil while you are chopping the tomatoes. Don't add the angel hair pasta yet, it cooks quickly (usually 3-4 minutes) so you will want to add it to the boiling water after you start cooking the tomatoes.
  • In a large skillet over medium heat add 1 tablespoon olive oil and cook shrimp until it has turned pink, about 1 - 2 minutes per side. Remove shrimp from pan and set aside.
  • Drain any liquid from the skillet, reduce heat to medium-low and add 1 tablespoon olive oil. When oil is hot, add chopped tomatoes, then salt and pepper to taste. Stir occasionally and cook for 5 minutes and then add chopped garlic. Cook 2 - 3 minutes more and until the tomatoes get soft and garlic is fragrant.
  • Add angel hair pasta to the boiling water and cook per box instructions (typically 3-4 minutes).
  • While the pasta is cooking, put the shrimp back into the skillet, add the freshly chopped basil and a small amount of olive oil to taste (1-2 tsp is what I use). Stirring well to combine and bring out the flavor of the basil. Taste and add more salt, if needed. Add the crushed red pepper flakes, if you like a little kick of heat.
  • Drain pasta (reserving about 1/2 cup of the pasta water). Add pasta into the skillet to combine with the tomatoes, shrimp and basil. Stir to fully combined. If you want the sauce to be more moist, add some of the pasta water, as desired.
  • Serve topped with freshly grated parmesan cheese and fresh basil and enjoy!

This is nice and light for a pasta dish, and quick to put together. For your basic pomodoro sauce to serve anytime with pasta, simply omit the shrimp. I do think the choice of canned tomatoes is extremely important, and effects the overall quality of the sauce. I definitely use imported Italian tomatoes, preferably San Marzano.

1 lb dry pasta
1 tablespoon olive oil
2 garlic cloves, sliced
1 (28 ounce) can whole canned tomatoes, including liquid
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 teaspoon sugar
1 lb large shrimp (peeled and deveined)
12 fresh basil leaves, slivered

Steps:

  • Cook the pasta according to the package directions.
  • Heat the oil in a large saucepan over medium heat.
  • Add the garlic and cook until light brown, about 1 minute.
  • Add the tomatoes and their juices, salt, pepper, and sugar.
  • Bring to a boil.
  • Reduce heat and simmer, crushing the tomatoes with a wooden spoon, until the sauce thickens slightly, about 10 minutes.
  • Add shrimp to the simmering sauce.
  • Cover and cook until the shrimp are pink and cooked through, about 4 m inutes.

3/4 pound raw, peeled, deveined shrimp (medium sized)
4 medium ripe tomatoes

1/3 cup torn fresh basil leaves
3 tablespoons extra virgin olive oil (divided, 1 Tbsp and 2 Tbsp)

Steps:

  • Sauté the shrimp Heat 1 Tbsp of olive oil in a large sauté pan on medium high heat. Add the shrimp to the pan and cook for 1 minute. Turn the shrimp over in the pan. Lower the heat to medium.

Years ago, an Italian restaurant served a dish called capellini pomodoro which I ordered often, sometimes adding grilled chicken or shrimp to the pasta. This is my own quick version.

1 ½ pounds Roma tomatoes
1 pound capellini pasta
2 tablespoons unsalted butter
4 cloves garlic, minced
salt and freshly ground black pepper to taste
4 leaves basil, thinly sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Fill a large bowl with ice and cold water.
  • Score a shallow "x" in the bottom of the tomatoes. Add tomatoes to the boiling water and cook uncovered until skin starts to peel off, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Peel tomatoes.
  • Transfer peeled tomatoes to a food mill, and process until smooth.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain, saving 1/4 cup of the pasta water for the sauce.
  • While pasta cooks, melt butter in a large skillet over low heat. Add garlic and salt and cook until fragrant, 1 to 2 minutes. Add pureed tomatoes and as much pasta water as desired. Simmer until thickened, 3 to 5 minutes. Season with salt and pepper to taste.
  • Divide pasta amongst 4 serving bowls. Top with tomato sauce and sprinkle with fresh basil. Serve immediately.
