Tart apples and sweet grapes, bananas, and blueberries are tossed with crunchy pecans in a light and creamy vanilla dressing to make this Creamy Fruit Salad.

1 pound red grapes, sliced in half lengthwise ((about 4 cups))
2 medium bananas, sliced thin ((about 2 cups))
2 medium granny smith apples, chopped small ((about 2 cups))
6 ounces blueberries ((about 1 cup))
1 cup sour cream
3 tablespoons sugar
1 tsp vanilla extract
1 cup chopped pecans or sliced almonds

Steps:

  • Combine the grapes, bananas, apples, blueberries, and pecans in a large mixing bowl. Whisk together the sour cream, sugar and vanilla.
  • Pour the dressing over the fruit in the bowl. Stir well to coat. Serve immediately or chill until ready to serve. Enjoy!

1 (8 ounce) package cream cheese
¼ cup white sugar, or to taste
1 (12 ounce) container frozen whipped topping, thawed
3 bananas, peeled and sliced
1 (15.25 ounce) can crushed pineapple, drained
1 (15.25 ounce) can fruit cocktail, drained
1 large Jonagold apple, peeled and chopped
½ cup sweetened flaked coconut
1 (4 ounce) jar maraschino cherries, drained and halved
½ cup chopped pecans
½ cup golden raisins

Steps:

  • Beat the cream cheese and sugar together in a large bowl. On high speed, beat in the whipped topping. Fold in the bananas, pineapple, fruit cocktail, apple, and coconut. If desired, mix in the maraschino cherries, pecans, and raisins. Pour the salad into a serving bowl, and chill 1 hour before serving.

1/2 cup water
3 tablespoons granulated sugar
1 cinnamon stick
2 thin slices peeled fresh gingerroot
1 small sprigs fresh rosemary
1/4 teaspoon vanilla
1 cup sour cream
2 tablespoons packed brown sugar
1 pinch salt
1/4 cup whipping cream
2 cups blueberries
2 cups raspberries
2 peaches, peeled and cut into wedges
2 nectarines, cut into wedges
2 apricots, cut into wedges

Steps:

  • In small saucepan, combine water, sugar, cinnamon, ginger and rosemary. Bring to boil, stirring occasionally. Reduce heat and simmer uncovered for 3 minutes. Strain syrup into a bowl, discarding cinnamon, ginger and rosemary. Stir in vanilla, let cool.
  • In medium bowl, stir together sour cream, brown sugar and salt; stir in whipping cream.
  • In serving bowl, gently combine together cooled syrup, blueberries, raspberries, peaches, nectarines and apricots. Serve topped with dollop of crème fraiche.

1 mango, peeled and cut away from the pit
1 fresh lime, halved and seeds removed
1 pound cooked elbow macaroni
1 quart strawberries, hulled and sliced
1 (29 to 32-ounce) can sliced peaches (preferably in their own juice or light syrup)
2 tablespoons minced fresh mint leaves, plus 6 to 8 sprigs for garnish
4 ounces creme fraiche

Steps:

  • Add mango to a blender and squeeze in the juice from the lime. Puree the mixture and pour into a large bowl. Stir in macaroni. Gently fold in strawberries, peaches, and minced mint. Transfer to serving dishes topped with creme fraiche and mint sprigs.

1 large head butter or bibb lettuce
1 small jicama, peeled and cut into 1/4-inch matchsticks (roughly 1/2 cup)
1/3 cup pomegranate seeds
1 cup large shavings Asiago or Parmesan cheese
House Dressing
2 1/2 tablespoons crème fraîche
2 tablespoons extra-virgin olive oil
1 teaspoon honey
1 scallion, white part only, finely chopped
2 tablespoons apple cider vinegar
1/2 teaspoon sea salt
1/2 teaspoon fresh ground pepper

Steps:

  • To make the dressing, whisk together the crème fraîche, olive oil, and honey. Add the scallion, vinegar, salt, and pepper and whisk again. Taste and add salt and pepper to taste, or a touch more vinegar if you prefer your dressing on the acidic side.
  • Gently pull the lettuce leaves from the head, making sure they are dry. Gently toss the leaves and jicama with the dressing. Assemble in a stack on each of 4 plates, starting with the largest leaves on the bottom to create a base. Garnish each salad with a quarter of the pomegranate seeds and the cheese shavings. Serve immediately.
