2 tablespoons butter
1 small onion, finely chopped (1/2 cup)
1 red bell pepper, seeds and ribs removed, chopped
1/8 to 1/4 teaspoon cayenne pepper
1 teaspoon coarse salt
2 plum tomatoes, cored and chopped (1 cup)
1 package frozen corn kernels (1 pound)
1/2 cup whole milk

Steps:

  • In a large skillet, melt butter over medium heat. Add onion, bell pepper, cayenne, and salt. Cook, stirring occasionally, until onion is soft, about 5 minutes.
  • Add corn and tomatoes; cook, stirring often, until corn is tender and tomatoes have softened, about 10 minutes. Stir in milk; remove from heat. Serve immediately.

4 large ears of corn
1 tablespoon corn, peanut or vegetable oil
1 tablespoon butter
1/2 cup finely chopped onion
1 teaspoon finely minced garlic
1 1/2 cups finely chopped sweet pepper, preferably green
Salt to taste if desired
Freshly ground pepper to taste
1/2 teaspoon ground cumin

Steps:

  • Using a sharp knife, cut and scrape the kernels from the corncobs. There should be about two cups.
  • Heat the oil and butter in a skillet and add the onion, garlic and chopped pepper. Add corn, salt and pepper. Cook, stirring, briefly and sprinkle with cumin.
  • Cover and cook over low heat about three minutes. Remove from the heat and serve.

  • Heat large nonstick skillet over medium-high heat. Add corn; stir until beginning to dry and brown, about 8 minutes. Transfer to small bowl.

1/2 cup half-and-half cream
1 tablespoon brown sugar
1 tablespoon dried parsley flakes
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally.
