1 teaspoon celery seed
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon salt
1/4 cup cider vinegar

1 cup vegetable oil

Steps:

  • In a bowl, combine the first five ingredients. Stir in vinegar and onion. Slowly add oil, whisking constantly until combined. Refrigerate until ready to serve. Serve over fresh fruit or salad greens.

1/4 of an onion, grated (recipe did not stipulate size of onion)

  • Combine the sugar, mustard, salt and onion.
  • Add the vinegar and olive oil and beat well till combined.
  • Add celery seeds and whisk all together to blend.

2 tablespoons yellow mustard seeds
1/2 cup white balsamic vinegar
1 tablespoon Dijon mustard
1/4 cup minced shallots (2 medium)
2/3 cup extra-virgin olive oil
2 large bunches watercress, thick stems trimmed (about 6 cups packed)
1 1/2 pounds celery root (celeriac), trimmed, peeled, coarsely grated in processor or with box grater
20 radishes, trimmed, thinly sliced

Steps:

  • Stir mustard seeds in dry skillet over medium heat until lightly toasted and starting to pop, about 3 minutes. Transfer to bowl; cool. Add vinegar, mustard, and shallots; whisk to blend. Gradually whisk in oil. Season with salt and pepper.
  • Toss watercress in large bowl with enough dressing to coat lightly. Divide watercress among plates. Combine celery root and radishes in same bowl; toss with enough of remaining dressing to coat. Season to taste with salt and pepper. Top watercress with celery root mixture and serve.

This recipe originated with my Aunt Mazie, a wonderful cook from West Virginia. I like this dressing because of its versatility. It's wonderful with potatoes, macaroni, hot or cold sliced meat or vegetables. I've shared it with many friends and have had it published in several fund-raising cookbooks.

1/2 cup butter
1 cup vinegar
3 large eggs, lightly beaten
1-1/2 teaspoons celery seed
1 teaspoon salt
1/4 teaspoon white pepper
2 cups mayonnaise
3/4 cup Italian salad dressing
1/2 cup sugar

Steps:

  • In a saucepan, melt butter. Meanwhile, combine vinegar, eggs, celery seed, salt and pepper. Gradually add to butter, stirring constantly. Cook and stir over medium heat for 5 minutes or until slightly thickened and a thermometer reads 160°. , Remove from the heat and allow to cool. Mix in mayonnaise, Italian dressing and sugar. Cover and chill for at least 1 hour. Serve over coleslaw, vegetables or pasta.

Fennel dressing, bright with lemon juice, coats pleasantly bitter greens with an intriguing hint of licorice.

Number Of Ingredients 10

2 teaspoons fennel seeds, toasted
1/4 cup olive oil
3 tablespoons fresh lemon juice
3 tablespoons finely chopped shallot (1 large)
1 teaspoon salt
1/2 teaspoon sugar
1/2 pound frisée (French curly endive), torn into bite-size pieces (10 cups)
3 Belgian endives, cut crosswise into 1/2-inch-wide slices
3 celery ribs, thinly sliced crosswise (2 cups)
an electric coffee/spice grinder

Steps:

  • Grind fennel seeds in grinder until ground but not powdery. Transfer to a small bowl or cup, then stir in oil until combined. Let stand 15 minutes.
  • Whisk together lemon juice, shallot, salt, and sugar in another small bowl or cup until salt and sugar are dissolved. Stir fennel oil, then add to shallot mixture in a slow stream, whisking until combined.
  • Toss frisée, endives, and celery in a large bowl with just enough vinaigrette to coat.

  • Toss cabbage and apple together in chilled salad bowl.

2 tsp creamed horseradish

1 teaspoon dry mustard or 1/2 teaspoon yellow mustard
1/2 teaspoon salt
1 -2 teaspoon celery seed
1 tablespoon grated red onion (read NOTE*)
1 cup vegetable oil
1/3 cup distilled white vinegar
1 -2 sprig of fresh lemon thyme leaves (optional)

Steps:

  • *NOTE: When I was preparing this recipe for posting, I used red onion in place of yellow onion. The red onion turned the salad dressing a very pretty shade of pink! Substitute yellow onion if you wish.
  • In non-reactive bowl (or blender), combine the sugar, dry mustard, salt, celery seed, onion, and the optional lemon thyme.
  • If using a mixer, gradually pour the vinegar and oil into the bowl while the beaters are on. Keep beating until the salad dressing is smooth, scraping down the sides of the bowl if necessary.
  • If using a blender, cover the blender and slowly start pouring in the oil and vinegar through the opening on top of the blender cover. Keep the motor running while blending all the ingredients until mixed well. With spatula, scrape down the sides of the blender bowl.
  • Taste and adjust seasoning if necessary.
  • For best results, allow salad dressing to marinate for 1 hour.
  • Toss salad dressing with fruit salad just before serving.
