Steps:
- In a large saucepan, combine the chocolate chips and butter. Cook and stir over low heat until melted.
- Gradually mix in the sugar and milk. Increase heat to a boil. Cook, stirring constantly, for 8 minutes. Remove from heat, and then stir in vanilla and salt. Serve warm. Store in refrigerator.

BEST HOT SAUCE
If hot sauce is your thing, you will love, love, love this fresh tasty recipe. I first tried a version of this hot sauce in Cameroon, Africa. I couldn't get enough of it; no matter where you ate, there would be a small bowl of this divine sauce on the table, each unique to the person making it. Only recently have I actively searched out the recipe. I did not follow the recipe to a tee, but combined this recipe with another a close friend gave me. In the end, I can't argue the results!

Steps:
- Place peppers, onion, dates, basil, parsley, tomato, bouillon powder, and garlic in the bowl of a food processor; pour in the oil. Pulse mixture until finely chopped, adding more oil if needed to thin; season with salt.
- Pour pepper mixture into a small saucepan; bring to a boil. Squeeze lemon juice into pepper mixture, reduce heat to low, and simmer for 15 minutes.
- Allow pepper mixture to cool; pour into a glass jar with a lid. Store pepper sauce in the refrigerator.

BEST HOT WING SAUCE IN AMERICA
This sauce is simply the best one that I have ever used! My family really enjoys this on wings and other things. Try something off the wall and fry up some potatoes and put this sauce on for a treat, or try using it as a toasted bread dipping sauce for a unique treat!

Steps:
- Melt the butter in the pan.
- Add the garlic and sauté for 3 to 4 minutes.
- Add the flour and whisk until smooth, cook for 1 more minute.
- Add the Franks and the vinegar, bring to a boil.
- If desired add the pepper flakes and simmer for 2 or 3 minutes.
- Pour over the food of your choice and enjoy.
BEST HOOTERS HOT WING SAUCE (AND BREADING)
This is the BEST hot wing sauce I have found. It is a clearish shade like hooters, and they are to die for. Not too hot though to were I can't eat it, it is just right. Could also be used as a dip for chicken tenders!

Steps:
- For breading & frying.
- In large mixing bowl mix flours, salt, paprika and cayenne pepper together, blend well. Cut chicken wings into drumettes and flappers. Wash and drain chicken. Coat chicken in flour mixture, refrigerate chicken wings for 90 minutes.
- When ready to deep fry chicken wings heat oil to 375. Place chicken pieces in hot oil, do not crowd. Fry chicken wings until golden brown, remove from oil and drain. When all wings have been fried, place in a large bowl. Add Hot Sauce mixture and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately and with lots of paper towels.
- For sauce.
- Melt butter over low, stir in the rest of the ingredients until dissolved. Pour in bowl over cooked chicken.

BEST EVER HOT CARAMEL SAUCE
We love this yummy sauce best over vanilla ice cream, but it's also great on hot apple pie! My kids pick Hot Caramel Sundaes over birthday cake every year! This sauce makes great teacher and/or Christmas gifts (pour in 1/2 pint jars and tie with festive ribbon). Remind them it needs to be refrigerated!

- Melt butter in heavy saucepan over low heat. Add milk and sugars. Bring to a rolling boil over medium heat stirring constantly. Boil 1 minute.
- Cool slightly.
- Pour into blender, add vanilla, and cover and blend on medium until smooth. Serve over vanilla ice cream. Store covered in refrigerator up to 2 weeks (It never lasts that long at our house!).

Steps:
- In 2-quart microwave safe bowl, combine all ingredients except vanilla. Microwave on High 4 minutes. Stir until smooth.
- Cook an additional 4-5 minutes until thickened. Add vanilla extract, stirring until smooth & glossy.
- Serve hot.
BEST EVER HOT SAUCE
This is a recipe that I came up with and have added to to make hotter. On the optional peppers they are what I used to add heat to it.

- Drain juice from the can into a sauce pan.
- cut up peppers and remove the seeds put them in the juice in the pan.
- add all of the seasonings and let it simmer about 10 to 15 minutes.
- put the whole tomatos in a blender or food processor add the mixture in the sauce pan (let it cool a little before blending it) and blend it until smooth.
- Put in refrigerator until cool and enjoy!

I used to buy this by the gallon when I lived in Texas. The person who made it felt pity on me when I said I was leaving for Scotland and shared it with me. It's so delicious!

- Cut and chop cilantro, tomatoes, jalapeños and onions as much or as little as you desire.
- Place all ingredients in pot, salt to taste and bring to a boil for about 5 minutes just enough to combine all the ingredients.
- Place the sauce in glass jars (keeps sauce fresher in glass) the lid will seal if you store the sauce immediately after you boil the sauce.
- Refrigerate, (stores for up to 6 months).
- Another secret to keep your salsa fresher longer do not use metal to scoop out the sauce.
