One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

2 Tbsp. KRAFT Lite Zesty Italian Dressing
1/2 cup chopped onion s
4 slices OSCAR MAYER Bacon, chopped
4 zucchini, chopped
1 cup frozen corn
1 pkg. (7 oz.) KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, divided
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 drained canned chipotle pepper in adobo sauce, finely chopped
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 350°F.
  • Heat dressing in large skillet on medium-high heat. Add onions and bacon; cook and stir 5 min. or until onions are crisp-tender. Stir in zucchini; cook 8 to 10 min. or until zucchini is lightly browned, stirring occasionally. Remove from heat; drain. Add corn, 1 cup cheese, sour cream and peppers; mix well.
  • Spoon into 2-qt. baking dish; top with remaining cheese.
  • Bake 15 min. or until cheese is melted and vegetable mixture is heated through; stir. Sprinkle with cilantro.

I know there are lots of corn casseroles out there, but this one has just the right combination of corn and cheese. I started making this for the big holiday dinners, but now it's become a regular vegetable side dish.

1/2 cup butter or 1/2 cup margarine
1 (15 ounce) can whole kernel corn, not drained
1 (15 ounce) can cream-style corn
1 (8 ounce) container sour cream
1 cup grated cheese, of choice (I like it with cheddar)
1 egg
1 (8 ounce) package corn muffin mix (Jiffy is the best)

Steps:

  • Melt butter or margarine in large pan.
  • Add whole kernel corn, cream style corn, sour cream, grated cheese, egg, and corn muffin mix.
  • Stir until well blended.
  • Place in an oblong baking dish, approximately 8 x 11 inches (2 quart casserole dish works also), that has been sprayed with nonstick vegetable spray (Pam).
  • Bake at 350 for 40 minutes.

This recipe came from my ex-mom in law. I fell in love with it the first bite I took. That was almost 20 yrs ago and I have been making it ever since.

2 (14 3/4 ounce) cans whole kernel corn (or 1 bag frozen corn)
1 (8 ounce) package cream cheese
1 (4 ounce) can chopped green chilies
1 dash salt and pepper, to taste

Steps:

  • Let cream cheese soften to room temperature. You can also stick it in microwave for about 10 second at a time til softened. Drain corn. Do not drain green chiles. In a casserole dish mix all ingredients til combined thoroughly. Bake in a 350 degree oven for about 30 minutes til bubbly and light brown. Enjoy!

This is a super simple crowd pleaser that I got from an old aquaintance. Where she got it? I have no idea but I guess that doesn't really matter. What matters is that it tastes good and is easy to make. It's also versatile, in that it can be served warm (as a side at Thanksgiving) or cold (at a BBQ or pot-luck).

1/2 cup butter (softened)
1 egg
8 ounces sour cream
8 1/2 ounces Jiffy corn muffin mix
15 1/4 ounces whole kernel corn, drained of liquid (1 can)
14 3/4 ounces creamed corn (1 can)
3 tablespoons sugar (or sugar substitute)

Steps:

  • Mix all the ingredients together well.
  • Pour mixture into a lightly greased 13x9 pan and bake in a 400° oven for 30-35 minutes. The casserole may come out a little "jiggly"; that's okay, it will stiffen as cools. If you want to serve it warm, let it settle for about 15 minutes before serving.
