GARLIC BASIL BREAD

My family members have always been big on bread. And when I created this simple loaf, they asked for it time and again. if there is any left over, I like it for toast in the morning.

Number Of Ingredients 12

2/3 cup warm milk (70° to 80°)
1/4 cup warm water (70° to 80°)
1/4 cup warm sour cream (70° to 80°)
1-1/2 teaspoons sugar
1 tablespoon butter, softened
1 tablespoon grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon minced garlic
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
3 cups bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available., Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

1 ½ pounds ground beef
2 eggs, beaten
¾ cup dry bread crumbs
¼ cup ketchup
1 teaspoon Italian-style seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic salt
1 (14.5 ounce) can diced tomatoes, drained
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
  • Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

BASIL CHEESE LOAF

This is an adopted recipe that I've not yet had the chance to try, though I think it looks wonderful. Reviews by anyone who tries it, especially before I do, will be appreciated. Prep time includes 24 hr chilling time.

Number Of Ingredients 10

8 ounces room temp cream cheese
4 ounces room temp Roquefort cheese
1 cup fresh spinach leaves, rinsed well and dried
3/4 cup fresh parsley
1/4 cup basil leaves
1 teaspoon minced garlic
1/4 cup vegetable oil
1/4 cup freshly grated parmesan cheese
1/4 cup slivered sun-dried tomato, patted dry
1/2 cup chopped walnuts

Steps:

  • Combine the cream cheese and Roquefort in a bowl.
  • Mix until smooth.
  • Set aside.
  • Combine the spinach, parsley, basil and garlic in a bowl of a food processor.
  • With the motor running, slowly drizzle the oil through the food tube.
  • Continue processing until smooth.
  • Transfer the mixture to a bowl.
  • Add walnuts and Parmesan and mix well.
  • Line a 5-½-x2-½-loaf pan with plastic wrap, leaving extra wrap to hang over the sides.
  • Spread 1/3 of the cheese mixture evenly.
  • Next, spread ½ of the pesto mixture and arrange a layer of the sun dried tomatoes on top.
  • Repeat the cheese, pesto and tomato layers.
  • Finish with the remaining 1/3 cheese mixture.
  • Wrap and refrigerate for 24 hours.
  • TO SERVE: Allow the loaf to come to a room temperature about 30 minutes.
  • Invert it onto a platter and provide a cheese-slicing knife.
  • Have a basket of crackers and bread close by.

This has been a favourite with guests and very easy to make. I pack into two small loaf dishes and freeze one for later use.

1 package Cream cheese room temperature
4 ounces Roquefort cheese Room temperature
1 cup Fresh Spinach Loosely packed
3/4 cup Italian Parsley Loosely packed
1/4 cup Fresh Basil Loosely packed
1 teaspoon Fresh Garlic minced
1/4 c Vegetable oil
1/4 c Walnuts finely chopped
1 cup Parmesan freshly grated
1/4 cup Sun-dried tomatoes chopped

Steps:

  • 1. Combine the cream cheese and Roquefort in a bowl, and mix until smooth. Set aside. 2. Combine the spinach, parsley, basil, and garlic in the bowl of a food processor. With the motor running, slowly drizzle the oil through the feed tube; continue processing until smooth. Transfer the mixture to a bowl, add the walnuts and Parmesan, and mix thoroughly. 3. Line a 5 1/2 x 2 1/2 inch loaf pan with plastic wrap, leaving extra wrap hanging over the sides. 4. Spread one third of the cheese mixture evenly over the bottom of the pan. Next, spread half the pesto mixture, and arrange a layer of sun-dried tomatoes on top. Repeat the cheese, pesto, and tomato layers. Finish with the remaining third of the cheese mixture. Cover with the overhanging plastic wrap, and refrigerate for 24 hours. 5. To serve, allow the loaf to come just to room temperature, about 30 minutes. Invert it onto a platter, and provide a cheese-slicing knife. Have a basket of crackers and bread nearby.

1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup minced fresh basil
1/4 cup grated Parmesan cheese
2 tablespoons tomato paste
1 tablespoon sugar
1 tablespoon olive oil
1 teaspoon salt
1/8 to 1/4 teaspoon crushed red pepper flakes
2-1/4 to 2-1/2 cups bread flour

Steps:

  • In a large bowl, dissolve yeast in water. Stir in basil, Parmesan cheese, tomato paste, sugar, oil, salt, pepper flakes and 2 cups flour. Stir in enough remaining flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; knead for 1 minute. Shape into a round loaf. Place on a greased baking sheet. Cover and let rise until doubled, about 1 hour. , With a sharp knife, cut a large "X" in top of loaf. Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack to cool.

1 cup finely chopped red onion
1 tablespoon olive oil
1 tablespoon butter
2 garlic cloves, minced
1/2 pound whole fresh mushrooms, coarsely chopped
3/4 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
1-3/4 cups soft sourdough bread crumbs
3/4 cup grated Parmesan cheese
1/3 cup minced fresh parsley
1 teaspoon minced fresh thyme
1-1/2 pounds lean ground beef
3/4 pound bulk Italian sausage
FILLING:
3 ounces thinly sliced prosciutto
5 ounces thinly sliced Havarti cheese
1-1/4 cups loosely packed basil leaves, cut into thin strips
1/3 cup oil-packed sun-dried tomatoes, drained and cut into strips

Steps:

  • In a large skillet, saute onion in oil and butter for 2 minutes. Add garlic; cook 1 minute longer. Add mushrooms; cook 6-8 minutes longer or until mushrooms are tender and no liquid remains. Stir in salt and pepper. , In a large bowl, combine the eggs, bread crumbs, Parmesan cheese, parsley, thyme and mushroom mixture. Crumble beef and sausage over mixture; mix well., On a large piece of heavy-duty foil, pat beef mixture into a 15x10-in. rectangle. Layer the prosciutto, Havarti, basil and tomatoes to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seams and ends. , Place seam side down in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 75-85 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Using two large spatulas, carefully transfer meat loaf to a serving platter.

1 cup boiling water
1/2 cup sun-dried tomato, packed without oil
1/2 cup ketchup
1 cup seasoned bread crumbs
1/4 cup finely chopped onion
1/2 cup chopped fresh basil
1/2 cup shredded provolone cheese
2 large egg whites
1 garlic clove, minced
1 lb ground round

Steps:

  • Combine boiling water and tomatoes in a bowl; let stand 30 minutes, or until soft.
  • Drain the tomatoes and finely chop.
  • Preheat the oven to 350°F.
  • Combine ketchup, breadcrumbs, and the next 6 ingredients in a large bowl.
  • Add the tomatoes to the meat mixture.
  • Shape the meat mixture into a 9x5-inch loaf on a broiler pan, coated with cooking spray.
  • Spread 1/3 cup ketchup over meatloaf.
  • Bake at 350°F degrees for 1 hour.
  • Let stand 10 minutes before slicing 12 slices.
