Weight Watchers Chicken Waldorf Salad image

The original Waldorf salad was created more than a hundred years ago by Oscar Tschirky, maitre d'hotel at the Waldorf Astoria Hotel in New York. Walnuts were added later. This version has chunks of chicken to make a delicious main dish salad. The salad can be prepared and refrigerated up to a day ahead, the spooned onto lettuce just before serving. Source: Unknown

Number Of Ingredients 11

- 1/3 cup fat free mayonnaise
- 1/4 cu fat free sour cream
- 1 tbsp. fresh lemon juice
- 1/4 tsp. salt
- 1/8 tsp. freshly ground pepper
- 2 cups diced cooked skinless chicken breast
- 2 red apples, cored and cut in bite size chunks
- 1 celery stalk, diced
- 2 tbsp. chopped toasted walnuts
- 1 tbsp. finely chopped flat leaf parsley
- 4 lettuce leaves

Steps:

  • Mix mayonnaise, sour cream, lemon juice, salt and pepper in small bowl.
  • Mix chicken, apples, celery and walnuts in a large bowl. Add mayonnaise dressing and parsley; toss to mix. Arrange on lettuce leaves and serve at once.
