SKINNY WALDORF CHICKEN SALAD
This is one of my "go-to" chicken salads. Especially during the fall/winter season! It's a delicious, skinny version of the popular Waldorf salad. Adding chicken and lots of fruit makes it a lovely, colorful, and very satisfying, main course meal. The fruit tastes especially good in this salad since it's tossed in a wonderful, homemade light honey mustard dressing. Each serving has 258 calories and 5 grams of fat.

- To Make Dressing: Make the ranch dressing. In a small bowl, add ½ cup ranch dressing. Mix in honey and mustard. Refrigerate for at least ½ hour before using. Refrigerate the remaining ranch dressing for other uses. It will keep refrigerated for a few weeks.
- To Make Waldorf Salad: In a large bowl, add the chicken, grapes, apple, and celery. Pour in honey mustard dressing and toss well. Refrigerate until ready to serve. This salad will keep in the refrigerator for a few days.

WALDORF SALAD (1/2 POINT FOR WEIGHT WATCHERS)(WW)
I needed a sweet, Weight Watcher friendly salad for the up coming Memorial Day holiday and came up with my own version of my Mom's Waldorf salad. I left out the marshmallows and nuts, but, they can be easily added if you think it needs a little extra umph. It couldn't be much easier to make. I hope you like it.

Steps:
- Chop apples in bite sized pieces. Sprinkle lemon juice over them and toss well to distribute juice to all of the apples. (This prevents them from turning brown.).
- Add celery to apples. Cut grapes in half and add to apples and celery.
- Put Fat Free Cool Whip, Fat Free Miracle Whip and Splenda in a small bowl and mix well.
- Pour dressing over fruit mixture and toss lightly but throughly.
- Chill.
- Note: Weight Watchers count 1/2 point per 1/2 cup serving.

- Place chicken in a large saucepan and pour in enough water to cover it; set pan over high heat and bring to a boil. Boil until chicken is cooked through, about 10 minutes; drain. When chicken is cool enough to handle, cut into 1-inch cubes.
- Transfer chicken to a large bowl and add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper; mix until blended. Yields about 1 cup per serving.
- For a Waldorf-like chicken salad, stir in 1/3 cup of diced apples and 2 tablespoons of chopped walnuts (for a total points value of 5 per serving).
