1/4 red bell pepper, minced
1 cup minced Italian flat-leaf parsley
1/4 teaspoon cayenne pepper
2 gherkin pickles, minced
3 tablespoons capers, rinsed and minced
1 cup olive oil
1 tablespoon white-wine vinegar
1/2 cup mashed potatoes
Salt and freshly ground black pepper to taste

Steps:

  • Combine the bell pepper, parsley, cayenne, gherkins, capers, olive oil and vinegar in a bowl and stir to combine. Add the mashed potatoes and beat to combine. Adjust seasoning with salt and pepper to taste and serve with the boiled meat and vegetables.
