My Gram used to make this all the time...brings back so many memories...enjoy! This recipe can easily be halved.

Steps:
- In a medium sized skillet, cook bacon until crisp, when finished, drain on paper towels, then crumble. Reserve 1/4 cup bacon grease. Place torn spinach and mushrooms in a large serving bowl and toss. Set aside.
- Place reserved bacon grease back into the same pan as you fried the bacon. Over medium heat, cook the green onions until tender.
- Stir in the flour and cook an additional minute.
- Pour in the chicken broth, vinegar, sugar - cook until slightly thicken, won't take long.
- Now, pour the hot dressing over the spinach - tossing to coat well. Sprinkle on the crumbled bacon and french fried onions if using. Salt and pepper to taste...
