How to make Mama's Best Meatloaf Recipe

Number Of Ingredients 18

Here's what you are going to need:
2-1/2 pounds lean ground beef
4 slices bread, torn into small pieces
2 carrots, finely chopped
2 celery ribs, finely chopped
1 medium sweet onion, finely chopped
2 tablespoons parsley
2 cloves garlic, minced
2 teaspoons dry mustard
1 tablespoon Worcestershire Sauce
1/2 cup ketchup
1 tablespoon kosher salt (or 2 teaspoons of table salt)
1 teaspoon black pepper
1 egg, slightly beaten
For Topping:
1/2 cup ketchup
1 teaspoon dry mustard
2 tablespoon brown sugar.

Steps:

  • Here's what you need to do:
  • Preheat oven to 375° F.
  • Place your torn bread in the bowl of a food processor.
  • Process into small crumbs.
  • Dump the bread crumbs into a large bowl.
  • Replace the bowl on the food processor and add the carrots, onion, celery and garlic.
  • Process for a few seconds. Remove lid and scrape down the sides.
  • Continue processing until the vegetables are extremely fine.
  • Place all of the ingredients in a large bowl.
  • Mix well. You're gonna have to use your hands to get it mixed up good. I've never known anyone to be able to mix meatloaf up using a spoon.
  • Place in a 9 x 13 glass baking dish and shape into a loaf...wait a minute...something doesn't look right. Oops, I forgot the parsley.
  • Okay, if you forgot to add the parsley like I did, dump it back into the bowl and add the parsley.
  • Okay, now you'll need to mix it up one more time.
  • Put it back into the baking dish and shape it into a loaf.
  • In a small bowl mix together the topping ingredients.
  • Spread the topping on the meatloaf. Don't get it too close to the edge or it will slide off in the oven.
  • Bake in a preheated 375° oven for 1 hour or until it reaches an internal temperature of 170°.
  • Allow to rest for at least 10 minutes before slicing so that the juices don't all run out when you cut it.
