Chicken Cordon Bleu With Pineapple Slices image

I love chicken cordon bleu and this version is wonderful since pineapple goes well with both chicken and ham. Enjoy!

Number Of Ingredients 12

1 can(s) 8 oz. can pineapple slices
2 boneless, skinless chicken breast halves
2 tablespoon(s) flour
1/2 teaspoon(s) onion salt
1 tablespoon(s) butter
2 slice(s) thin slices deli ham
CHEDDAR CHEESE SAUCE
1 tablespoon(s) flour
1 tablespoon(s) butter
1 cup(s) milk
1/4 cup(s) finely grated sharp cheddar cheese
salt and pepper

Steps:

  • With a meat mallet, pound the chicken breasts to a 1/2 inch thickness. Combine flour with onion salt and dredge chicken to coat both sides.
  • Melt butter in a non-stick skillet and cook chicken (on each side) about 10 minutes total.
  • Top each chicken slice with a ham slice and continue cooking until ham is heated through. Remove chicken to a plate.
  • Heat pineapple slices until heated through. Top each piece of chicken with 2 pineapple slices and top with cheese sauce.
  • In a small saucepan, melt butter and flour and stir to allow mixture to bubble up - then remove pan from heat. Add milk and whisk over low heat until smooth and slightly thick. Add cheese and stir to melt. When melted completely - spoon over chicken breasts.
