This easy Chicken Cordon Bleu Bake recipe is healthy, easy, and baked in the oven to make the perfect weeknight version of this classic dish. Done casserole/open faced style so prep is easy but all the delicious flavors you still love. With just a few simple ingredients this Chicken Cordon Bleu Bake is ready to eat in just about 30 minutes, it's everything you want in a lightened up comfort food dinner!

4 (6-8oz) chicken breast cutlets*
4 tablespoons plain yogurt
1 tablespoon dijon mustard
salt & pepper
8 slices deli ham
6 slices deli Swiss cheese
2 tablespoons plain breadcrumbs
spray oil

Steps:

  • Preheat oven to 400ºF. Prep sauce for the bake, in a mixing bowl combine yogurt, mustard, and a dash of salt & pepper. Stir to combine.
  • In a 9x13 baking dish lay chicken cutlets down in an even layer. Take the sauce and evenly distribute it between the pieces of chicken and spread the sauce over the tops of each of the cutlets.
  • On top of the sauce evenly lay the slices of the ham on each of the pieces of chicken, followed by the cheese.
  • With a spoon evenly distribute the bread crumbs on top of the cheese. To make the breadcrumbs crunchy use a spray oil to lightly spray the tops of the breadcrumbs with oil.
  • Transfer to the oven and bake 25 minutes or until the thickest part of the chicken reads 165ºF on a meat thermometer. Let rest 3-5 minutes before serving.

3 tablespoons whole-grain mustard
2 tablespoons mascarpone cheese
2 tablespoons olive oil
Four 5-ounce boneless, skinless chicken breasts
Kosher salt
4 large thin slices Emmentaler or Swiss cheese (approximately 4 ounces)
8 thin slices Black Forest ham (approximately 4 ounces)

Steps:

  • In a small bowl, mix together the mustard and mascarpone. Set aside.
  • Preheat the broiler to high.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.
  • Lay 1/2 slice of cheese on each chicken breast. Lay 2 slices of ham on top of the cheese on each breast. Divide the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil until the cheese is melted, golden brown and bubbly, about 2 minutes.

2 eggs
1 teaspoon Dijon mustard
⅔ cup almond flour
⅓ cup freshly grated Parmesan cheese
½ teaspoon garlic powder
¼ cup avocado oil
¼ pound shaved deli ham
1 cup shredded Swiss cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Season chicken cutlets with salt and pepper; set aside.
  • Whisk eggs and Dijon mustard together in a shallow bowl. Combine almond flour, Parmesan cheese, and garlic powder in a separate shallow bowl. Dip chicken cutlets into egg mixture, letting excess drip off. Dredge with almond flour mixture, then set on a plate.

6 boneless, skinless chicken breast cutlets
½ teaspoon salt
½ teaspoon ground black pepper
6 thin slices deli ham
2 cups shredded sharp Cheddar cheese, divided
3 tablespoons all-purpose flour
1 egg, beaten
2 tablespoons milk
1 ¼ cups bread crumbs
1 tablespoon garlic powder
1 teaspoon oregano
2 tablespoons butter, melted
½ cup chicken broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Place 3 cutlets side by side in the prepared pan and season with salt and pepper. Top with overlapping ham slices, starting 1/4 inch away from the edges of the cutlets. Sprinkle 1 1/2 cups Cheddar cheese over ham. Lay remaining 3 cutlets side by side on top, covering all the Cheddar cheese. Sprinkle flour on top, spreading with hands to cover.
  • Combine beaten egg and milk in a bowl; pour over the chicken.

4 chicken breast halves, skinless and boneless
2 c italian bread crumbs
2 eggs
1 c flour
4 slice deli baked ham
4 slice provolone cheese
1 jar(s) pasta sauce ( or make your own)
1/2 c cooking oil
1/4 c butter, unsalted

Steps:

  • 1. Coat chicken breasts in the flour. Dip chicken in beaten egg (mixed with a little water); then coat chicken with the bread crumbs.
  • 2. Fry chicken in a pan with oil and a few pats of butter. Cook chicken until done. Put a slice of baked ham on top of chicken breast; then top with a slice of provolone cheese; add the jar of sauce around the chicken (avoid putting it on top of the chicken and cheese). Put a lid on top of the pan and allow the cheese to melt. When the cheese is melted and the sauce is heated through, it's done.
  • 3. Serve with your favorite pasta, vegetable or salad.

8 spinach leaves, trimmed
4 thin slices boiled ham (2 ounces)
3 ounces Gruyère, coarsely grated (1 cup)

Steps:

  • Preheat broiler. Pat chicken dry and sprinkle with salt and pepper. Heat butter in a flameproof 12-inch heavy skillet over moderately high heat until foam subsides.
  • Sauté chicken in butter, without turning, until cooked through and undersides are golden, about 2 minutes. Remove from heat and turn chicken over, then top each cutlet with 2 spinach leaves, 1 slice ham (folding it to fit), and 1/4 cup cheese.
  • Broil 3 inches from heat until cheese is melted, 1 to 2 minutes.

2 tablespoons all-purpose flour
1 cup 2% milk
1/2 cup dry white wine
1/3 cup finely shredded Swiss cheese

1/8 teaspoon pepper

Steps:

  • Preheat oven to 375°. Sprinkle chicken breasts with salt and pepper; arrange in a greased 13x9-in. baking dish., Top each with one slice of ham and a half slice of cheese, folding ham in half and covering chicken as much as possible. Sprinkle with bread crumbs. Carefully spritz bread crumbs with cooking spray, keeping crumbs in place.
