1 teaspoon vanilla extract

Raspberry-Mascarpone Whipped Cream (see recipe below)
Fresh fruit such as strawberries, blueberries and/or raspberries, for serving
Maple syrup, for serving
1 cup heavy cream
4 ounces mascarpone
3 tablespoons seedless raspberry jam

Steps:

  • Preheat a waffle iron to medium-high heat.
  • Add the flour, sugar, baking powder and 1/4 teaspoon salt to a large bowl and whisk to combine. In a separate medium bowl, add the half-and-half, ricotta, butter, lemon zest, lemon juice, vanilla and egg and whisk to combine. Add the ricotta mixture to the flour mixture and whisk to combine.
  • Spray the preheated waffle iron with nonstick cooking spray and spoon about 3/4 cup of batter into the waffle iron. Cook until the waffle is golden brown and lightly crisp, 3 to 4 minutes (or according to manufacturer's instructions). Repeat with remaining batter.
  • To serve the waffles: top each waffle with a dollop of Raspberry-Mascarpone Whipped Cream, berries and maple syrup.
  • Add the heavy cream, mascarpone and raspberry jam to a large bowl. Whip on medium-high speed with an electric hand mixer until stiff peaks form, about 4 minutes.

1 ounce bittersweet chocolate, finely grated
1/4 cup slivered toasted almonds
1/3 cup sugar
2 eggs
2 cups milk
3 tablespoons unsalted butter, melted, plus more for cooking
1 1/2 cups all-purpose flour
1/3 cup unsweetened Dutch process cocoa, such as Valrhona
1/2 teaspoon sea salt
Warm Cherry Sauce, recipe follows
Powdered sugar
Fresh mint sprigs
16 ounce bag frozen unsweetened pitted dark sweet cherries, thawed, drained, juices reserved
1/4 cup kirsch
3 tablespoons sugar
1 tablespoon cornstarch
1 teaspoon fresh lemon juice
1/8 teaspoon almond extract

Steps:

  • For the ricotta filling: Whisk together the ricotta, powdered sugar, cocoa powder and vanilla extract until light and fluffy. Fold in the chocolate and almonds. Cover and refrigerate for at least 1 hour and up to 8 hours.
  • For the blintzes: Whisk together the sugar and eggs until pale. Whisk in the milk and butter. Sift the flour, cocoa powder and salt onto a piece of waxed paper. Add the sifted ingredients to the wet ingredients and whisk until smooth. Cover and refrigerate for at least 1 hour and up to 24 hours.
  • Heat a skillet over medium heat and melt a little butter. Ladle a scant 1/4 cup batter into the skillet. Tilt to swirl the batter so it covers the bottom of the skillet. Cook on one side until small air bubbles form, the top is set and the bottom is golden brown. When done, carefully loosen the edges of the crepe, flip over and cook for 30 seconds longer. Slip out of the skillet onto a plate. Butter the skillet as needed and repeat until all the batter is used.
  • Turn each crepe so the golden brown side is up. Place 3 tablespoons ricotta filling in the middle in a 3 by 2-inch-wide mound. Roll once to cover the filling. Fold the sides into the center and continue rolling until completely closed. Repeat with the remaining crepes. You may have leftover filling; don't overfill.
  • Serve 2 blintzes per plate. Spoon some of the Warm Cherry Sauce over, sprinkle with powdered sugar and garnish with mint sprigs.
  • Combined the reserved cherry juice, kirsch and enough cold water to measure one total cup of liquid.
  • Whisk together the sugar and cornstarch in a small saucepan until no lumps remain. Gradually whisk in the cherry juice mixture and cook over high heat until the mixture comes to a boil. Add the cherries and continue cooking until the sauce has thickened, stirring occasionally, about 5 minutes, remove from heat and add the lemon juice and almond extract. Serve hot or warm.

Elegant appetizers don't need fancy ingredients to be tasty. Humble ricotta is whipped with olive oil and lemon zest to create a pillowy bed for zucchini spirals and crispy prosciutto.

4 slices prosciutto
1 baguette, sliced on the bias into 8 pieces
1 tablespoon olive oil, plus more drizzling
1 cup whole milk ricotta cheese
1 lemon, zested
kosher salt, to taste
1 small zucchini
freshly ground black pepper, to taste
2 cloves garlic cloves, halved
2 tablespoons fresh italian parsley, chopped, for garnish

Steps:

  • Preheat the oven to 425°F (220°C).
  • Arrange the prosciutto slices in a single layer on a baking sheet. Bake for about 6 minutes, flipping halfway, until crispy. Remove from the oven and let cool.
  • Add the baguette slices to another baking sheet and drizzle with olive oil on both sides. Toast in the oven for 7-10 minutes, flipping halfway, until golden brown. Remove from the oven and let cool.
  • Meanwhile, add the ricotta, 1 tablespoon olive oil, the lemon zest, and a pinch of salt to a food processor. Blend until whipped and creamy, about 2 minutes.
  • Use a vegetable peeler to thinly slice the zucchini into ribbons. Transfer to a medium bowl and toss with pepper, salt, and a drizzle of olive oil.
  • When ready to assemble, rub each toasted baguette slice on both sides with the cut side of a garlic clove.
  • Spread about 2 tablespoons of the whipped ricotta onto each piece of toast. Wrap the zucchini ribbons around your fingers to curl, then place on the ricotta-topped toast. Top each piece with a crumbled half-slice of crispy prosciutto. Garnish with the parsley, salt, and pepper.

2 cups strawberries, freshly sliced
1 cup blueberries
1/4 cup diet lemon-lime soda, divided
1 tablespoon fresh mint leaves, chopped
1/2 cup skim milk ricotta cheese
2 1/2 teaspoons lemon zest
2 tablespoons nonfat sour cream

Steps:

  • Toss strawberries, blueberries, 2 tablespoons of soda and mint together in a medium bowl; set aside for 10 minutes.
  • Meanwhile, combine ricotta, remaining 2 tablespoons of soda and lemon zest in another bowl.
  • Whip with a hand-held mixer until light and fluffy; stir in sour cream.
  • Place about 3/4 cup of berry mixture in each of 4 small bowls and top each serving with 1/3 cup of cream.

I saw this on a local news station as an Olympic Dessert special saluting Italy, but wanted to wait until I made it before posting. Very quick and easy and extremely good with or without the Ricotta cream. Makes a colorful presentation!!!

2/3 cup unsalted butter, melted
1 1/4 cups sugar
8 large eggs, separated
1 tablespoon lemon zest
1 teaspoon cinnamon
1/4 teaspoon salt
2 1/2 cups flour, sifted
4 1/2 cups blackberries or 4 1/2 cups strawberries
1/3 cup powdered sugar
1/2 cup ricotta cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 cups whipping cream

Steps:

  • Preheat oven to 350 degrees.
  • Lightly spray an 11 inch removable bottomed tart pan with cooking spray.
  • Cream butter and sugar in a large mixing bowl.
  • Add egg yolks, one at a time, and continue mixing until smooth.
  • Add lemon zest and cinnamon.
  • In a separate bowl, whip egg whites and salt until stiff peaks form.
  • Gently fold egg whites into egg yolk mixture.
  • Fold flour into mixture until just blended.
  • Pour mixture into tart pan and spread evenly.
  • Top with 3 cups of mix berries (reserve remaining berries for topping).
  • Lightly press fruit into mixture.
  • Place in oven and bake for 1 hour.
  • Remove from oven and allow to cool.
  • In small bowl, mix ricotta, powdered sugar, and vanilla until well blended.
  • Set aside.
  • In a large bowl, whip cream until soft peaks form.
  • Add ricotta mixture and continue to whip until smooth.
  • Dust cake with powdered sugar and top with remaining fruit.
  • Serve with ricotta whipped cream.

RADICCHIO FLAT BREAD WITH WHIPPED RICOTTA

1/2 teaspoon active dry yeast
3/4 cup warm water (about 110 degrees)
Pinch of sugar
1 3/4 cups all-purpose flour, plus more for dusting
Coarse salt and freshly ground pepper
1 tablespoon extra-virgin olive oil, plus more for bowl and drizzling
2 heads Treviso radicchio (5 ounces each), quartered lengthwise
1 cup fresh ricotta cheese

Steps:

  • Stir together yeast, water, and sugar in a large bowl, and let stand until foamy, about 5 minutes. Stir in flour, 1/2 teaspoon salt, and the oil until combined. Turn out dough onto a lightly floured surface, and knead with floured hands until smooth, about 2 minutes. Transfer to a large oiled bowl, and cover with plastic wrap. Let stand in a warm, draft-free spot for 20 minutes.
  • Preheat oven to 400 degrees. Divide dough into quarters. On a lightly floured surface, roll out 1 piece of dough to 8 by 5 inches. Transfer to a baking sheet lined with parchment paper. Repeat with remaining dough. Divide radicchio among flatbread, and gently press into dough. Drizzle with oil; season with salt and pepper. Bake until flatbread is golden and crisp, about 15 minutes.
  • Whisk ricotta in a small bowl until lightened. Drizzle flatbread with oil; season with salt and pepper. Serve flatbread with ricotta.
