Here's what you need: chickpeas, olive oil, ground cumin, chili powder, cayenne pepper, salt

15 oz chickpeas, 1 can, drained and rinsed
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon cayenne pepper
½ teaspoon salt

Steps:

  • Preheat oven to 400°F (200°C).
  • Carefully dry the chickpeas. Removing the skins is optional and they will come off easily. The drier you get them, the crunchier they'll be!
  • In a medium bowl, add dried chickpeas, olive oil, cumin, chili powder, cayenne pepper and salt. Toss well to coat evenly.
  • Spread chickpeas out on a parchment paper-lined baking sheet.
  • Roast for 15-20 minutes.
  • Mix around on baking sheet and roast for additional 15-20 minutes, or until browned.
  • Cool for 5-10 minutes.
  • Enjoy!

WASABI GREEN PEAS

A spicy choice for snack food when you need to crunch on something. Great to put out at a party or have next to you at your computer. If you really love wasabi, you may wish to double or triple the coating mixture.

3 cups dried whole peas
1 ½ cups Mirepoix (diced celery, carrots and onion)
3 tablespoons olive oil
salt to taste
¼ teaspoon onion salt, or to taste
½ teaspoon garlic powder, or to taste
¼ cup wasabi powder
2 tablespoons tahini (sesame-seed paste)
2 tablespoons rice vinegar
1 teaspoon Dijon mustard

Steps:

  • Soak the dried peas overnight, then rinse and drain. Place peas in a large pot with enough water to cover by a couple of inches. Add the Mirepoix, and bring to a boil. Cook until tender, about 1 hour.
  • Preheat the oven to 200 degrees F (95 degrees C). Coat a large cookie sheet with olive oil. It helps to use a cookie sheet with sides to keep them from rolling off.
  • Drain the peas, and transfer to the cookie sheet. Roll them around in the oil by tilting the pan, or stir with your hand. Bake for 4 to 8 hours in the preheated oven, stirring every 30 minutes or so, until peas are dry. Remove from oven, and season with salt, onion salt, and garlic powder.
  • While the peas are roasting, mix together the wasabi powder, tahini, rice vinegar, and Dijon mustard in a large bowl. When the peas are ready, pour them into the bowl, and stir to coat with the wasabi mixture. Pour them back onto the cookie sheet in a single layer, and return to the oven.
  • Bake for another 10 minutes in the preheated oven, or until the aroma becomes very strong, and the coating is dry.

1 (12 ounce) can chickpeas (garbanzo beans), drained
2 tablespoons olive oil
1 pinch salt
1 pinch garlic salt
1 pinch cayenne pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, and cayenne pepper, if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning.

WASABI ROASTED CHICKPEAS

Spicy, salty, and slightly sweet wasabi roasted chickpeas are a great snack or salad topper!

1 15 ounce can chickpeas (Drain, but save the liquid from the can.)
3 tablespoons aquafaba
2 tablespoons wasabi powder
1 teaspoon salt
1 teaspoon sugar
2 teaspoons cornstarch (or potato starch)

Steps:

  • Preheat the oven to 400F.
  • Line a baking sheet with parchment paper or a Silpat, and spread the chickpeas onto the sheet in a single layer. Bake for 35 minutes. Remove from the oven, set aside, and reduce the oven temp to 200F.
  • When the chickpeas are done baking at 400F, whisk the chickpea liquid with a fork in a large bowl until it becomes foamy. Add chickpeas and toss to coat with the whipped chickpea liquid, then drain off the excess liquid in a colander.
  • Stir together wasabi powder, salt, sugar, and cornstarch in a small bowl.
  • Transfer the chickpeas back to the large bowl, and toss to coat with the wasabi mixture.
  • Spread chickpeas on baking sheet in a single layer, and bake for 20 more minutes.
