2 tablespoons peanut or vegetable oil, eyeball it
1 sack, 16 ounces, shredded cabbage mix for slaw salads
1 teaspoon salt

Steps:

  • Mix vinegar and sugar. Add oil. Add cabbage to dressing and season with salt and pepper. Toss with fingers to combine. Adjust seasoning. Let stand 20 minutes. Re-toss and serve.

1/4 cup red wine vinegar
2 teaspoons honey
2 serrano chiles
2 tablespoons mayonnaise

1 small red onion, halved and thinly sliced
2 teaspoons poppy seeds
1/4 cup chopped fresh cilantro leaves
1 tablespoon ancho chile powder

1 tablespoon ground coriander
1 tablespoon ground ginger
1 tablespoon brown sugar
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground fennel seeds
Heaping 1/4 teaspoon chile de arbol
Kosher salt
2 teaspoons coarsely ground black pepper

4 (8-ounce) boneless chicken breasts, skin on
1/4 cup canola oil
Black Pepper Vinegar Sauce (recipe follows)
1/4 cup rice wine vinegar
1/2 cup extra-virgin olive oil
3 tablespoons Dijon mustard
2 teaspoons honey
1 teaspoon kosher salt
3/4 teaspoon coarsely ground black pepper

Steps:

  • To make the dressing for the slaw, combine the green onions, vinegar, honey, chiles, mayonnaise, oil and salt and pepper to taste in a blender and blend until emulsified.
  • Combine the cabbage, red onion and poppy seeds in a bowl, add the dressing, and stir until combined. Fold in the cilantro and season with salt and pepper to taste. Cover and refrigerate while you grill the chicken or for up to 1 hour.
  • Heat your grill to high.
  • Stir together the ancho powder, pasilla powder, cumin, coriander, ginger, brown sugar, garlic powder, onion powder, allspice, cinnamon, cloves, fennel, chile de arbol, 2 tablespoons salt, black pepper and cayenne in a small bowl.
  • Brush both sides of the breasts with the oil and season with salt. Rub the top side of each breast with a few tablespoons of the rub and place on the grill, rub side down. Grill until golden brown and slightly charred, 3 to 4 minutes. Turn the breasts over and continue grilling until just cooked through, 4 to 5 minutes longer.
  • Remove the chicken from the grill and drizzle with the black pepper vinegar sauce. Tent loosely with foil and let rest for 5 minutes. Serve the slaw on the side.
  • Combine the vinegar, oil, mustard, honey, salt and pepper in a blender and blend until smooth. The sauce can be made 1 day in advance, covered and refrigerated. Bring to room temperature before serving.

4 duck breasts, skin scored
4 sliced shallots
1/4 cup cognac
2 cups dark chicken stock
4 ounces foie gras, denerved, cut into small pieces and chilled well
Salt and black pepper to taste
Canola oil to cook
1 tablespoon Dijon mustard
Juice of 1 lemon
1/4 cup canola oil
2 cups shredded red cabbage
1/4 cup sliced green scallions
Salt and black pepper to taste
2 cups balsamic vinegar
1/2 cup chinese vinegar
1 1/2 cups canola oil
2 large red onions, sliced
6 medium sized Yukon gold potatoes, 1/4-inch slices, skin on
Salt and black pepper to taste

Steps:

  • Season the duck breasts and place skin side down in a medium heated, thick saute pan. Slowly render the duck fat away (12 to 15 minutes). When the skin browns, let breast rest, meat side down. Just prior to plating wipe out pan and bring to high temperature and quickly sear the duck, meat side first, then the skin side, 3 minutes total. Let rest again before slicing.
  • For the sauce, caramelize the shallots in a saucepan with a little canola oil. Season. Deglaze with cognac and reduce by 75 percent. Add the chicken stock and reduce by 50 percent. Pour into a blender and monter au foie gras. In other words, as liquid is blending, add foie gras pieces to blender. Check for seasoning and keep warm for plating.
  • RED CABBAGE SLAW:
  • Mix mustard with lemon juice. Whisk in oil and check for seasoning. Toss with cabbage and scallions. This slaw may be done 20 minutes before plating.
  • WITH CHINESE AND BALSAMIC VINEGAR EMULSION
  • In a non-reactive sauce pan, reduce the two vinegars by 80 percent until a syrup consistency is achieved. Pour the syrup into a blender while hot. While blending at high speed, drizzle in canola oil. Check for seasoning. Caramelize red onions in a saute pan coated with a little canola oil. Set aside. In a non-stick pan, coat well with canola oil and saute potatoes until golden brown. Season with salt and pepper. Toss hot potatoes with the onions and vinegar emulsion. Check for seasoning.

2 tablespoons dark brown sugar
2 tablespoons dark amber maple syrup
2 tablespoons Worcestershire sauce
1 1/2 tablespoons cider vinegar
1 teaspoon smoked sweet paprika, 1/3 palmful
Coarsely ground black pepper
3 tablespoons cider vinegar
2 tablespoons honey or agave
3 tablespoons vegetable oil
Celery salt and freshly ground black pepper
1/2 pound shredded cabbage slaw salad mix with carrot and purple cabbage
1/2 small red onion, very thinly sliced
2 pounds ground sirloin
1/4 cup grated onion
Montreal steak seasoning (recommended: McCormick) or coarse salt and black pepper
1/4 cup Worcestershire sauce
1 teaspoon dried marjoram or Mexican oregano, 1/3 palmful
1 teaspoon dried thyme
2 tablespoons ancho chili powder, a palmful,
1/2 cup beer (recommended: Brooklyn Ale)
Vegetable oil or olive oil, for drizzling
Sliced yellow sharp Cheddar, optional
Good quality jarred refrigerated pickle slices
12 slider rolls or brioche rolls (recommended: Pepperidge Farm)

Steps:

  • Put all the ingredients for the barbecue sauce in small pot and cook over medium-low heat until the sauce thickens and the flavors combine, about for 20 minutes.
  • Whisk together the vinegar, honey and oil, in a medium bowl. Stir in the celery salt and black pepper, to taste. Add the slaw mix and onions and toss together. Let the salad wilt up to 10 to 15 minutes.
  • Preheat a grill or griddle to medium.
  • Put the meat in a bowl with the grated onion and season with steak seasoning or salt and pepper, to taste. In a small bowl combine the Worcestershire with the herbs, chili powder and beer. Pour the herb mixture over the meat and mix thoroughly. Form the meat mixture into 12 sliders and drizzle with vegetable oil or olive oil. Put the burgers on the grill or griddle and cook for a few minutes on each side. Baste the burgers liberally with barbecue sauce. Top the burgers with Cheddar and let it melt, if you prefer cheese burgers.
  • Serve the burgers on slider rolls topped with pickle slices and the slaw.

Steps:

  • For the Dry Rub: Add all the dry rub ingredients into a medium-sized bowl and stir until thoroughly combined.
  • For the pork shoulder: Place the pork, fat side up, on a clean baking sheet. Season the pork on all sides with salt and pepper then rub the dry rub all over the pork, pressing into the meat. Cover the pork with plastic wrap and place into the refrigerator for 7 hours.
  • Black Pepper Vinegar Sauce: Place all the ingredients into a blender and blend until emulsified. Add water if the sauce is too thick.
  • Green Onion Slaw: Place the green onions, vinegar, chiles, mayonnaise, salt, pepper and oil into a blender and blend until emulsified. Place the cabbage and red onions in a bowl, add the dressing and stir until combined. Fold in the cilantro and season with salt and pepper, to taste.
  • For the pork shoulder: Remove the pork from the refrigerator 30 minutes prior to cooking. Following manufacturer's instructions and using lump charcoal and 1/2 cup drained wood chips for a smoker, or 1 cup for a barbecue, start fire and bring temperature of smoker or barbecue to 225 degrees F to 250 degrees F. Place the pork on the rack in smoker or barbecue. Cover and cook until an instant-read thermometer inserted into the center of the pork reaches 165 degrees F. Turn pork every 45 minutes, about 6 hours total. If using the smoker, after 2 hours place the pork into the smoker pan and fill halfway with chicken stock. (This is to prevent the shoulder from drying out.) Add more charcoal, as needed, to maintain 225 degrees F to 250 degrees F and more wood drained wood chips (1/2 cup for the smoker or 1 cup for the barbecue with each addition) to maintain smoke level. Transfer pork to a clean rimmed baking sheet. Let stand until cool enough to handle. Shred into bite-size pieces. Mound on platter and toss with most of the Black Pepper Vinegar Sauce, reserving the rest for drizzling the bun. Pour any juice from the baking sheet over the pork.
  • For assembly: Drizzle the sauce on the top and bottom of the bun. Top the bottom bun with the meat, another drizzle of sauce, Green Onion Slaw and finish with the top of the bun.

RED CABBAGE VINEGAR BASED COLE SLAW

This is a vinegar based cole slaw I put together with stuff I had at home. It has a lot of ingredients, but they meld together to make it an unusual tasting slaw with zip. Very simple ingredients and very good. I can even see this on hot dogs or a Primanti style sandwich, with beef or pastrami, fries and this slaw. Haven't tried it on sandwiches yet, but if there is any left, sandwiches will be on the menu soon.

2 cups red cabbage, shredded in thin slices
1 medium onion, sliced thin
1/2 cup green pepper, sliced thin

I pinched this recipe from Rachael Ray some time ago. It's a nice change from mayonnaise based slaws. I used fresh cabbage and carrot instead of the packaged slaw mix. If you don't like celery seeds, you could omit them and use celery salt in place of the salt.

1/4 c red wine vinegar
2 Tbsp sugar (heaping)
2 Tbsp vegetable oil
1/2 tsp celery seed

1/4 - 1/2 tsp pepper

Steps:

  • 1. In a large bowl combine cabbage and carrot.
  • 2. Whisk together vinegar, sugar and oil. Add celery seeds, salt and pepper. (Start with the smaller amounts of salt and pepper and adjust after you add the dressing.)
  • 3. Pour dressing over cabbage mixture and toss gently.
  • 4. Let stand 30 minutes, retoss, adjust seasoning and serve.

1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup flat beer
Vegetable oil (for frying)
2 4- to 6-ounce catfish fillets
2 cups purchased coleslaw mix
2 tablespoons white wine vinegar
1 1/2 tablespoons honey
1 tablespoon vegetable oil

Steps:

  • Whisk 1/3 cup flour, salt, and pepper in medium bowl to blend. Whisk in beer.
  • Add enough oil to heavy large skillet to reach depth of 1/2 inch. Heat oil to 350°F. Place remaining 2 tablespoons flour on plate. Coat fish with flour. Dip in batter, letting excess drip off. Fry fish until golden brown and crisp, about 4 minutes per side. Drain fish on paper towels.
  • Toss coleslaw mix, vinegar, honey, and 1 tablespoon oil in medium bowl. Season with salt and pepper. Divide between plates. Place fish atop coleslaw.

HOT ASIAN PORK SKEWERS WITH RICE VINEGAR SLAW



Hot Asian Pork Skewers with Rice Vinegar Slaw image

1 (1 1/2-pound) pork butt, cut into 1-inch cubes
1 cup teriyaki sauce
1/2 head green cabbage, sliced
1/4 head red cabbage, sliced
1/4 cup shredded carrots
1 cup rice wine vinegar
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 cup sweet chile paste
1 tablespoon red pepper flakes
1 habanero, minced (keep the seeds in if you want it super spicy)
1/4 cup dark brown sugar
1 tablespoon brown sugar
1 teaspoon celery seed
3 tablespoons salt

Steps:

  • For the pork: Place 4 to 5 pieces cubed pork onto each skewer and continue until all the pork has been skewered. Place on a sheet tray.
  • To make the marinade, mix the teriyaki sauce, sweet chile paste, red pepper flakes, habanero and brown sugar in a bowl until well combined. Take 1/4 cup of the marinade and baste each skewer. Put the skewers in a plastic bag and marinate for 2 to 3 hours, or up to overnight. Save the rest of the marinade as a basting sauce for grilling.
  • While the pork is marinating, make the rice vinegar slaw. In a non-reactive bowl, mix the green and red cabbage and the carrots. Let stand until the colors bleed, about 10 minutes. During that time, make the dressing. Whisk together the rice wine vinegar, mayonnaise, mustard, brown sugar, celery seed and salt. Pour over the cabbage mixture and refrigerate for 1 hour.
  • To serve: After the pork has marinated, heat a grill to medium-high heat. Grill the pork skewers over direct heat for 3 to 4 minutes on each side, painting on the remaining sauce for a nice caramelization. Serve the pork skewers on a bed of the rice vinegar slaw and extra sauce for dipping.

FOREVER SLAW VINEGAR COLESLAW

A basic coleslaw, dressed with a sweetened vinaigrette, called Forever Slaw because of it's long refrigerated shelf life.

1 (1 pound) bag tri-color coleslaw mix
1 cup chopped Vidalia or other sweet onion
1/2 cup chopped green bell pepper
3/4 cup white vinegar
1/2 cup vegetable oil
1/2 cup granulated sugar
1 teaspoon kosher salt
1 teaspoon celery seed
1 teaspoon dry mustard
Freshly cracked black pepper, to taste

Steps:

  • Combine the cabbage, onion and bell pepper in a large, lidded bowl. Bring dressing ingredients to a boil and pour over the coleslaw mix 1/3 at a time, stirring in between. Cover and refrigerate for 24 hours. Toss again and let come to room temperature before serving.
  • Cook's Notes: May substitute a large head of cabbage shredded. One medium head of cabbage is roughly 5 to 6 cups shredded. White vinegar is traditional for this, though you can use apple cider vinegar as well. Be aware that it will give a slight patina tinge of color to the slaw though.

Dry Rub:
1 cup ancho chili powder
1/3 cup Spanish paprika
3 tablespoons ground dried oregano
3 tablespoons ground coriander
3 tablespoons dry mustard
1 tablespoon ground cumin* 1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
2 teaspoons chile de arbol
1 (6-pound) pork shoulder
Salt and freshly ground black pepper
Chicken stock, if needed
Black Pepper Vinegar Sauce:
1/4 cup rice wine vinegar
2 tablespoons Dijon mustard
2 teaspoons honey
1/2 teaspoon whole black peppercorns
Salt
1/2 cup plus 2 tablespoons canola/olive oil blend
Water, if needed
Green Onion Slaw:
1 cup coarsely chopped green onions
1/4 cup red wine vinegar
2 serrano chiles
2 tablespoons mayonnaise
Salt and freshly ground black pepper
1/2 cup pure olive oil
1 head purple cabbage, finely shredded
1 small red onion, halved and thinly sliced
1/4 cup freshly chopped cilantro leaves

Steps:

  • For the Dry Rub: Add all the dry rub ingredients into a medium-sized bowl and stir until thoroughly combined. For the pork shoulder: Place the pork, fat side up, on a clean baking sheet. Season the pork with salt and pepper then rub the dry rub all over the pork, pressing into the meat. Cover the pork with plastic wrap and place into the refrigerator for 7 hours. Black Pepper Vinegar Sauce: Place all the ingredients into a blender and blend. Add water if the sauce is too thick. Green Onion Slaw: Place the green onions, vinegar, chiles, mayonnaise, salt, pepper and oil into a blender and blend. Place the cabbage and red onions in a bowl, add the dressing and stir. Fold in the cilantro and season with salt and pepper to taste. For the pork shoulder: Remove the pork from the refrigerator 30 minutes prior to cooking. Following manufacturer's instructions and using lump charcoal and 1/2 cup drained wood chips for a smoker, or 1 cup for a barbecue, start fire and bring temperature of smoker or barbecue to 225 degrees to 250 degrees. Place the pork on the rack in smoker or barbecue. Cover and cook until an instant-read thermometer inserted into the center of the pork reaches 165 degrees. Turn pork every 45 minutes, about 6 hours total. If using the smoker, after 2 hours place the pork into the smoker pan and fill halfway with chicken stock. Add more charcoal, as needed, to maintain 225 degrees to 250 degrees and more wood drained wood chips (1/2 cup for the smoker or 1 cup for the barbecue with each addition) to maintain smoke level. Transfer pork to a clean rimmed baking sheet. Let stand until cool enough to handle. Shred into bite-size pieces. Mound on platter and toss with most of the Black Pepper Vinegar Sauce, reserving the rest for drizzling the bun. Pour any juice from the baking sheet over the pork.

Chicken:
1 1/2 pounds skinless boneless chicken thighs
Olive oil
Brown Sugar and Coffee Barbecue Sauce
Hoecakes:
1 cup yellow cornmeal
1/2 cup all purpose flour
2 teaspoons sugar
1 teaspoon baking powder
3/4 teaspoon salt
1 cup water
2 tablespoons (1/4 stick) butter, melted, plus additional for griddle
3/4 cup coarsely grated sharp cheddar cheese
Vinegar Slaw
Special Equipment
2 cups wood chips (such as hickory, apple, or cherry), soaked in 2 cups water for 1 hour, then drained; 13x9x1-inch disposable aluminum foil baking pan

Steps:

  • For chicken:
  • Prepare barbecue (medium-high heat). Spread drained wood chips in disposable foil pan. Remove grill racks from barbecue. Place foil pan with wood chips directly atop hot coals (for charcoal barbecue) or over flames (for gas barbecue). Return grill rack to barbecue. Brush chicken with oil; sprinkle with salt and pepper. When wood chips begin to smoke, place chicken on grill rack above pan with wood chips. Cover grill and smoke chicken until cooked through, turning occasionally, about 18 minutes. Transfer to large bowl and cool slightly. Shred chicken into bite-size strips; place in same bowl. Mix 2 1/2 cups barbecue sauce into chicken. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewarm chicken in barbecue sauce over medium-low heat before using, adding more barbecue sauce to moisten mixture, if needed.
  • For hoecakes:
  • Preheat oven to 300°F. Mix first 5 ingredients in medium bowl. Add 1 cup water and melted butter and whisk until well blended. Heat griddle or large nonstick skillet over medium-high heat. Brush with additional melted butter. Working in batches, pour batter by 1/4 cupfuls onto griddle. Using back of spoon, immediately spread batter for each cake into oval shape about 4x21/2 inches; cook until bottom is golden brown, about 2 minutes. Turn cakes over and cook until bottoms are golden brown, 1 to 2 minutes longer. Place hoecakes on baking sheet and transfer to oven to keep warm while making remaining cakes. Place 2 hoecakes on each of 6 plates; sprinkle 1 tablespoon cheddar cheese over each cake. Top each with warm chicken in barbecue sauce. Spoon Vinegar Slaw atop chicken and serve.

VINEGAR COLE SLAW

I found this on the internet, it looked so easy to make. I had to post it so I wouldn't lose the recipe. The nicest thing about this recipe is that it did last about 2 weeks in my refrigerator. It went over very well at our Family's July 4th picnic. I hope you enjoy it as much as we did eating it. Note: Use the "small cans" of diced tomatoes, I wasn't sure about the ounce size. Also a "small can" of pickle relish is best for this recipe.

1 head cabbage (Med Cut)
1 cup sugar
1 cup white vinegar
2 tablespoons salt
1 tablespoon black pepper
6 (4 ounce) cans diced tomatoes
2 green peppers (sliced like cabbage)
1 (6 ounce) jar sweet pickle relish

Steps:

  • Combine sugar, vinegar, salt and pepper over low heat to dissolve the sugar.
  • Set aside to cool.
  • Mix cabbage, bell pepper and pickle relish together.
  • Pour sugar and vinegar mixture over all and mix well.
  • Place in a gallon container and refrigerate.
  • Better if made ahead and allowed to sit for a couple of days before serving.
  • Enjoy.

2 cups thinly sliced fresh fennel bulb
1 1/2 cups thinly sliced red onion
2 medium carrots, cut into thin matchstick-size strips (about 1 1/2 cups)
1/2 cup chopped fresh Italian parsley
1/4 cup olive oil
1/4 cup Sherry wine vinegar
1 teaspoon sugar

Steps:

  • Toss first 4 ingredients in large bowl. Whisk oil, vinegar, and sugar to blend in small bowl. Season to taste with salt and pepper. Add dressing to vegetable mixture and toss to coat. Season with salt and pepper. Cover and refrigerate at least 1 hour and up to 3 hours, tossing occasionally. Toss to blend before using.

CIDER VINEGAR SLAW

1/2 cup apple cider vinegar
2 tablespoons ketchup
1 tablespoon sugar
1/2 teaspoon celery seeds
1 tablespoon hot sauce
Kosher salt
1/4 cup vegetable oil
1 small head red cabbage, outer leaves discarded, cored and finely shredded
1/2 medium red onion, thinly sliced
1/4 cup chopped fresh parsley

Steps:

  • Whisk together the vinegar, ketchup, sugar, celery seeds, hot sauce and 1 1/2 teaspoons salt in a large bowl until the sugar dissolves. Whisk in the oil to make a smooth dressing.
  • Add the cabbage and red onions to the dressing, and toss well. Cover and let stand at room temperature for about 20 minutes to wilt the cabbage slightly. (The slaw can also be made several hours ahead and refrigerated.)
  • Sprinkle the slaw with the parsley; toss and serve.
