3.5 oz glass noodle, 1 package
hot water, for soaking
2 cups shredded cabbage
1 cup shredded carrot
½ cup scallions, chopped
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
1 teaspoon black pepper
3 tablespoons soy sauce
1 tablespoon sesame oil
12 wheat egg roll wrappers
1 tablespoon water, for sealing
vegetable oil, for frying

Steps:

  • Place the glass noodles in a large bowl and add enough hot water to cover. Let sit for 10 minutes, until softened. Drain the noodles and chop into ½-inch (1-cm) pieces.
  • In a large bowl, mix together the chopped glass noodles, cabbage, carrots, scallions, onion powder, garlic powder, salt, pepper, soy sauce, and sesame oil. Toss until well combined.
  • Place a spring roll wrapper on a clean work surface and add 3 tablespoons of filling to the center. Fold the bottom of the wrapper over the filling, then fold in the sides and roll. Lightly wet the exposed with your fingertip and continue rolling to seal the egg roll. Repeat with the remaining wrappers and filling.
  • Fill a deep skillet with ½ inch (1 cm) of vegetable oil and heat over medium-high heat until the oil reaches 325˚F(160˚C). Fry the egg rolls in batches of 1-2 at a time for 2½- 3 minutes on each side, until crispy and golden brown. Remove from oil and drain on a wire rack or plate lined with paper towels to absorb any extra oil.

1 ripe mango, diced
1 (1 inch) piece fresh ginger, grated
2 tablespoons sweet Thai chili sauce
2 tablespoons rice vinegar
1 lime, juiced
½ cup fresh Thai basil and/or cilantro, chopped
1 large avocado - peeled, pitted, and thinly sliced
2 cups fresh vegetables such as cucumbers, lettuce, microgreens, carrots and bell peppers, thinly sliced, diced or cut into matchsticks
Salt and pepper to taste
½ cup cilantro leaves
½ cup fresh mint leaves
8 rice paper wrappers
1 teaspoon Chopped peanuts, for topping

Steps:

  • In a blender, combine all the dipping sauce ingredients except the basil and cilantro. Blend until smooth, add the basil and cilantro and pulse until chopped. Pour into a bowl, cover and place in the fridge until serving.
  • Squeeze a little lime juice over the sliced avocado. Create an assembly line of vegetables and herbs, so that they are all ready to go.
  • Fill a shallow dish with warm water. Add a rice paper sheet, one at a time for 5 to 10 seconds. Remove and place on a flat surface. Toward one end of the rice wrapper, begin layering with 1 to 2 slices of avocado, small handfuls of fresh cilantro and mint, and a handful of veggies. Sprinkle the veggies with salt and pepper. Fold both ends to the center and roll the sheet as tightly as you can without ripping. Place each prepared spring roll on a serving platter and cover with Reynolds Wrap® Aluminum Foil to keep the spring rolls from drying out.
  • Continue with remaining ingredients, adding them to the platter as you work. Keep the spring rolls covered with foil at all times.
  • Serve the spring rolls with the mango dipping sauce and chopped peanuts (if desired).

2 tablespoons extra-virgin olive oil
2 cups collard greens, cut into 1/4-inch ribbons
2 cups shredded green cabbage
1/2 cup shredded carrots
1/2 medium onion, sliced thin
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
3 tablespoons low-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon rice wine vinegar
1/4 teaspoon liquid smoke
2 tablespoons thinly sliced scallions
1/2 cup canned black-eyed peas, rinsed and drained
Canola oil, for frying
8 egg roll wrappers
Pepper Jelly Sauce, recipe follows
1/2 cup pepper jelly
2 teaspoons hot sauce
2 teaspoons low-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon rice wine vinegar

Steps:

  • To make the filling for the egg rolls, heat the olive oil over medium heat in a wok or large skillet. Add the collard greens, cabbage, carrots, onion, salt and pepper and saute until wilted and beginning to soften, 4 to 5 minutes. Add the garlic and cook another minute. Turn up the heat to medium-high and add the soy sauce, sesame oil, vinegar and liquid smoke and cook until the liquid is absorbed, 1 to 2 minutes. Turn off the heat, then add the scallions and black-eyed peas. Remove to a bowl and let cool completely.
  • Preheat 2 inches canola oil to 350 degrees F in a deep skillet or enameled cast-iron pot. Line a sheet tray with a wire rack.
  • Lay an egg roll wrapper on a cutting board, oriented in a diamond shape. Add about an eighth of the mixture (a generous 1/3 cup) horizontally across the wrapper, in a line going from one corner to another. With your finger, spread a little water on the edges of the wrapper to moisten. Fold up the bottom corner over the filling, then fold in the ends and roll up the wrapper, making sure it is sealed. Set aside and repeat with the remaining wrappers and filling.
  • Fry the rolls in batches, flipping once, until golden brown, 2 to 3 minutes. Remove to the wire rack to drain.
  • Serve warm with the Pepper Jelly Sauce.
  • Whisk together the pepper jelly, hot sauce, soy sauce, sesame oil and vinegar in a small bowl and set aside.

2 cups sushi rice, rinsed and drained
2 cups water
1/4 cup rice vinegar
2 tablespoons sugar
1/2 teaspoon salt
7 fresh asparagus spears, trimmed
Bamboo sushi mat
7 nori sheets
1 small cucumber, julienned
1 small carrot, julienned
2 jalapeno peppers, seeded and julienned
1 medium ripe avocado, peeled and thinly sliced
1/4 cup julienned daikon radish
Reduced-sodium soy sauce and prepared wasabi

Steps:

  • In a large saucepan, combine rice and water; let stand for 30 minutes. Bring to a boil. Reduce heat to low; cover and simmer for 15-20 minutes or until water is absorbed and rice is tender. Remove from the heat. Let stand, covered, for 10 minutes., Meanwhile, in small bowl, combine the vinegar, sugar and salt, stirring until sugar is dissolved., Transfer rice to a large shallow bowl; drizzle with vinegar mixture. With a wooden paddle or spoon, stir rice with a slicing motion to cool slightly. Cover with a damp cloth to keep moist. (Rice mixture may be made up to 6 hours ahead and stored at room temperature, covered with a damp towel. Do not refrigerate.), Place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until crisp-tender., Place sushi mat on a work surface so mat rolls away from you; line with plastic wrap. Place 2/3 cup rice on plastic; with moistened fingers, press rice into an 8-in. square. Top with one nori sheet., Arrange a small amount of vegetables and avocado about 1-1/2 in. from bottom edge of nori sheet. Lifting bottom edge of the bamboo mat, roll up the rice mixture jelly-roll style, being sure to lift plastic from rice. Roll bamboo mat over sushi roll, pressing firmly, to make a more compact roll. When the roll is complete, tighten the roll to make more compact. Remove mat; cover roll and set aside. Repeat with remaining ingredients to make seven rolls., Cut each into six pieces. Serve with soy sauce and wasabi.

1 cup white mushroom, sliced
2 medium carrots, sliced
½ english cucumber, sliced
1 cup red cabbage, sliced
½ yellow bell pepper, sliced
¼ cup natural peanut butter
½ teaspoon ginger, minced, optional
2 tablespoons sesame oil
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
2 teaspoons maple syrup
1 pinch red pepper flakes

Steps:

  • Fill a medium shallow bowl with warm water and set near your work station.
  • Dip a rice paper wrapper in the warm water for a few seconds, submerging completely. Remove and lay flat on a smooth, clean surface, such as a plate.
  • Add your desired combination of sliced mushrooms, sliced carrots, sliced cucumber, sliced cabbage, and sliced bell pepper to the middle of the wrapper. Be careful not to overfill, or rolling it will become difficult.
  • Working quickly, before the rice paper dries out, fold both sides of the rice paper over the vegetables to secure.
  • Lift the bottom edge of the rice paper and carefully fold it over the top of the vegetables, tucking it under on the other side, then gently roll until the vegetables are completely covered and the top edge of the wrapper adheres to the spring roll.
  • Set the spring roll aside and cover with a damp paper towel to keep fresh while you repeat with the remaining ingredients. Once you've finished making the spring rolls, chill in the fridge while you make the sauce.
  • Make the Peanut Sauce: Add the peanut butter, ginger (if using), sesame oil, rice wine vinegar, soy sauce, and maple syrup to a small bowl. Whisk until combined.
  • Transfer the sauce to a small serving bowl and sprinkle with red pepper flakes.
  • Serve the chilled spring rolls with the sauce.

1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 medium yellow onion, chopped
1 small yellow squash, finely diced
1 small zucchini, finely diced
Kosher salt and freshly ground black pepper
15 ounces whole-milk ricotta
1/2 cup grated Parmesan
3 tablespoons fresh flat-leaf parsley leaves, chopped
1 large egg, beaten
2 tablespoons extra-virgin olive oil
1 pound bulk Italian sausage
One 24-ounce jar marinara sauce
1/4 cup fresh basil leaves, chopped
Nonstick cooking spray, for the baking dishes
1 pound lasagna noodles, cooked according to package instructions and drained
2 cups grated mozzarella (about 8 ounces)
1/4 cup grated Parmesan

Steps:

  • For the filling: Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook until softened, about 4 minutes. Add the squash, zucchini, a sprinkle of salt and black pepper and cook, stirring frequently, until the squash softens but is not mushy, about 4 minutes. Set aside to let cool.
  • Add the ricotta, Parmesan, parsley, egg, 1/2 teaspoon salt and 1/4 teaspoon black pepper to a large bowl, then add the cooled vegetables. Stir to combine.
  • For the sauce: Heat the oil in a large skillet over medium heat. Add the sausage and cook, breaking into pieces with a wooden spoon, until browned and cooked through, 5 to 7 minutes. Stir in the marinara and bring to a simmer. Let cook for 2 minutes, then remove from the heat and stir in the basil.
  • For the lasagna rolls: Preheat the oven to 375 degrees F. Spray two 8-inch square baking dishes with nonstick cooking spray.
  • Spread about 1/2 cup of the sauce on the bottom of each prepared baking dish.
  • To make the rolls, spread each lasagna noodle with a layer of the ricotta filling. Starting at one end, roll up the noodle. Repeat with the remaining lasagna noodles and ricotta filling. Place half of the lasagna rolls seam-side down in each baking dish.
  • Spread the remaining sauce over the lasagna rolls. Top with the mozzarella and Parmesan. Bake until the sauce is bubbling and the cheese is melted, 35 to 40 minutes. cooked sushi rice 1 1/4 cups (6 oz/185 g)
unseasoned rice vinegar 1 teaspoon
toasted nori seaweed 1 sheet, about 7 by 8 inches (18 by 20 cm)
toasted sesame seeds 1 tablespoon, plus more for sprinkling
English cucumber 1/4, peeled and cut into thin matchsticks
carrot 1/2, peeled and cut into thin matchsticks
ripe avocado 1/4, thinly sliced
soy sauce and pickled ginger slices for serving (optional)

Steps:

  • Place the rice in a microwave-safe bowl. Add a few drops of water and microwave on high until the rice is warm and softened, about 30 seconds. Set the rice aside to cool.
  • In a small bowl, combine the vinegar with 2 tablespoons water. Place a bamboo sushi mat on a work surface with the bamboo strips facing you horizontally. Place the nori sheet horizontally, shiny side down, on the mat, aligned with the edge nearest you. Dip your hands into the vinegar-water mixture and spread the cooled rice in an even layer over the nori sheet, leaving the top one-fourth of the nori uncovered. Sprinkle the sesame seeds over the rice, then arrange the cucumber and carrot sticks and the avocado slices in a horizontal strip across the bottom portion of the rice.
  • Starting at the edge closest to you, lift the mat, nori, and rice over the filling to seal it inside, then roll up the sushi into a tight cylinder. Use your finger to lightly moisten the outer edge of the nori with the vinegar-water mixture to seal the roll. Dipping a sharp knife in water before each cut, cut the roll in half crosswise, and then cut each half crosswise into 4 equal pieces.
  • Pack the sushi snugly into an airtight container and sprinkle with sesame seeds. Refrigerate until ready to go. Include little containers of soy sauce and/or pickled ginger, if you like. And don't forget the chopsticks!

2 tablespoons lime juice
1 teaspoon grated gingerroot

2 cups bean sprouts
2 cups shredded Chinese (napa) cabbage (8 oz)
2 cups snow (Chinese) pea pods, cut into julienne strips
18 six-inch rice-paper wrappers
2 cups finely chopped cooked sea bass or whitefish (3/4 lb)
1/3 cup chopped fresh cilantro
3 tablespoons finely chopped unsalted roasted peanuts

Steps:

  • In small bowl, mix all dipping sauce ingredients until smooth. Cover; refrigerate until serving time.
  • In saucepan, heat 1 inch water to boiling, or place steamer basket in 1/2 inch water in saucepan (water should not touch bottom of basket) and heat to boiling. Add bean sprouts. Cover; cook or steam 2 minutes. Immediately rinse with cold water; drain. Repeat with cabbage and pea pods.
  • Place rice-paper wrappers, 2 at a time, in bowl of hot water 45 seconds. Remove and place on plate. When completely soft, separate wrappers.
  • Place about 2 tablespoons fish, 1 tablespoon each bean sprouts, cabbage and pea pods, 1 teaspoon cilantro and 1/2 teaspoon peanuts on center of each wrapper. Fold one end of wrapper up about 1 inch over filling; fold right and left sides over folded end. Fold remaining end down, wrapping around roll. Serve with dipping sauce.

2 tablespoons rice vinegar, unseasoned
2 teaspoons lime juice, fresh
1 tablespoon roasted peanuts, unsalted, finely chopped
1/2 teaspoon sugar
1/8 teaspoon salt
1 ounce cellophane noodle (part of 16 oz package)
1 cup boiling water
4 (8 inch) round rice paper sheets
1 cucumber, peeled, halved, seeded, and cut into matchstick strips
1 carrot, shredded
4 scallions, sliced into long, thin strips (light green parts only)
1/4 cup cilantro leaf, fresh, packed
1/4 cup flat leaf parsley, packed

Steps:

  • Dipping sauce: combine vinegar, lime juice, peanuts, sugar and salt in small bowl. Set aside.
  • Combine noodles with boiling water in medium bowl.
  • Soak noodles for 12 minute Drain and pat dry with paper towels.
  • Half-fill large skillet with warm water.
  • Soak 1 rice paper round in water 30-45 seconds.
  • Pat with paper towel to remove water.
  • Place 1/4 noodles on bottom third of rice paper.
  • Top with 1/4 each of cucumber, carrot, scallions, and cilantro.
  • Tightly roll rice paper around filling, but just enough to cover it.
  • Place 1/4 parsley leaves in single row along the roll, then continue rolling up to form neat cylinder.
  • Place roll seam side down on plate and cover with damp paper towel.
  • Complete filling 4 rolls.
  • Slice each rolls on diagonal into 4 pieces. Serve with sauce.
  • 2 points plus yeilds 1 roll and 1/2 tbsp sauce.

1 sheet nori
2 tablespoons hummus, tahini, or cashew cheese
1/4 cup sweet pea shoots or sprouts
1/4 cup shredded carrots
1 small Persian cucumber, cut into matchsticks
1/4 avocado, sliced thinly
1 tablespoon nutritional yeast flakes
1 teaspoon lemon juice
Salt, to taste

Steps:

  • Arrange the nori sheet on a work surface with the long edge close to you. Spread the hummus in a thin layer over the nori sheet. Layer the pea shoots, carrots, cucumber sticks, and avocado on top of the bottom one-third of the nori sheet. Sprinkle with lemon juice and season with salt to taste. Gently but firmly, roll the edge closest to you toward the center of the nori wrap, carefully rolling a sushi-like roll. (Note: a bamboo sushi mat makes this easier. Doing it freehand requires some practice.) With a sharp knife, carefully slice your roll and serve immediately.

Soba and Veggie Summer Rolls with Vegan Nuoc Cham image

Soba is made with buckwheat (and sometimes wheat flour). These noodles are quick cooking, with a complex and nutty flavor. They pair perfectly with crunchy vegetables all wrapped inside chewy rice paper wrappers. Dip the summer rolls in a vegan version of nuoc cham for a completely plant-based appetizer.

3.5 ounces dry soba
2 tablespoons reduced-sodium soy sauce
2 tablespoons fresh lime juice (about 1 lime)
2 tablespoons water
1 tablespoon vegan sambal oelek
1 tablespoon vegan sugar
2 cloves garlic, very finely minced
Eight 10-inch rice paper wrappers
1 cup baby spinach
1 cup finely shredded purple cabbage
1/2 medium red bell pepper, thinly sliced
1/2 English cucumber, seeded and cut into matchsticks

Steps:

  • Cook the soba: Bring a medium saucepan of water to a boil. Cook the soba according to the package instructions. Drain and rinse with cold running water until cooled. Drain and set aside until needed.
  • Make the nuoc cham: Whisk the soy sauce with the lime juice, water, sambal oelek, sugar, and garlic in a small bowl until combined. Set aside until needed.
  • Wrap the summer rolls: Line a baking sheet with parchment paper and fill a large skillet with cold water.
  • Working with 1 rice paper wrapper at a time, soak in the skillet until just pliable, 5 to 7 seconds. Transfer the wrapper to a clean cutting board.
  • Layer some of each of the spinach, cabbage, bell pepper, and cucumber in the bottom third of the wrapper. Top with a small bundle of the soba. Fold in the sides of the wrapper, then roll it up like a burrito. Place it on the prepared baking sheet seam-side down.
  • Repeat with the remaining wrappers and filling ingredients, spacing the rolls apart on the baking sheet.
  • Serve with the vegan nuoc cham.

These stuffed lasagna noodles really hit the spot. Garnish with chopped parsley or sliced green onions. Serve with a tossed salad, warm garlic bread, and a white zinfandel for a superb meal. You can use fresh, frozen or canned peas for this recipe.

1 cup chopped mushrooms
1 onion, chopped
1 cup sliced carrots
1 cup green peas
1 cup chopped broccoli
1 clove garlic, minced
¼ cup dry red wine
2 cups shredded mozzarella cheese
1 egg
2 tablespoons olive oil
¼ cup grated Parmesan cheese
1 (16 ounce) package lasagna noodles
1 (26 ounce) jar spaghetti sauce

Steps:

  • Cook noodles in a large pot of boiling water until al dente. Rinse, drain, set aside.
  • Heat oil in a medium saute pan. Add mushrooms, onions, carrots, peas, and broccoli; saute over medium heat until tender. Add wine and garlic; cook five minutes, or until wine has just about evaporated. Remove from heat, and cool for ten minutes.
  • In a medium bowl combine sauteed vegetable mixture, mozzarella cheese, 2 tablespoons Parmesan cheese, and egg. Mix well.
  • Pour half of the sauce into the bottom of a 13x9x2inch baking pan. Spread 1/3 cup vegetable mixture over each lasagna noodle then carefully roll up the noodle. Place seam side down in dish. When finished placing all the noodles in the pan, pour remaining pasta sauce evenly over noodles. Cover with aluminum foil.
  • Bake at 375 degrees F (190 degrees C) for 35 to 40 minutes. Uncover, and sprinkle remaining Parmesan cheese over noodles. Bake, uncovered, 5 more minutes. Garnish and serve immediately.

5 black dried mushrooms
2 teaspoons vegetable oil
1 tablespoon minced peeled fresh ginger
4 garlic cloves, minced
2 cups shredded bok choy
1 cup shredded carrot
3/4 cup fresh bean sprouts, rinsed and drained
1/2 cup chopped green onions
2 tablespoons sesame seeds
12 (8-inch) round sheets rice paper
For the Sauce:
1/2 cup hoisin sauce
3 tablespoons water
3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 1/2 teaspoons dark sesame oil
1/8 teaspoon crushed red pepper

Steps:

  • TO PREPARE THE ROLLS: Combine mushrooms and boiling water to cover in a bowl; cover and let stand 10 minutes. Drain and thinly slice mushrooms. Heat vegetable oil in a small nonstick skillet over medium-high heat. Add mushrooms, ginger, and garlic; stir-fry 2 minutes. Remove from heat. Combine the mushroom mixture, bok choy, carrot, bean sprouts, green onions, and sesame seeds in a large bowl; set aside. Add cold water to a large, shallow dish to a depth of 1 inch. Place 1 rice paper sheet in dish of water. Let stand 2 minutes or until soft. Place rice paper sheet on a flat surface. Spoon about 1/3 cup vegetable mixture in center of sheet. Fold sides of sheet over filling, and roll up jelly-roll fashion. Gently press seam to seal; place, seam side down, on a serving platter (cover to keep from drying). Repeat procedure with remaining rice paper and vegetable mixture. Slice each roll in half crosswise. TO PREPARE THE SAUCE: Combine hoisin sauce and remaining ingredients in a small bowl.
