3 tablespoons margarine
2 tablespoons of finely chopped onions
2 minced garlic cloves
3 tablespoons flour
2 tablespoons soy sauce
1 cup water
salt and pepper

Steps:

  • Put margarine in a pot and saute the onions and garlic over med-high heat.
  • Reduce heat back to medium after onions and garlic have become golden brown.
  • Make a roux by gradually adding the flour, while continuously stirring to avoid lumps.
  • Still stirring, add soy sauce and water to the mixture.
  • Add salt and pepper to taste.
  • Once the gravy has reached desired thickness, turn off the stove and you are done!

EASY VEGETARIAN ONION GRAVY

5 tablespoons butter (can sub Earth Balance [see Vegan Option])
1/2 cup finely diced yellow onion
1/4 cup all-purpose flour
2 cups low-sodium vegetable broth
1 tablespoon Tamari or soy sauce (optional)
Salt and fresh ground black pepper to taste

Steps:

  • In a medium saucepan over low heat, melt the butter.
  • Add the onion and a pinch of salt. Sweat the onions, stirring occasionally, until tender, 8-10 minutes. If they start to turn brown, turn down the heat - you're looking for translucent and tender, not golden.
  • Increase heat to medium. Stir in the flour and cook, stirring frequently, for three minutes.
  • Gradually stir in the vegetable broth and continue stirring, over medium heat, until thickened to a gravy consistency, about 3 - 4 minutes.
  • Stir in Tamari or soy sauce if using. Add salt and pepper to taste and serve.

1 onion, chopped
2 carrots, finely diced
2 celery sticks, finely chopped
2 bay leaves
1 large thyme sprig
large knob of butter
1 tbsp sugar
2 tbsp plain flour
1 tsp Marmite (optional, but it does add colour and depth)
1 tbsp tomato purée
2 tbsp red wine vinegar
1l vegetable stock (or chicken or beef stock, if you prefer)
soy sauce, to taste

Steps:

  • Fry the veg and herbs in the butter for 10-12 mins until the vegetables start to brown. Scatter over the sugar and continue to cook until sticky and caramelised.
  • Stir in the flour until sandy, then add the Marmite, if using, tomato purée and vinegar. Pour over the stock, then simmer everything together until you have a thickened sauce.
  • Sieve, then add soy sauce to season and colour. Use straightaway or cool and freeze.

2 tablespoons margarine
1 diced onion
2 tablespoons flour
1 teaspoon garlic salt
2 teaspoons cornstarch
1 1/2 cups vegetable broth
2 tablespoons soy sauce (I used Braggs liquid aminos)
1 tablespoon nutritional yeast

Steps:

  • Heat the margarine in a large skillet over medium heat.
  • Sauté the onion for a couple of minutes, or until transparent.
  • Add the flour and garlic salt and sauté this mixture for about five to ten more minutes.
  • Add in the vegetable broth and cornstarch, making sure to stir well to prevent lumps.
  • Bring this to a boil and once you have done this you want to reduce to a simmer and continue cooking, stirring frequently.
  • Add in the nutritional yeast and soy sauce and reduce the heat even further, cooking for just a few more minutes.

This is a recipe I adapted from one my mother has made since I was little. These patties are VERY good - but keep in mind they are also very rich. As a dinner suggestion to complete your meal and to balance out the richness of the patties & gravy, try serving these with green beans and fruit salad. Enjoy!

1 (8 ounce) package reduced-fat cream cheese
1 cup breadcrumbs
1/3 cup walnuts, finely chopped
1 3/4 cups Egg Beaters egg substitute (or 7 eggs)
1/2 medium onion, minced
1/2 cup olive oil (ONLY FOR FRYING)
1/2 cup fat free sour cream
1/4 cup skim milk
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

  • Place the cream cheese in the freezer for approximately 15 minutes, remove and cube into 1/2" chunks immediately while it is still very cold from the freezer. (This step will help to harden the cream cheese slightly so it will be easier cut.)
  • In a medium to large bowl beat the eggs well, then add the cubed cream cheese, minced onions, finely chopped walnuts and bread crumbs. Mix VERY GENTLY until moistened and combined. Be careful not to break up the cream cheese chunks - they should stay in chunks in the patties.
  • Preheat oven to 350 degrees now so it is ready when you are done frying patties.
  • Heat a small amount of oil in the bottom of a non-stick frying pan. DO NOT ADD ENTIRE 1/2 CUP OIL TO PAN! Only use enough oil to keep patties from sticking, adding more as needed - I usually start with 1 or 2 tablespoons.
  • Using approximately 1/4 cup of the mixture per patty, drop into the hot oil and fry patties. Flatten patties if needed and turn over to fry other side when first side is golden to medium brown.
  • In a separate bowl, mix together the sour cream and cream of mushroom soup for the gravy.
  • Once the patties are fried place the patties in an oven safe casserole dish, layering with the gravy.
  • Bake for 25 minutes or until patties are heated through.
  • Serve immediately making sure to spoon some of the gravy over each patty.

CASHEW GRAVY (VEGETARIAN/VEGAN)

I make this to go with the Lentil and Wild Rice loaf for Thanksgiving. It goes wonderfully on mashed potatoes, yorkshire puddings, vegetables and just about anything else. The cashew and onion flavors mix beautifully together when you blend it at the end. The water amounts are estimates, but I have added descriptions of what it should look like. Also, definitely taste as you go along and add whatever suits your taste and complements the rest of your meal. This last time, I added about 1/3 c. white wine in addition to about 1 T of soy and threw in some (1 tsp fresh?) rosemary and it was amazing. Sometimes I add a whole lot of additional soy sauce and that is great too. It makes quite a bit, so you could cut in half. I freeze the left overs in small containers to use later.

1 onion, chopped
2 cups cashews (raw or roasted unsalted)
3 garlic cloves, crushed (or more)
2 tablespoons flour
2 tablespoons soy sauce

Steps:

  • Saute onion in oil until soft and slightly brown. (you can also let onions cook longer and get browner for an even richer flavor).
  • (If you are using raw cashews, add them at this step and let them cook for several minutes to "toast" them).
  • Add garlic and cook another minute longer to slightly brown the garlic.
  • Add flour and stir it around over the heat for a minute.
  • Add 1-2 cups of water a half cup at a time and stir to blend in the flour and thicken. Add more water as it becomes thick.
  • (if you are using roasted cashews add them here).
  • Add more water (another 1-2 cups) so that the broth is soup like and the cashews are completely in the water.
  • Add soy sauce, pepper and salt (if desired) or any additional desired flavorings.
  • Cook until cashews are soft and flavors have melded. I always let this simmer away for about 30 minutes and add more water and soy or spices as needed, but remember that the flavor will change when cashews are blended. When done cooking, you'll want it to be a thin gravy consistency. The cashews will thicken it up when you blend it.
  • Turn off the heat and let it sit for a few minutes to cool down.
  • Puree in a blender or food processor in batches. You may need to add more water while blending to get the right consistency. Taste and adjust any seasoning.
  • Can be refridgerated for several days. Freeze any leftovers in small batches to enjoy at a later date.

  • Pour sherry into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook and stir until sherry is reduced, about 2 minutes. Remove mushroom mixture from the skillet and set aside.

1/2 pound shiitake mushrooms
1/2 pound cremini mushrooms
4 cups organic mushroom or vegetable stock
4 tablespoons unsalted butter
2 shallots, finely chopped
1 tablespoon Marsala wine, (optional)
3 tablespoons all-purpose flour
1 teaspoon thyme leaves

Steps:

  • Remove stems from portobello, shiitake, and cremini mushrooms. Place stems and mushroom stock in a medium saucepan over medium-high heat; bring to a boil. Reduce heat to low; simmer for 30 minutes. Strain; set aside.
  • Finely chop portobello cap, and set aside. Thinly slice shiitake and cremini. Place 3 tablespoons butter in a large saute pan over medium heat; add shallots, and cook until translucent, 3 to 5 minutes. Add chopped and sliced mushrooms, and cook until mushrooms are soft and browned, and all liquid has evaporated. Add Marsala, if using, and cook, stirring to loosen any browned bits on the bottom of the pan. Remove from heat, and set aside.
  • Place the remaining tablespoon butter and flour in a medium saucepan over medium heat; cook until browned and fully combined, 2 to 3 minutes. Slowly whisk in the enriched stock; bring to a boil, whisking until thickened. Add the reserved mushroom mixture and thyme, and stir to combine. Serve hot.

1 medium onion, quartered
2 stalks celery, roughly chopped
1 medium carrot, roughly chopped
3 cloves garlic, crushed
1 teaspoon vegetable oil
Kosher salt
1 ounce dried shiitake mushrooms (about 1 heaping cup)
6 sprigs thyme
2 sun-dried tomatoes
2 tablespoons low-sodium soy sauce
1 dried bay leaf
4 tablespoons unsalted butter
6 fresh sage leaves
1/3 cup all-purpose flour
1/4 cup chopped fresh parsley
Freshly ground black pepper

Steps:

  • Position an oven rack in the top position in the oven and preheat to 450 degrees F. Toss the onions, celery, carrots and garlic with the oil and 1 teaspoon salt on a rimmed baking sheet. Roast until the vegetables are charred in some places, 25 to 30 minutes.
  • Bring the roasted vegetables, 1 cup water, mushrooms, thyme, sun-dried tomatoes, soy sauce, bay leaf and 1 teaspoon salt to a simmer in a medium saucepan over medium-high heat. Cook, stirring occasionally, until most of the liquid is gone, 8 to 10 minutes. Add 6 cups water and 1/2 teaspoon salt, and bring back to a simmer. Reduce the heat to medium-low, and gently simmer until reduced by about one third, about 45 minutes. Strain the stock through a strainer into a large liquid measuring cup, use the back of a ladle to squeeze all the liquid out of the solids (there should be about 4 cups of stock). If not making gravy right away, let the stock cool to room temperature, then refrigerate for up to 3 days or freeze for up to 1 month.
  • To make the gravy, warm the stock slightly in a medium saucepan if it has been refrigerated. Melt the butter in another medium saucepan over medium heat. Add the sage leaves, and stir for 30 seconds; remove and set aside. Add the flour to the saucepan, and stir until smooth and lightly golden, about 2 minutes. Slowly pour in the warm stock while whisking constantly until smooth and thick, 8 to 10 minutes.
  • Chop up the fried sage, stir it into the gravy along with the parsley and season to taste with pepper.

1 tablespoon vegetable oil
0.5 (14 ounce) package meatless sausage (Lightlife Gimme Lean is good)
1/4 cup all-purpose flour
3 cups low-fat milk (rice milk works well)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Prepare the biscuits according to package directions.
  • Heat the oil in a large nonstick skillet over medium high heat. Add the sausage; cook 3 minutes or until browned, stirring to crumble.
  • Remove from heat, cool slightly. Crumble the sausage into 1/2" pieces, and return to the skillet.
  • Lightly spoon flour into a dry measuring cup, level with a knife. Mix the flour and milk, stirring with a whisk until smooth. Add the milk mixture, salt and black pepper to pan; bring to a boil over medium high heat.

  • Heat 1 Tbsp. garlic-oil mixture in a medium pot over medium-low until beginning to brown and smells fragrant, about 30 seconds. We even use it with fries and cheese to make a Vegetarian Quebec Poutine where I work.Do not use a blender to break up the onions. It just doesn't seem to work. Can be frozen and the recipe is easily doubled.

1 teaspoon vegemite or 1 teaspoon marmite
1 tablespoon soy sauce
salt and pepper

Steps:

  • Fry the onion in the oil in a medium saucepan for 5 minutes.
  • Add the flour, and cook for a further 5-10 minutes, until flour and the onion are nut-brown and the onion is soft and slightly pulpy.
  • Add the garlic, cook for 1-2 minutes, then gradually stir in the dark vegetable stock. Bring to the boil, then simmer for 10 minutes.
  • Strain the gravy into a clean saucepan (push the onion through the sieve and add the yeast extract and soya sauce and salt and pepper to taste. Stir well, then serve.

Honestly, this tastes better to me than the real thing. And, it is much better for you with less saturated fat and no cholesterol. The flavor will greatly depend on which broth or bouillon you use, so experiment a bit until you find one you like. It is great with mashed or roasted potatoes and goes well with a Tofurkey. This also works really well as a stew base--just add the cornstarch at the end when the veggies are cooked. It is very easy to prepare, and freezes perfectly, so we make huge batches so some is always ready. When you reheat from frozen, either run it through the blender or use a hand blender after thawing to regain a creamy consistency.

2 tablespoons flour (pretty much any kind, AP is fine)
2 tablespoons margarine (I like Smart Balance)
2 cups water or 2 cups vegetable broth
1 vegetable bouillon cube (Omit this if you use broth. I like McCormick "chicken", but Knorr is also ok.)
1 tablespoon tamari (soy sauce is not as good, but ok)
1 pinch thyme
fresh ground black pepper
1 1/2 tablespoons cornstarch
2 tablespoons cold water for cornstarch

Steps:

  • Whisk the margarine and flour together over low heat in a small saucepan for a few minutes until the flour is cooked and golden.
  • Add the water and bouillon or broth, tamari, thyme, and pepper. Bring to a boil while whisking often to keep it smooth.
  • Lower heat and simmer a minute or so.
  • Combine cornstarch and water and stir well to get rid of lumps. Whisking gravy briskly, pour into saucepan. Continue whisking until gravy returns to a boil and has thickened.

2 tbsp oil
2 large onions , cut into wedges
2 carrots , roughly chopped
2 celery sticks, roughly chopped
2 bay leaves , torn
2 tbsp flour
400ml red wine
400ml vegetable stock
2 tbsp mushroom ketchup

Steps:

  • Heat the oil in a saucepan. When hot, add the onions, carrots, celery and bay, and cook gently for 10-15 mins until soft. Remove the bay leaves.
  • Add the flour and cook for 3-4 mins until brown. Add the wine little by little, stirring constantly, then add the stock. Once fully incorporated, simmer for 5-10 mins until the gravy has thickened. Strain through a sieve, stir through the mushroom ketchup and season to taste.

2 tablespoons butter
1 cup water
1 1/2 teaspoons Better Than Bouillon No Beef Base, plus
1 cup water
1 tablespoon Braggs liquid aminos
1 teaspoon fresh ground black pepper (to taste)
1 1/2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Better Than Bouillon No Beef Base broth stir in 1 tsp Better Than Bouillon, No Beef Base into 1 cup hot water. set aside.
  • Whisk the butter and flour together over low heat in a small saucepan for 2-3 minutes until the flour is golden brown.
  • Add the water and Better Than Bouillon No Beef Base broth, Bragg liquid aminos, and pepper and 1/2 tsp Better Than Bouillon, No Beef Base. Bring to a boil while whisking often to keep it smooth.
  • Lower heat and simmer a minute or so.
  • Combine cornstarch and 2 tbsp water and stir well to get rid of lumps. Whisking gravy briskly, pour into saucepan. Continue whisking until gravy returns to a boil and has thickened.
