1 (28 ounce) can whole peeled tomatoes, drained, juice reserved
4 tablespoons olive oil, divided
1 medium onion, finely chopped
3 cloves garlic, minced
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano

½ teaspoon freshly ground black pepper, divided
1 pound meatless ground beef substitute (such as Beyond Meat® Beyond Beef Plant-Based Ground)
1 tablespoon vegan bread crumbs
1 ½ teaspoons dried parsley flakes
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 (12 ounce) package spaghetti

Steps:

  • Dice tomatoes and return them to the can with their juice.
  • Heat 2 tablespoons olive oil in a saucepan over medium-high heat. Add onion and garlic to the hot oil and saute, stirring frequently, for 2 minutes. Stir in diced tomatoes and their juice, tomato sauce, oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well blended. Bring sauce to a simmer and reduce heat to low. Let simmer while preparing meatballs.
  • Combine beef substitute with bread crumbs, parsley, remaining 3/4 teaspoon salt, remaining 1/4 teaspoon pepper, garlic powder, and onion powder in a bowl; mix until ingredients are well combined. Roll the mixture into twelve 1 1/2-inch balls.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat remaining 2 tablespoons olive oil in a deep skillet or Dutch oven over medium-high heat. Add meatballs to the pan and saute, turning occasionally, until all sides are browned and a bit crisp, about 10 minutes total. Reduce heat to low.
  • Pour simmering tomato sauce over the meatballs and mix. Simmer sauce with meatballs for an additional 10 minutes. Serve meatballs and sauce over spaghetti.

½ sweet onion, sliced
2 beets, peeled and diced

1/2-1 teaspoon oregano

1 large spaghetti squash, halved and seeded
8 stalks fresh asparagus, trimmed and chopped
3 large tomatoes, cut into wedges
1 medium onion, cut into wedges
½ cup thinly sliced patty pan squash, or more to taste
4 cloves garlic, sliced
2 tablespoons olive oil
salt and ground black pepper to taste
5 medium mushrooms, sliced
2 tablespoons sliced black olives
1 tablespoon Italian seasoning
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place spaghetti squash halves, cut-sides down, in a large baking dish. Add about 3/4 inch water.
  • Bake in the preheated oven until tender, about 45 minutes. Remove from the oven and turn cut-sides up; let cool for 10 minutes. Reduce oven temperature to 300 degrees F (150 degrees C).

Steps:

  • Preheat oven to 375°F (190°C).

1 cup chopped mushroom
1/2 cup diced sweet potato
1/2 cup diced courgette

1 stock, cube (optional)
1/2-3/4 cup red lentil
1/4 cup water
salt
pepper
1 teaspoon mixed herbs

  • Saute the onion and garlic in a little oil. Don't brown. Add the diced sweet potato, mushroom and courgette and stir fry gently for a few minutes.
  • Add everything else, and simmer gently until everything cooked.

Canned kidney beans are quite soft, so in this recipe it is better to use dried beans and slightly undercook them. You can also try using canned pinto beans or black-eyed peas for more texture.

1/2 cup dried red kidney beans or 1 (14 ounce) can red kidney beans
1 pinch sea salt
2 teaspoons dried oregano
2 teaspoons thyme
1 tablespoon tomato juice (from can)
1/4 cup whole grain flour, approximately
2 garlic cloves, minced
1 teaspoon olive oil
1 (28 ounce) can diced tomatoes
1 pinch sea salt
2 teaspoons dried oregano
2 teaspoons dried thyme
2 teaspoons unrefined sugar
1/2 lb whole grain spaghetti noodles

Steps:

  • To use dried beans in this recipe, they must be fully cooked before you begin. You should soak kidney beans in lots of water overnight, then drain. Cover them by 2 inches with fresh water, do NOT add any salt, and gently boil them for 1 hour. Adding a bit of kombu (seaweed) to the water while they cook will improve their digestibility.
  • To use canned beans, look for one that doesn't have any salt listed in the ingredients. Before using, rinse and drain the beans.
  • Mash the cooked kidney beans and season. Add flour as needed to bind them together. Form this into small balls, and bake at 350 degrees F for 20-30 minutes.
  • Saute the garlic in olive oil, then add the tomatoes and seasonings. Leave this to simmer.
  • Bring a pot of lightly salted water to a boil and add the noodles. They will take about 10 minutes to cook.
  • Drain the noodles, and stir in a small amount of tomato sauce with them. Serve with more sauce and topped with 3-4 'meatballs'.

2 tablespoons Earth Balance natural buttery spread
2 tablespoons olive oil
1/2 large onion, chopped
3 garlic cloves, minced
1 lb veggie crumbles (Smart Ground Original)
28 ounces petite diced tomatoes
15 ounces tomato sauce
6 ounces tomato paste
1 teaspoon salt
1/4 teaspoon pepper
1 -2 teaspoon sugar
1/2 teaspoon oregano
1 teaspoon fennel seed, crushed
2 -3 bay leaves

Steps:

  • In a large non-stick pot over medium heat, melt the Earth Balance and olive oil, add the onion and saute until it is soft and translucent. Add the garlic and cook for just a minute.
  • Continuing over medium heat, add the veggie crumbles, breaking them into very small pieces. Allow them cook, stirring only every minute or so. Doing this gives the crumbles time to brown/sear. Cook for 8-10 minutes, or until well browned.
  • Stir in the remaining ingredients, adding the bay leaves after all the other ingredients have been mixed together. Bring the sauce to a boil, then turn down the heat to a simmer and cook for one hour covered with an offset lid, stirring periodically.
  • Serve over spaghetti with a green salad and garlic bread made with olive oil.

16 ounces spaghetti
24 ounces marinara sauce
12 1/2 ounces firm silken tofu
2 ounces soymilk
2 tablespoons nutritional yeast
2 ounces red wine vinegar or 2 ounces vodka
salt and pepper

Steps:

  • Prepare spaghetti according to package directions.
  • Meanwhile, heat marinara sauce in a saucepan over low to low-medium heat.
  • Blend tofu, soy milk, and nutritional yeast in blender or food processor until smooth. You may also add about a tablespoon of olive oil or additional soy milk, until the consistency is like thick alfredo sauce.
  • Add tofu mixture to the saucepan with the marinara sauce. Stir in vinegar or vodka. Add salt and pepper and any other seasonings you like, to taste. Continue to simmer over low heat until pasta is ready.
  • Toss with drained pasta and enjoy!
  • Serving suggestions: add sauteed veggies or your favorite meat subsitutes; top with freshly ground black pepper, nutritional yeast, or your favorite vegan cheese.
