Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.

  • Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Oil and flour a fluted tube pan (such as Bundt®).
  • Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Add 2 cups soy milk, oil, vinegar, and vanilla extract and stir until just combined. Pour batter evenly into the prepared pan.
  • Bake in the preheated oven, watching closely, until a toothpick inserted in the center comes out clean, 30 to 40 minutes. Cool in the pan on a wire rack for 15 minutes. Invert cake onto a serving platter with a sheet of wax paper underneath the cake. Let cool completely, about 45 minutes, before glazing.
  • Combine jam and 1 tablespoon water in a microwave-safe bowl. Heat glaze in a microwave oven at 50% power for about 1 minute.
  • Combine chocolate chips and 1/4 cup soy milk in the top of a double boiler over medium heat. Stir until chocolate is melted, about 5 minutes. Add coffee granules and stir until smooth. Remove ganache from heat and let sit to thicken slightly, about 8 minutes.
  • Spoon and spread raspberry glaze all over the top and sides of the cake. Follow with ganache. Allow cake to sit in a cool place until serving. Before serving, remove the wax paper from under the cake.

150g dairy-free spread, plus extra for the tins
300ml dairy-free milk, we used oat milk
1 tbsp cider vinegar
300g self-raising flour
200g golden caster sugar
4 tbsp cocoa powder
1 tsp bicarbonate of soda
½ tsp vanilla extract
100g dairy-free dark chocolate
200g dairy-free spread
400g icing sugar
5 tbsp cocoa powder
1 tbsp dairy-free milk, such as oat milk
handful of fresh, seasonal fruits such as cherries, blackberries or figs

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease the base and sides of 2 x 20cm sandwich tins with dairy-free spread, then line the bases with baking parchment.
  • Put the dairy-free milk in a jug and add the vinegar - it will split but don't worry. Put all of the other cake ingredients into a large bowl, pour over the milk mixture and beat well until smooth. Divide the mixture between the prepared tins and bake for 25-30 mins or until a skewer inserted into the middle of the cakes comes out cleanly. Leave to cool in the tins for 10mins then turn out onto wire racks to cool completely.
  • To make the buttercream, put the chocolate into a heatproof bowl and melt in the microwave, stirring every 30 seconds. Leave the melted chocolate to cool for 5 minutes. Beat the dairy-free spread and icing sugar together with a wooden spoon then sift in the cocoa powder with a pinch of salt. Pour in the melted chocolate and dairy-free milk and keep mixing until smooth.
  • Sandwich the two cooled sponges together with half of the buttercream then pile the rest on top and down the sides. Decorate with the fresh fruit.

3/4 cup packed brown sugar

Steps:

  • Spray crock pot insert with cooking spray.
  • Mix flour, 1/2 cup sugar, 2 tbsp cocoa, baking powder, and salt together in bowl.
  • Stir in soy milk, oil, and vanilla until smooth.
  • Pour batter into crock pot insert.
  • Mix brown sugar and remaining 1/4 cup cocoa in bowl (make sure there are no big lumps). Sprinkle over batter.
  • Pour hot water over contents of crockpot - DO NOT STIR!
  • Cook on high for 2 hours or until toothpick inserted in centre comes out clean. Remove lid of crock pot and let stand for 30 minutes.
  • Spoon cake into bowls. Spoon sauce over top.
  • Great on its own; also yummy with soy whipped cream or vanilla ice cream.

  • Ganache: Place chocolate in a medium heatproof bowl. Bring golden syrup and soy creamer to a boil in a small saucepan over medium-high heat. Remove from heat and pour over chocolate. Let stand 2 minutes, then stir until smooth. Pour ganache over cake, allowing it to drip down sides. Let stand at room temperature until set, at least 15 minutes.

An upside down pudding cake from "How it all Vegan"....my first ever pudding cake, and it was pretty fabulous. I'm somewhat in awe of how simple it was....as we were putting it together it looked a little strange having never made one before, but it worked!! This is one of those cakes (desserts) you more than likely always have the ingredients on hand for. My 5 year old actually put this together aside from the boiling water part - it worked out just fine, lumps and all! The original recipe called for 1/2 cup margarine...I subbed oil. My only wish would be that the pudding part was a little "creamier", but I'm not sure how to accomplish that. I served this to non vegans tonight and they all enjoyed it, no mention of it being vegan or otherwise. Served with vanilla ice "cream".

1 tablespoon organic vanilla extract
⅔ cup organic canola oil
2 teaspoons organic white vinegar
2 cups cold water

Steps:

  • Preheat the oven to 350°F. Butter and flour two 8- or 9-inch round cake pans, or place liners in 2 muffin pans for 24 cupcakes. Set aside.
  • In a large bowl, sift the dry ingredients together. Set aside.
  • In a medium bowl, mix the vanilla extract, oil, vinegar, and cold water.
  • Slowly whisk the wet ingredients into the dry ingredients, being careful not to overmix. The mixture will be quite wet, but this is okay.

2/3 cup maple syrup or 2/3 cup honey
1/2 cup vegetable oil
2 tablespoons egg substitute
1 tablespoon soy lecithin (optional)
3 ripe bananas, mashed

1/2 cup semisweet vegan chocolate chips

Steps:

  • Preheat the over to 350. Cream together the syrup, oil, and egg replacer. Add lecithin and bananas.

I got this recipe from a cookbook; I can't recall which. I have modified it a bit. It truly is wonderful. The frosting is amazingly decadent.

1 cup unbleached white flour
1 cup pastry flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 cup sweetened cocoa powder
1 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/2 cup sugar (I use turbinado sugar)
1 cup original soymilk
1 cup pure maple syrup
1/2 cup safflower oil
2 teaspoons apple cider vinegar (Braggs)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
4 cups non-dairy chocolate chips (I use Sunspire organic semi-sweet)
1 cup vanilla-flavored soymilk
1 tablespoon brewed coffee
1/4 cup pure maple syrup

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix flours, baking soda, baking powder, cocoa, salt, cinnamon, and sugar. In another bowl, mix 1/2 cup water, original soymilk, maple syrup, vinegar, vanilla extract, and almond extract. Pour wet ingredients slowly into dry, combining as you pour. Mix well to combine.
  • Line two 9-inch cake pans with parchment paper, or waxed paper. Divide batter evenly into both cake pans. Bake 40 to 45 minutes, or until tester comes out clean. Remove from oven and let cool on wire racks about 30 minutes.
  • To prepare frosting, put chocolate chips, vanilla soymilk, coffee, and syrup into a double boiler. Heat until chocolate chips melt, blend all ingredients. Set aside to cool, immersion blend about 1 minute. Cool in refrigerator about 1 hour. Warm slightly before frosting cake.
  • (Also, the frosting recipe yields enough to frost 2 layer cakes. So, you'll definitely have more than enough. It's also really good melted as a topping on soy ice cream).

This is my mother-in-law's grandmother's recipe from the Depression era. When eggs and milk were in very short supply she created this recipe out of need. It is our favorite cake AND it is easy to make! No mixer is needed. Just a light whisking gets it all mixed. Don't let the fact that it is vegan fool you - you'd never guess it by the taste! Enjoy!

2 cups white sugar
½ cup unsweetened cocoa powder
2 teaspoons baking soda
2 cups water
½ cup canola oil
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Whisk flour, sugar, cocoa powder, and baking soda together in a bowl; add water, canola oil, and vinegar. Mix until batter is smooth. Pour batter into prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 30 minutes. Cool in the pan before slicing.

I love chocolate and this easy dessert really is a winner with my family. Its really chocolaty and satisfies my sweet tooth. I made my cake in two 8" round cake tins, but you can use other tins as I've mentioned in the directions. If you use ground flax as your egg substitute mix 2 tbsp. ground flax seeds with 6 tbsp. water, that equals 2 eggs. Make sure you let this sit until the flax is like a gooey liquid. Beat it with a hand mixer to help it congeal.

3 cups flour (spelt)
2 cups sugar (natural)
2 teaspoons baking soda
1 cup cocoa powder
1 teaspoon sea salt
2 egg substitute (I used ground flax seed and water)
1 cup soymilk
3/4 cup light oil
2 teaspoons vanilla extract (I used maple)
1 cup boiling water
8 ounces cream cheese (sofened-I used Toffuti)
1/4 cup margarine (softened-I used earth balance)
1/2 teaspoon vanilla extract
1/8 teaspoon sea salt
3/4 cup cocoa
3 3/4 cups powdered sugar

Steps:

  • PRE-PREPARATIONS:.
  • Preheat your oven to 350'F.
  • Prepare your baking pan(s). Make sure you grease them well and put parchment on the bottom of the pans. This cake can stick.
  • You can use a tub pan. If you do, bake this for one hour.
  • You can use a 9 x 13 rectangular pan, if you do bake for 45 minutes.
  • If you use 2 round 8" cake pans bake for 30-35 minutes.
  • Not all ovens are the same so cooking times may vary slightly.
  • After the cake is done, check it with a skewer by sticking it in the middle of the cake. If its done, the skewer will come out clean.
  • NOW FOR THE CAKE:.
  • Mix the dry ingredients in a bowl.
  • Mix the wet ingredients together well and add to the dry ingredients. Mix together until totally combined and smooth.
  • Put the batter into your prepared pan(s) and bake according to the above directions:.
  • FOR THE CREAM CHEESE ICING:.
  • In a deep narrow bowl beat the cream cheese, margarine, vanilla and sea salt together well until it is a creamy mixture.
  • Add the cocoa and mix thoroughly. You could leave the cocoa out if you want a white icing.
  • Add the powdered sugar until the icing is the consistency you like. I prefer mine somewhat stiff, but its up to you.
  • Once the cake(s) are totally cooled ice them and put into the fridge to set up for about 1 hour.
  • Cut yourself a big slice and enjoy with your favourite beverage.

Mininum ingredients, easy to make and healthier than many oily cake mixes. I am posting this so that I can get the nutritional information. It makes a great vegan cake, brownie, muffins or pudding depending on what you add. For a denser fudge cake add up to one cup of dark chocolate chips. some other favourites of mine are 2/3 cup of chopped nuts, cherries, coconut etc. You can reduce the cocoa slightly for a less chocolately cake. Also you can use normal wheat flour. Without any oil it really does benefit from some chocolate chips. Another thing I like to do is make up the dry mix in batches and put it in jars in bags and then all I need to do is sift it into the wet mix or give the dry mix away as gifts in nice jars. It is also nicer the nice down and because of the moistness from the applesauce it keeps well, freezer and defrosts and heats up beautifully especially if making puddings.

  • Combine the dry mix ingredients in a large bowl. Sift dry mix ingredients into the apple mixture and mix combine gently but thoroughly.
  • For muffins ( 18 mins) and puddings(20 mins add 2/3C cherries + 1 cup of chocolate chips) it makes about 12 bake in a 190c oven, for mini cakes makes (about 50) bake in 190c oven for 15 minutes For a cake it takes about 40-60 mins at 180c but keep an eye on it., check for firmness and make sure a skewer comes out clean.

This indulgent, fudgy vegan bake is topped with a rich frosting - you'd never guess that it's free from dairy, eggs, wheat and nuts

a little dairy-free sunflower spread, for greasing
1 large ripe avocado (about 150g)
300g light muscovado sugar
350g gluten-free plain flour
50g good-quality cocoa powder
1 tsp bicarbonate of soda
2 tsp gluten-free baking powder
400ml unsweetened soya milk
150ml vegetable oil
2 tsp vanilla extract
85g ripe avocado flesh, mashed
85g dairy-free sunflower spread
200g dairy-free chocolate, 70% cocoa, broken into chunks
25g cocoa powder
125ml unsweetened soya milk
200g icing sugar, sifted
1 tsp vanilla extract
gluten-free and vegan sprinkles, to decorate

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease two 20cm sandwich tins with a little dairy-free sunflower spread, then line the bases with baking parchment.
  • Put 1 large avocado and 300g light muscovado sugar in a food processor and whizz until smooth.
  • Add 350g gluten-free plain flour, 50g cocoa powder, 1 tsp bicarbonate of soda, 2 tsp gluten-free baking powder, 400ml unsweetened soya milk, 150ml vegetable oil and 2 tsp vanilla extract to the bowl with ½ tsp fine salt and process again to a velvety, liquid batter.
  • Divide between the tins and bake for 25 mins or until fully risen and a skewer inserted into the middle of the cakes comes out clean.
  • Cool in the tins for 5 mins, then turn the cakes onto a rack to cool completely.
  • While you wait, start preparing the frosting. Beat together 85g ripe avocado flesh and 85g dairy-free sunflower spread with electric beaters until creamy and smooth. Pass through a sieve and set aside.
  • Melt 200g dairy-free chocolate, either over a bowl of water or in the microwave, then let it cool for a few mins.
  • Sift 25g cocoa powder into a large bowl. Bring 125ml unsweetened soya milk to a simmer, then gradually beat into the cocoa until smooth. Cool for a few mins.
  • Tip in the avocado mix, 200g sifted icing sugar, melted chocolate and 1 tsp vanilla, and keep mixing to make a shiny, thick frosting. Use this to sandwich and top the cake.
  • Cover with sprinkles or your own decoration, then leave to set for 10 mins before slicing. Can be made 2 days ahead.

I need to play around with this more to be able to judge the results in all situations. It was from Vegetarian times for the original. Why post it? Because the others like the Moosewood while good isn't good for a specialized low fat diet and the one who has the problem has a chocolate tooth that won't quit. So for special treats such as a birthday, this is a solution. This way you can have your cake and eat it too.

3/4 cup pitted prune
1/2 cup water
2 tablespoons vegan egg replacer powder
1/2 cup water
2 cups sugar
2 cups unbleached all-purpose flour
3/4 cup cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup soymilk
2 teaspoons white vinegar

Steps:

  • Cake: Preheat oven to 350 degrees. In food processor or blender, chop prunes. With motor running, add water. Puree, stopping to scrape sides, until mixture resembles smooth paste, about 5 minutes. Transfer to bowl of mixer.
  • In separate bowl, combine Egg Replacer with water, mixing with whisk until smooth. Add to prude puree m mixer bowl, mixing at medium speed until smooth and fluffy. While beating, gradually add sugar. Beat until light and fluffy.
  • In seperate bowl, sift together flour, cocoa, baking soda, baking powder and salt. In small bowl, combine soymilk and vinegar. Stir to mix. Let sit a few minutes until clabbered.
  • Add flour-cocoa mixture to prune-sugar mixture alternately with soymilk, beating constantly until batter is light and fluffy. Scrape bottom of bowl several times.
  • Divide batter among three 9-inch cake pans that have been sprayed with PAM or Olivio and their bottoms lined with waxed paper. Bake until cake springs back when touched in center and wooden pick inserted comes out clean, about 30 minutes.
  • Remove from oven and place pans on cooling racks. Run spatula carefully around edge. Let cake cool in pans until room temperature, about 20 minutes.
  • Notes: Just began trying the purees in place of the pitted prunes. An example of Egg Replacer Powder is called EnerG.
