3 medium cucumbers
1 can (6 ounces) tuna, drained and flaked
2 hard-boiled large eggs, chopped
1/2 cup shredded cheddar cheese
1/2 cup diced celery
1/4 cup Miracle Whip
2 tablespoons sweet pickle relish
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1/2 teaspoon salt

Steps:

  • Cut cucumbers in half lengthwise; remove and discard seeds. Cut a thin slice from bottom of cucumber if necessary so they sit flat. In a bowl, combine the remaining ingredients. Spoon into the cucumbers. Serve immediately.

2 cans (6 ounces each) tuna, drained and flaked
1 hard-boiled large egg, chopped
3 tablespoons finely chopped celery
1 tablespoon finely chopped onion
1/2 cup Miracle Whip
1 teaspoon sweet pickle relish
4 submarine sandwich or hoagie buns
4 lettuce leaves
4 slices cheddar cheese
8 wooden skewers
Goldfish cheddar crackers

Steps:

  • In a bowl, combine the tuna, egg, celery and onion. Stir in the Miracle Whip and pickle relish; set aside. Make a 2-in. wide V-shaped cut in the center of each bun to within an inch of the bottom. Remove cut portion and save for another use. Line each bun with a lettuce leaf and fill with tuna mixture., Cut cheese slices in half diagonally. For sails, carefully insert a wooden skewer into the top center of each cheese triangle. Bend cheese slightly; push skewer through bottom center of cheese. Insert two skewers into each sandwich. Place on a serving plate. Sprinkle fish crackers around boats.

7 ounces tuna in water, drained
1/4 cup celery, diced
1/4 cup onion, diced
1/4 cup almonds, toasted, chopped
1/4 cup green pepper, diced
1/4 cup water chestnut, diced
6 stuffed olives, chopped
sliced pimiento (to garnish)
1/2 cup mayonnaise
1 dash Worcestershire sauce
1 dash your favorite hot sauce
1 cup cheddar cheese, shredded
6 fresh French rolls, sliced open and the middle scooped out

Steps:

  • Mix all ingredients well, except for the cheese and the pimentos. Fill the rolls with the tuna mixture.
  • Top with cheddar cheese.
  • Bake in 400 degree oven until heated through and cheese is melted. Top with slices of pimento.

This time of the year everybody is growing these huge cucumbers. I am not a fan of the huge seeds in the cucumbers so this is a great way to use them. The huge seeds are scooped out and filled with tuna salad. Great for a light lunch

1 small onion chopped
1 Tbsp dill relish

  • 1. Peel the cucumber cut it in half then cut each half in half. Scoop out the seeds and discard them.
  • 2. Drain the tuna and add the onion, relish and Miracle whip. Spoon the tuna into the cucumber boats.
  • 3. Garnish with the parsley

Eggplant Boats With Tuna and Capers image

Small eggplants are stuffed with a flavorful mixture, topped with two types of cheese and oven-baked.

1600 g eggplants (4 small eggplants)
4 tablespoons olive oil, divided
1/2 teaspoon sea salt
200 g shallots, cut into thin slices
270 -300 g cherry tomatoes, halved
200 g canned tuna, drained
100 g capers, washed, drained
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon dried basil
1/2 cup tomato puree
100 g mozzarella cheese, grated
20 g grana padano or 20 g parmesan cheese, grated
30 g breadcrumbs

Steps:

  • Slice each eggplant in half lengthwise. With a spoon remove the flesh from the center of the eggplant halves, leaving a ¼ inch rim around each. Reserve 100 g of the scooped out flesh.
  • Place the scooped out eggplant halves on a large baking sheet lined with silicone or parchment paper. Grease them with olive oil (1 tablespoon), inside and outside, season with sea salt. Bake in the oven at 200°C for about 30 minutes until golden. Remove from the oven and set aside.
  • Chop in a food processor 100 g of the scooped out eggplant flesh and sauté for 5-7 minutes in 1 tablespoon of olive oil, until tender. If necessary, add a little water. Set aside.
  • Sauté shallots for 4 -5 minutes in ½ tablespoons of olive oil until soft and golden-brown in color. Stir into the tuna mixture.
  • Sauté cherry tomatoes in ½ tablespoon olive oil in another skillet for about 5 minutes, stirring occasionally, until lightly browned.
  • Mix and combine chopped eggplant flesh, cherry tomatoes, fried shallots, tuna, capers, salt, pepper, basil and tomato puree.
  • Stuff evenly the scooped out eggplant halves with the tuna mixture. Top with grated mozzarella, then Grana Padano and finally breadcrumbs. Sprinkle with 1 tablespoon of olive oil. Return to the oven and bake for 10 minutes until the cheese has melted.

Kosher salt and pepper, to taste
1 5oz Can Tuna (drained)
1 Stalk Celery (finely chopped)
½ small Red Onion (diced)
¼ Cup Plain Greek Yogurt
2 Tbsp Chopped Dill
1 Tsp Dijon Mustard
1 Tbsp Fresh Lemon Juice
1 Jalapeno (thinly sliced or chopped)
¼ Cup Shredded Cheddar Cheese
Corn
Chopped Tomatoes
Red chili peppers
Green Onions

Steps:

  • Preheat your oven to 350F and line a baking tray with parchment paper.
  • Cut the zucchini in half lengthwise, then scoop out the insides and save for another use.
  • Place the zucchini into the prepared baking tray, and spray with cooking oil. Season with salt and pepper to taste, then place into the middle rack of the oven and bake for 12-15 minutes, or until just tender.
  • In a mixing bowl, add tuna, celery, red onion, yogurt, dill, mustard, lemon juice, and jalapeño. Mix until combined, then taste and season with salt and pepper as needed.
  • Stuff the zucchini with the tuna mixture then sprinkle with cheddar.
  • Continue to bake in the preheated oven for about 10 minutes, or until cheese is melted. Enjoy!

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Keli Palmer.

6 1/2 oz can tuna
2 small green bell peppers
1/2 c mayonnaise
2 slice cheese

Steps:

  • 1. Drain tuna and put tuna in a bowl. Mix tuna and mayonnaise together.
  • 2. Cut green peppers in halves and remove insides.
  • 3. Fill pepper halves with tuna mixture.
  • 4. Slice cheese squares diagonally and weave a toothpick through each piece. Insert in the "boats" as sails.

1/4 c celery, chopped thin
1/4 c slivered almonds
1/4 c onions, chop thin
1/4 c water chestnuts diced fine or can use apples
1/4 c bell pepper, diced thin
6 slice ripe olives, diced
1/2 c mayonnaise
1 dash(es) worcestershire sauce
tabasco ( according to degree of heat desired)
6 sourdough french rolls
cheddar cheese, shredded
pimentos, diced thin

Steps:

  • 1. Rinse tuna, drain and shred. Add all but the last three ingredients.
  • 2. Hollow the French rolls and fill with tuna mixture. Cover with cheddar cheese and garnish with pimentos.
  • 3. Serve cold or bake in a shallow pan in a 350 degree oven for 10 minutes.
