BUTTERNUT SQUASH, CHICKEN, AND QUINOA SOUP



Butternut Squash, Chicken, and Quinoa Soup image

This tasty, healthy, and filling soup is the perfect comfort food. Serve with crusty rolls or bread.

1 ½ pounds whole skinless, boneless chicken breasts
salt and ground black pepper to taste
1 ½ pounds butternut squash, quartered and seeded
2 teaspoons olive oil
1 onion, minced
4 cloves garlic, crushed
3 ½ cups chicken broth
1 (14 ounce) can canned diced tomatoes
⅔ cup quinoa
1 ½ teaspoons dried oregano
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Sprinkle chicken with salt and ground black pepper. Wrap in aluminum foil and place on a baking sheet.
  • Place butternut squash pieces cut-side down in a 9x13-inch baking dish. Add about 1/2-inch water to the dish and cover with aluminum foil.
  • Bake chicken and squash in the preheated oven until butternut squash is tender and chicken breasts are no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).
  • Heat oil in a skillet over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes.
  • Scoop cooked squash flesh into a large pot. Pour in chicken broth and mash together until smooth using an immersion blender or potato masher.
  • Cube cooked chicken and add to the pot. Stir in onion, garlic, canned tomatoes, quinoa, oregano, and 1/2 teaspoon salt. Bring soup to a gentle boil; reduce heat and simmer until quinoa is tender and flavors are well-blended, about 1 hour.

1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced, or more to taste
1 tablespoon dried oregano
1 tablespoon dried thyme
1 teaspoon ground paprika
4 cups chicken broth
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 pounds skinless, boneless chicken breast halves
3 cups butternut squash, chopped
1 (14 ounce) can diced tomatoes
1 cup uncooked quinoa

Steps:

  • Heat olive oil in a stockpot over medium-high heat. Add onion, garlic, oregano, thyme, and paprika and saute until onion begins to brown, 5 to 7 minutes. Pour in chicken broth, salt, and pepper. Bring to a boil. Add chicken and boil until meat is no longer pink, 10 to 15 minutes. Remove chicken to cool.
  • Stir squash, tomatoes, and quinoa into the pot. Reduce heat and let simmer until squash is tender, about 15 minutes. Shred chicken into bite-size pieces and return to the pot to heat through, 5 to 10 minutes. Season with additional salt and pepper if needed.

1 tablespoon butter
1 tablespoon olive oil
1 onion, chopped
4 cups chicken broth
1 butternut squash - peeled, seeded, and cubed
1 (1 inch) piece fresh ginger, peeled and grated
1 teaspoon ground cumin
salt and ground black pepper to taste
2 cups water
1 cup quinoa
1 tablespoon butter

Steps:

  • Heat 1 tablespoon butter and olive oil together in a skillet over medium heat; cook and stir onion until softened, 5 to 10 minutes. Add chicken broth, butternut squash, ginger, and cumin to onion and simmer over medium heat until squash is very soft, about 20 minutes.
  • Pour squash mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Season soup with salt and pepper.
  • Bring salted water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Stir 1 tablespoon butter into cooked quinoa and season with salt. Spoon quinoa into soup.

1 1/2 lb. butternut squash, peeled, seeded & chopped into 1/2-inch pieces
4 cups veggie broth
1 tbsp olive oil
1 large yellow onion, chopped
3-4 carrots chopped
2-3 celery stalks, chopped
1/2 tsp kosher salt
4 cloves garlic, minced
1 1/2 tsp dried oregano
1 can (14 oz) petite diced tomatoes
2/3 cup uncooked quinoa
3/4 cup pitted and quartered kalamata olives
Vegan parm
Freshly ground black pepper, to taste
1/4 cup minced fresh flat-leaf parsley

Steps:

  • Roast butternut squash until very tender. Remove half of the squash pieces. Mash this squash with the back of a fork. Set aside. Roast the remaining squash until desired, I like mine crispy. Big pot heat EVOO med high. Add onion, carrots, celery and cook, stirring occasionally, until onion is starting to turn brown, 8 to 10 minutes. Add minced garlic and oregano. Cook, stirring, for 1 additional minute. Then add tomatoes, mashed butternut squash. Stir to combine. Stir in broth and quinoa. Bring to a simmer, cover and cook until the quinoa turns translucent, about 15 minutes. Stir the olives, butternut squash pieces,and pepper into the stew and simmer, uncovered, to heat, about 5 minutes. Stir in parsley and parm and serve.

What could be nicer than a soulful bowl of soup filled with beautiful vegetables, healthy grains and lean protein? Finding one that is also quick and easy to prepare. Since following the WW Core program for two years, I continue to look for recipes that are share the healthy principles of the program. Found this recipe in Better Homes & Gardens and adapted it to my palette. For Core WW members, this is Core plus 2 points for the nectar in the whole dish.

12 ounces boneless skinless chicken breast halves, cut into 1-inch pieces
1/3 cup shallots or 1/3 cup onion, finely chopped
2 teaspoons olive oil or 2 teaspoons canola oil
2 (14 ounce) cans fat free chicken broth (3 1/2 cups)
1 cup water
3/4 cup apricot nectar (if you can't find apricot, try mango)
1/4 teaspoon ground ginger
1 teaspoon ground cumin
3/4 cup quinoa, rinsed and drained
1 lb butternut squash, peeled, halved, seeded, and cut into 1-inch cubes
1/2 cup red pepper, diced into 3/8 inch pieces
2 small zucchini, halved lengthwise and cut into 1-inch pieces
1 dash cayenne

Steps:

  • In saucepan cook chicken and shallot in hot oil over medium heat 2 to 3 minutes or until shallots are tender, stirring occasionally.
  • Add broth, apricot nectar, water, quinoa, ground ginger and cumin. Bring to a boil. Reduce heat to a simmer, cover and cook for 3 minutes.
  • Add butternut squash, recover and simmer an additional 7 minutes.
  • Add zucchini and red pepper. Cover and cook 10 minutes more or until squash and quinoa are tender.
  • Season to taste with salt, ground black pepper and cayenne to taste.
  • Each serving is about 1 1/2 cups of soup.
