2 tablespoons chopped pecans
1 (10 ounce) package fresh spinach, torn or 12 cups Baby Spinach
1 cucumber, peeled, seeded and cut into 1/4-inch slices
2 teaspoons extra virgin olive oil
1 shallot, finely chopped
1/4 cup cider vinegar
2 tablespoons pure maple syrup
salt & freshly ground black pepper
1/4 cup shredded smoked cheese (such as Gouda) or 1/4 cup cheddar cheese

Steps:

  • Toast pecans in a small dry skillet over low heat, stirring often, until fragrant, 2 to 3 minutes. Transfer to a small bowl and let cool.
  • Toss spinach and cucumber in a salad bowl.
  • Heat oil in a small skillet over medium-low heat. Add shallot and cook, stirring, until softened, about 4 minutes. Add vinegar and maple syrup and bring to a boil. Season with salt and pepper.
  • Immediately pour dressing over the spinach and cucumber. Toss well and sprinkle with cheese and toasted pecans.

Dressing:
1/4 cup olive oil
2 T balsamic vinegar
1/4 cup maple syrup
2 tsp country-style Dijon mustard
1 tsp garlic, minced
1/2 tsp salt
Topping:
5 slices bacon, cut into 1" pieces
1/2 cup pecans, chopped
1 T packed brown sugar
Salad:
8 cups baby spinach
2 cups red cabbage, shredded
1 apple or pear, thinly sliced
1/2 onion, thinly sliced (maybe less)
3/4 cup Cheddar cheese, shredded

Steps:

  • 1. To make dressing, combine all ingredients in a small bowl; beat with a wire whisk until well combined. Refrigerate until serving time. 2. For topping, cook bacon pieces in small skillet over medium-high heat until crisp. Remove from heat; drain fat and immediately add pecans and brown sugar to skillet with bacon. Stir until well mixed. Refrigerate in an airtight container until ready to serve. 3. For salad, place all ingredients in a large bowl. Drizzle half of the dressing over the salad; toss to coat. Sprinkle with topping mixture. Serve with remaining dressing. The salad may be assembled up to a few hours before serving.

1 tablespoon Dijon mustard

1 can (15-1/2 ounces) great northern beans, rinsed and drained
2 packages (6 ounces each) fresh baby spinach
4 green onions, thinly sliced
1 small sweet red pepper, chopped
5 bacon strips, cooked and crumbled

Steps:

  • For dressing, in a small microwave-safe bowl, combine the first six ingredients; set aside. Place beans in another microwave-safe bowl. Microwave, uncovered, for 1-2 minutes or until heated through., In a large salad bowl, combine the spinach, onions, red pepper, bacon and beans. Microwave the dressing, uncovered, for 30-60 seconds or until heated through. Whisk until smooth; drizzle over salad and toss to coat.

1 apple, unpeeled and chopped
1/4 cup cheddar cheese, grated
1/4 cup mozzarella cheese, grated
3/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon vinegar
3/4 cup granulated sugar
3 tablespoons pure maple syrup
1/2 teaspoon freshly chopped parsley

I had this in mind as my ultimate winter salad because all the ingredients seem to scream "winter" and because it's a heartier salad than a lot of my others. Prepping and roasting the squash is a bit of extra work, but it also gives you a more substantial salad, one that could make a light meal on its own.
For the Salad
• 1 small butternut squash, peeled, seeded, and cut into 1 1/2-inch cubes
• Extra-virgin olive oil
• Salt
• 1 cup pecan halves
• 1 small leek
• 10 ounces spinach, rinsed, dried, and large stems removed
For the Dressing
• 1/4 cup pure maple syrup
• 1/4 cup cider vinegar
• 1/3 cup olive oil
• 2 teaspoons Dijon mustard
• 1 shallot, minced
• 1/2 teaspoon salt
• 15 to 20 grinds fresh black pepper

Steps:

  • Directions Preheat the oven to 400°F Toss the squash cubes on a baking sheet with olive oil and salt. Roast 25 minutes, until tender, tossing every 10 minutes or so. Remove the squash from the oven and allow to cool fully. Spread the pecans out on another baking sheet and toast in the oven for 5 minutes. Remove the green tops and bottom root from the leek. Cut the remaining portion of the leek in half lengthwise and rinse under cold water to wash away any grit inside the leek. Cut each half in half crosswise, then thinly cut vertically to create leek matchsticks. Make the dressing by shaking together all the dressing ingredients in a scalable container or whisk together in a bowl. Toss the spinach with the dressing, divide the spinach between serving plates, and top with the squash pieces. Scatter the leek matchsticks around the salad, then finish with the toasted pecans.

Steps:

  • Place 3/4 cup spinach on each of 12 individual plates. Top each with 1/4 cup mushrooms and 1 teaspoons pinenuts.
  • Beat dressing, mayo and syrup with wire whisk until well blended.
  • Drizzle 1 tablespoon of the dressing over each salad just before serving.
