VANILLA CITRUS CIDER

Yield 10 servings (3/4 cup each).

Number Of Ingredients 8

8 cups apple cider or juice
1/4 cup packed brown sugar
1/4 cup thawed orange juice concentrate
1/8 teaspoon salt
3 cinnamon sticks (3 inches)
1 teaspoon whole cloves
1/4 teaspoon vanilla extract
Orange slices, optional

Steps:

  • In a large saucepan, combine apple cider, brown sugar, orange juice concentrate and salt. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with a string. Add to pan., Bring to a boil. Reduce heat; simmer, covered, 1 hour to allow flavors to blend. Discard spice bag. Stir in vanilla. If desired, serve with orange slices.

1 quart unsweetened apple juice
1/2 cup water
1/2 cup orange juice
1/4 cup sugar
1/4 cup lemon juice
2 cinnamon sticks (3 inches)
1 tablespoon brown sugar
1.4 teaspoons whole cloves
Additional cinnamon sticks, optional

Steps:

  • In a large saucepan, combine the first eight ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Strain, discarding cinnamon sticks and cloves. Serve warm; garnish with additional cinnamon sticks if desired.

4 medium lemons, sliced
5 medium oranges, sliced
3 cinnamon sticks (3 inch)
2 teaspoons allspice
3 1/2 quarts apple cider
1 cup sugar

Steps:

  • In a large saucepan, bring the water, lemons, oranges and spices to a boil.
  • Reduce the heat, cover and simmer this mixture for about an hour.
  • Strain and discard the fruit and spices.
  • Transfer the liquid to a large container with a warmer (such as a crockpot).
  • Stir in the cider and sugar and heat thoroughly.
  • Reduce the heat in your crockpot to low to keep the cider warm while serving.

1/2 teaspoon orange extract
1/2 teaspoon lemon extract

2 teaspoons whole cloves
1 teaspoon whole allspice

Steps:

  • In a Dutch oven, combine the first five ingredients. Place the cinnamon sticks, cloves and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to the pan. Cook, uncovered, over medium heat for 10-15 minutes or until flavors are blended (do not boil). Discard spice bag.
