This is a lite and healthy side. In Africa raw vegetables are popular in salads this recipe does call to lightly steam or you can quick blanch them for 4 minutes. Toasting the spices in a skillet brings out their sweet and hot flavors. I made this using 8 cup of carrots and cauliflower combined and just double the dressing. My spices are very fresh and intense so I was able to use less then called for. Adjust to taste and freshness of spices. Th

2 cups cauliflower, small florets
1/2 cup carrot, diagonally sliced (1/4-inch)
1/8 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cumin
1/8 teaspoon ground coriander
1/8 teaspoon ground nutmeg
1/8 teaspoon crushed red pepper flakes
1/3 cup low-fat sour cream
2 teaspoons cider vinegar
1/2 teaspoon honey or 1/2 teaspoon sugar
2 tablespoons sliced green onions

Steps:

  • Steam first 2 ingredients, covered, 2 minutes. Rinse mixture under cold water; drain well.
  • Combine salt and next 5 ingredients (salt through crushed red pepper) in a small skillet; cook over medium heat 2 minutes or until lightly aromatic, stirring constantly.
  • Add vinegar while of the heat.
  • Combine spice mixture, sour cream, and honey in a bowl; stir well.
  • Add cauliflower mixture; toss well to coat.
  • Chill for 1 hour.
  • Top with green onions just before serving.

A cheap, healthy and easy salad. For a variation, try using curry powder in place of the cumin or adding a handful of raisins (soaked in hot water first).

2 medium carrots, peeled and coarsely grated
1/2 orange, juiced
1/2 teaspoon ground cumin
1 pinch sugar
salt and pepper
1 -2 teaspoon olive oil
fresh coriander (optional)
fresh parsley (optional)

Steps:

  • Mix the grated carrots with the orange juice and cumin.
  • Season with sugar, salt and pepper.
  • Drizzle with the olive oil and sprinkle over a couple tablespoons each of chopped coriander and parsley, if desired.

North African Spiced Carrot and Parsnip Salad image

1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/8 teaspoon ground ginger
3 pieces large carrots
3 pieces large parsnips
1/4 cup fresh lemon juice
1 tablespoon honey
3/4 teaspoon harissa
1 piece salt and freshly ground pepper to taste
6 tablespoons EVOO
1/2 cup shelled pistachio nuts, toasted and coarsely chopped
2/3 cup raisins
1/4 cup chopped fresh cilantro or mint

Steps:

  • In a small, heavy fry pan over medium low heat, toast the cinnamon, cumin, coriander and ginger, stirring constantly, until fragrant , about 2 minutes. Remove from the heat and let cool to room temp
  • Peel carrots and parsnips and shred them
  • n a small nonfactive bowl, whisk together the toasted spices, lemon juice, honey, harissa and 1/2 tsp salt. Slowly whisk in the olive oil until well blended to make a dressing. Taste and adjust the seasonings.
  • In a bowl, stir together the pistachios and a pinch of slat. Add the carrots and parsnips, raisins, 1/2 tsp salt, several grinds of pepper and the dressing and toss wll. Taste and adjusting the seasonings. Transfer the salad to a platter or serving bowl, sprinkle with the cilantro and serve immediately.

This is based on a recipe by chef, Jill Dupleix. It's quick and easy-to-make, and has warm flavours from the cumin and cinnamon. Great colour too!

450 g carrots (about 1 pound)
1 large orange
1/8-1/4 cup cilantro leaf (coriander)
1/8-1/4 cup mint leaf
2 tablespoons orange juice
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 teaspoon icing sugar (confectioners)
sea salt
fresh ground black pepper

Steps:

  • Peel the carrots and grate them coarsely.
  • Peel the orange with a knife, removing all the white pith. Cut it crosswise into 1 cm thick slices, then into small segments.
  • Finely chop the coriander (cilantro) and mint leaves.
  • Put the grated carrot, orange segments in a large bowl.
  • Make dressing and pour over carrot mixture. Sprinkle with herb leaves. Toss lightly and serve.

1 pound carrots with fresh green tops if available
1/3 cup currants
1/2 cup chopped pistachios, toasted
1 tablespoon coriander seed, toasted
2 teaspoons anise seed, toasted
1/4 teaspoon cinnamon
1 tablespoon honey
1/2 cup extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon kosher salt, divided
1/2 cup loosely packed picked fresh dill
1/2 cup loosely packed fresh cilantro leaves

Steps:

  • Trim carrot tops, keeping 1/2-inch of the green tops attached if they are bright green and fresh. Peel and thinly slice the carrots lengthwise. Bring a large pot of salted water to a boil and blanch the carrots for about 1 minute until they are slightly cooked but still a bit crunchy. Shock in an ice bath and drain when cool. Pat dry with paper towels.
  • Place currants in a medium bowl and pour hot water over to submerge completely. Let soak 10 minutes until plump, drain and discard water.
  • Place coriander, anise, cinnamon, honey, oil, lemon, and 1/2 teaspoon salt in a blender and blend until slightly chunky but seeds are not intact.
  • To serve, toss carrots, currants, pistachios and dressing together in a large bowl. Be sure to coat the carrots with the dressing. Add herbs and carefully toss to combine. Serve immediately.

4 cups grated carrots (4 large)
2 green onions
1/4 c. olive oil
1/4 c. lemon juice
2 T chopped fresh cilantro
2 T honey
1 t ground cumin
1/2 t salt
1 lb pork tenderloin (2 tenderloins if extra adults are joining us, in which case all marinade ingredients should be doubled)
1/2 t sweet paprika
1/4 t each cinnamon and pepper

Steps:

  • In a large bowl, combine carrots, green onions, 2 T olive oil, 3 T lemon juice, cilantro, 1 T honey, 1/2 t cumin and 1/4 t salt. Set salad aside. Cut pork into 1 inch thick medallions, set aside. Reserve 1 T of the remaining oil. \in a bowl,. combine paprika, cinnamon, pepper and remainisn oil, lemon juice, honey, cumin and salt. Toss over pork, gently rubbing into meat. In a cast iron or heavy skillet, heat reserved oil over medium high heat; cook porl until juices run clear when pork is pierced and just a hint of pink remains inside, 3-4 minutes (or more!) Serve with carrot salad

1 pound fresh carrots (about 12)
1 large garlic clove, peeled but left whole
Salt to taste
1/2 cup fresh lemon juice
1/8 teaspoon cinnamon
1/2 teaspoon cumin
1/2 teaspoon paprika
1/8 teaspoon cayenne
1/4 cup olive oil
Chopped parsley for garnish

Steps:

  • Trim and scrape the carrots, and place them in a saucepan.
  • Cover the carrots with water, and add the garlic and salt. Bring to a boil, and cook for 10 minutes. Drain. Then, cut the carrots into 1/2-inch rounds (there should be about 2 1/2 cups).
  • In a bowl, combine the lemon juice, cinnamon, cumin, paprika and cayenne. Blend well. Add the carrots and half the oil. Stir well.
  • Spoon out individual portions, and sprinkle the remaining oil over them evenly. Garnish with parsley, and serve.

This salad is a Central Asian classic; it's usually served as a light, fresh side to richer grilled meat. We loved the way the carrots' sweetness brought out the cabernet's more herbaceous side.

4 carrots, shredded
1 clove garlic, minced
2 teaspoons ground coriander
1/4 teaspoon paprika
Freshly ground pepper
1 tablespoon white wine vinegar
Vegetable oil, for sauteing
1 small white onion, diced
1/4 cup fresh cilantro leaves
Greek yogurt, for serving
24 pita chips, for serving

Steps:

  • 1. Toss together the carrots, garlic, coriander, paprika, 1/4 teaspoon pepper, and vinegar in a bowl.
  • 2. Heat a splash of oil in a hot pan and add the onions. Cook until golden, about 5 minutes. Pour the onions over the carrots and toss to coat. Cover and refrigerate 2 hours and up to overnight.
  • 3. Just before serving, add the cilantro leaves to the carrot mixture. Spread the Greek yogurt on the pita chips and serve alongside the carrot salad.

PUY LENTIL, SPICED ROAST CARROT & FETA SALAD



Puy lentil, spiced roast carrot & feta salad image

High in fibre, a good source of iron, vitamin C and it counts as 3 of your 5-a-day - what's not to love about this superhealthy salad?

2 tbsp olive oil
1 tbsp cumin seeds
500g carrots , peeled, halved and cut into batons
1 tbsp clear honey
250g pouch cooked Puy lentils (or canned, drained and rinsed)
1 red onion , finely sliced
½ lemon , juiced
large handful mint leaves, roughly chopped
100g lamb's lettuce
85g feta cheese , crumbled

Steps:

  • Heat the oven to 200C/180C fan/gas 6. In a shallow roasting tin, toss together half the oil, the cumin, carrots and some seasoning. Roast for 25 mins, turning halfway through cooking. Drizzle over the honey, stir and roast for 5 mins more.
  • Meanwhile, gently heat the lentils with the onion, lemon juice, remaining oil and some salt and pepper. Allow to cool slightly while the carrots finish cooking.
  • Toss the dressed lentils with mint and lamb's lettuce. Lay warm spiced carrots on top and scatter with feta.
