These Greek hummus phyllo bits are no bake and take less than 10 minutes to make. A quick and easy appetizer for any occasion.

15 phyllo cups (thawed)
1/2 cup hummus
1/4 cup cherry tomatoes (diced)
1 tablespoon black olives (sliced)
1 tablespoon feta cheese (crumbled)
1/2 tablespoon parsley (chopped)

Steps:

  • Scoop a spoonful of hummus into each phyllo cup.
  • Top with tomatoes, black olives, feta cheese and parsley.
  • Serve immediately!

Keep pita bread and store-bought hummus on hand to make an easy appetizer in 15 minutes.

2 pita (pocket) breads (6 inch)
2/3 cup roasted red pepper hummus (from 7-oz container)
1/3 English (seedless) cucumber (about 4 inches)
1/2 teaspoon smoked Spanish paprika
16 fresh dill weed sprigs

Steps:

  • Cut each pita bread into 8 wedges. Spread about 1 teaspoon hummus on each wedge.
  • Score cucumber peel lengthwise with tines of fork. Cut cucumber in half lengthwise. Cut each half crosswise into 16 thin slices. Place 2 half-slices cucumber on hummus on each bite.
  • Sprinkle with paprika. Garnish with dill weed.

Chicory & hummus bites image

These chicory and hummus bites couldn't be easier to make for a buffet

2 large heads of chicory
1 carrot
175g tub hummus
16-18 black olives , preferably pitted

Steps:

  • Up to 2 hrs ahead, separate the chicory into boat-shaped leaves and trim the ends so that they are all roughly the same size. You will probably get about eight or nine decent-sized leaves from each head of chicory. As the leaves get closer to the heart of the chicory, they will be too small to use for canapés, so save them to add to wintry salads.
  • Peel the carrot, then keep peeling off strips until you have as many as the number of chicory leaves.
  • Drop spoonfuls of hummus onto the chicory, then add a carrot curl and an olive to each. They'll keep in the fridge for about 2 hours.
