Yield Makes 4 servings

Number Of Ingredients 13

6 tablespoons extra-virgin olive oil
4 (5- to 6-ounce) tuna steaks
Salt and freshly ground black pepper
1 large onion, sliced (about 1 cup)
2 garlic cloves, minced
3 tablespoons salted capers, soaked in water for 10 minutes and drained
3 tablespoons minced pitted green olives
1/4 cup raisins
5 plum tomatoes, peeled, seeded, and chopped
1 cup fish stock or water, as needed
2 tablespoons fresh flat-leaf parsley, coarsely chopped
4 to 5 fresh basil leaves, torn
1/3 cup pine nuts, toasted

Steps:

  • 1. In a medium skillet over moderately high heat, warm the oil. Season the tuna with salt and pepper and sauté, turning once, until golden on both sides, 3 to 4 minutes total. Remove the tuna and set aside. Do not clean the pan.
  • 2. In the same pan over low heat, sauté the onion, stirring frequently, until just tender, about 1 minute. Add the garlic, capers, olives, raisins, and tomatoes, and continue cooking, stirring, until heated through, about 2 minutes. If the tomatoes don't release much juice, add the fish stock or water to give the sauce some body.
  • 3. Return the tuna to the pan and cover it with a tight-fitting lid. Cook over moderate heat until the tuna reaches the desired doneness, 2 to 3 minutes for medium.
  • 4. Add the parsley and basil and stir to incorporate, then season to taste with salt and pepper. Serve the fish with the sauce spooned over the top; garnish with pine nuts.

SICILIAN RICE SALAD WITH SEARED TUNA

Sicilian Rice Salad with Seared Tuna image

The combination of fresh seafood with fennel, capers, and tomatoes is typical of Sicilian dishes.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 14

1 1/2 cups uncooked basmati rice
3 lemons
1 pint cherry or grape tomatoes, cut in half
6 tablespoons finely chopped fresh flat-leaf parsley
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 yellow bell pepper, seeded and cut into 1/4-inch dice
1 red onion, peeled and finely diced
1 small fennel bulb, core removed, finely diced
3 tablespoons capers, drained
2 tablespoons marjoram leaves
2 one-inch-thick tuna steaks, (1 1/2 pounds)
Olive-oil cooking spray

Steps:

  • Place rice and 2 1/4 cups water in a medium saucepan, and bring the liquid to a boil over medium-high heat. Cover, reduce to a simmer, and cook until rice is tender and all of the liquid has been absorbed, about 10 minutes. Remove the pan from heat. Using a fork, separate the grains of rice, and transfer rice to a large bowl. Grate 1 tablespoon zest from the lemons, and add the zest to rice. Set the rice aside.
  • Squeeze the lemons, yielding 1/3 cup strained juice. Place 12 tomato halves, 1 tablespoon chopped parsley, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a blender; blend until liquefied. With blender running, add olive oil in a slow, steady stream to the tomato dressing.
  • Add yellow bell pepper, onion, fennel, the remaining tomato halves, capers, the remaining 5 tablespoons parsley, marjoram, and tomato dressing to rice; toss to combine.
  • Coat a saute pan with cooking spray, and set over medium-high heat. Cut the tuna steaks into 1-inch-wide strips, and season with the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper. Place the tuna strips in hot pan, and sear on all sides until browned and medium rare, about 1 minute per side. Remove the pan from heat, and cut each strip into 1/2-inch-thick slices. Divide the rice salad and the tuna slices among six bowls, and serve immediately.

SICILIAN TUNA STEAKS IN ONION SAUCE

Sicilian Tuna Steaks in Onion Sauce image

I found this recipe somewhere on the 'net, and it is reported to be a classic dish of the islands off the western coast of Sicily. The onions have a decidedly sweet/sour taste which we love, and that would be super as well on a swordfish steak.

Categories     Tuna

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

1/4 lb onion, as thinly sliced as possible
3 tablespoons olive oil
1 tablespoon butter
1/4 teaspoon salt
1/4 cup red wine vinegar
1 teaspoon sugar
1 dash cayenne pepper or 1 dash Tabasco sauce
4 tuna steaks
3 tablespoons olive oil
2 bay leaves
salt and pepper
1/4 cup dry white wine

Steps:

  • SAUCE:.
  • Saute the onions in olive oil and butter over medium heat in a large skillet.
  • Add salt and cook, stirring until they are limp.
  • Stir in vinegar and sugar, and cook over a slightly lower heat until the vinegar has evaporated.
  • I caution you, the escaping steam will take your breath away so stay well away from the skillet when possible, but do perservere!
  • When vinegar has evaporated, add cayenne or tabasco, mix well and remove from heat.
  • The sauce should still retain the texture of the onions and yet retain enough moisture to be spoonable.
  • Cover and keep warm.
  • TUNA:.
  • Over medium heat, add olive oil and bay leaves to a skillet large enough to hold tuna steaks in one layer.
  • When the oil is warm, not hot, add tuna and salt and pepper to taste.
  • Saute 2-3 minutes per side, but this will depend on thickness of steaks and your doneness preference-- we like ours on the rare side.
  • Raise heat, add wine, and cover pan a second or two, just until the wine has stopped steaming.
  • Uncover skillet, cook 30 seconds longer, then transfer tuna to plates.
  • Spoon the onions and sauce over the top of each, and serve.

SICILIAN-INSPIRED TUNA WITH SPICY COUSCOUS

SICILIAN-INSPIRED TUNA WITH SPICY COUSCOUS image

Categories     Fish     Sauté     Quick & Easy

Yield Makes 2 main-course servings

Number Of Ingredients 14

2 fresh fillets of tuna, approximately 6 ounces each and 1 1/2 inches thick
salt and freshly ground pepper to taste
2 tablespoons extra-virgin olive oil, separated
2 cloves garlic, peeled and smashed
1/2 teaspoon dried red chili flakes
1 8-ounce can of diced tomatoes with jalapenos (drained, liquid reserved)
3 scallions, roughly chopped
1 dozen kalamata olives, roughly chopped
1 teaspoon lemon zest, grated directly into pan (saves time!)
1 1/2 cups water
1 1/2 cups Israeli-style couscous
1 tablespoon mint or parsley, finely chopped (optional)
2 ounces feta cheese, crumbled (optional)
2 teaspoons pine nutes (optional)

Steps:

  • Over medium-high heat, add 1 tablespoon of oil in a 12-inch skillet with sides at least 2 inches high. Heat until oil is hot enough to sizzle a drop of water. Salt and pepper tuna fillets, and sear in the oil, 3 minutes per side. The fish will still be red in the center. Set fillets aside, loosely tented with tin foil, and from residual heat they will cook until the centers are pink. Turn heat to medium, add remaining oil, garlic, and chili, and tomatoes, and saute 2 minutes to let flavors mix. Next add scallions, olives, and lemon zest, and toss briefly. Pour reserved tomato juice and water into pan to deglaze, stirring and scraping up bits with a wooden or nylon spatula. Add the Israeli couscous, stir to mix, cover, and simmer over medium-low heat for 10 minutes. After this time, the couscous will be slightly al dente, and all but approximately 1/2 cup of the liquid will be absorbed. To serve, stir the remaining liquid into the couscous, divide it between two plates, top each with a tuna fillet. Garnish with mint or parsley, feta, and pine nuts if desired.
