CALAMARI MARINARA

Calamari has an unfair reputation for being tricky to work with and that it's rubbery when cooked. Here's the secret: cook it in 45 seconds or 45 minutes--very quickly or a long slow simmer. For this marinara dish, I use the long simmer method.

2 tablespoons olive oil
1 yellow onion, sliced thin
1 serrano chile pepper, sliced thin
3 garlic cloves, crushed or minced
1 anchovy fillet
½ teaspoon red pepper flakes
½ teaspoon kosher salt, plus more as needed
½ cup dry white wine
1 cup clam juice
6 cups crushed or pureed Italian plum tomatoes
½ teaspoon dried oregano
2 pounds frozen calamari (tubes and tentacles), thawed, sliced into 1/2-inch pieces
¼ cup freshly chopped Italian parsley
1 tablespoon Freshly grated Parmigiano-Reggiano cheese
1 (16 ounce) package dry pasta

Steps:

  • Drizzle olive oil into saucepan (not over heat). Add onions, Serrano pepper, garlic, anchovy filet, red pepper flakes, and salt. Place pot over medium-high heat. When onions start to sizzle after a minute or so, stir and cook until onions and garlic just start to turn golden, 3 or 4 minutes. Stir in wine.
  • Cook until wine is reduced by about half, 3 to 5 minutes. Add clam juice, tomatoes, and oregano. Bring to a simmer over medium-high heat. When sauce begins to bubble, reduce heat to medium-low. Simmer gently for about 15 minutes.
  • Transfer calamari to sauce pot; stir gently. Simmer until calamari are tender, 35 to 45 minutes. Remove from heat. Stir in parsley.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain.
  • Stir some sauce into the hot, drained pasta. Serve in warm bowls topped with more marinara sauce and grated cheese.

This awesome shrimp marinade recipe makes the best seared or grilled shrimp, with a hugely flavorful combination of sweet and spicy. Get your grills ready!

¼ cup olive oil
1 tablespoon honey (or you can use brown sugar)
2 cloves garlic (minced)
1 tablespoon fresh parsley (chopped)
1 teaspoon smoked paprika ((try an extra pinch or two of ghost pepper powder for some great spiciness!))
1 teaspoon lime zest
½ teaspoon crushed red pepper flakes (or more as desired - optional, for spicier marinade)
Salt and black pepper to taste (1/4 teaspoon each is usually good)
Hot Sauce to taste (optional)
1 pound shrimp (peeled and deveined)

Steps:

  • Whisk together the olive oil, honey, garlic, parsley, paprika, lime zest, red pepper flakes and salt and pepper in a small bowl. Reserve a few tablespoons now if you'd like to use some as a finishing sauce.
  • Place the shrimp in a large zip-lock bag and pour the marinade over them. Seal the bag and refrigerate at least 15 to 20 minutes, or for 1 hour before cooking.
  • When ready to cook, drain the marinade and discard it.
  • Grill or saute the shrimp for 2-3 minutes per side, or until pink and cooked through. Transfer to a serving platter.
  • Squeeze on a bit of fresh lime juice to finish.

1/4 c each chinese black vinegar and mirin
1 tsp toasted sesame oil
2 Tbsp fresh minced garlic and grated ginger

1/4 c cornstarch

1/2 ounce garlic, chopped
1/2 ounce shallots, chopped
4 Manila clams
5 black mussels
2 ounces rock shrimp
1/2 ounce white wine
3 ounces spicy marinara sauce
1 ounce calamari
6 ounces linguini, cooked
1 ounce fresh basil
1 tablespoon bread crumbs

Steps:

  • In a large saute pan, heat the olive oil. Add garlic and shallots, and saute until brown. Add the clams, mussels, and rock shrimp. When shells start to open, add the white wine. Reduce to half its volume, then add the marinara and calamari. Heat up the pasta (in salted boiling water) then add to the seafood. Allow pasta to cook in the sauce for a minute, then toss in the basil and bread crumbs. Serve in a deep pasta bowl immediately.

SHRIMP ALLA MARINARA

This recipe quickly turns a batch of homemade marinara sauce into dinner. You can serve it right out of the pan, with crusty bread and a green vegetable. Or, remove the shrimp and toss the sauce with a pound of steaming-hot spaghetti or another long, thin pasta, then put them back together in serving bowls, placing the shrimp on top. Don't attempt to toss the sauce, shrimp, and pasta together -- the lively action needed to coat the pasta will break down the shrimp. You want them to be crisp and savory.

8 tablespoons extra-virgin olive oil
8 whole garlic cloves, peeled and lightly crushed
2 1/2 pounds large shrimp (about 30), peeled and deveined
Salt
Marinara sauce (see recipe)
8 fresh basil leaves, torn into small pieces (optional)
2 tablespoons minced fresh Italian parsley

Steps:

  • Heat 4 tablespoons oil in a large skillet over medium heat. Add 4 garlic cloves and cook just until golden and sizzling. Add half the shrimp, placing them in one layer in the pan. (If you crowd the shrimp, they will steam instead of fry.) Sprinkle with salt.
  • Cook, turning once, just until lightly golden and pink around the edges, about 4 minutes total. With a slotted spoon, transfer the shrimp to a plate. Discard garlic cloves. Repeat with remaining oil, garlic and shrimp.
  • When all the shrimp are cooked, pour the sauce into the empty skillet, and bring to a lively simmer, stirring to scrape the bottom of the pan. Taste for salt and add more if needed.
  • Stir in the shrimp, basil (if using) and parsley, and cook just until the shrimp are heated through. Serve immediately.
