This is a very simple shrimp and pasta dish that I love. I recommend using fresh basil because the flavor is better.

1 lb unpeeled medium shrimp
1 (9 ounce) package fresh tortellini, with cheese filling uncooked
1/3 cup butter or 1/3 cup margarine
1 shallot, minced
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
1/2 cup grated parmesan cheese

Steps:

  • Peel/devein shrimp and set aside.
  • Cook the tortellini by following the package directions; drain and set aside.
  • In a big skillet over medium-high heat, melt the butter.
  • Add in the shrimp, shallot, and basil.
  • Saute/stir for about 5 minutes.
  • Add tortellini and parmesan cheese; toss; season with salt and pepper if desired, then serve.

6 tablespoons lemon juice, freshly squeezed
1/2 cup olive oil
salt and freshly ground pepper
3/4 lb shrimp, cooked, peeled and halved
1 (22 ounce) package cheese tortellini or 1 (22 ounce) package other stuffed pasta, cooked according to package directions, rinsed and drained
2 cups canned artichoke hearts, drained and quartered
1 (12 ounce) jar roasted red peppers, drained and thinly sliced
1/2 cup black olives, pitted and sliced
1 cup fresh basil, parsley (or combination) or 1 cup dill, chopped (or combination)
1/2 small red onion, thinly sliced

Steps:

  • In a small bowl, whisk together lemon juice, olive oil, salt and pepper.
  • In a large bowl, combine all other ingredients. Add dressing and toss.
  • Serve chilled or at room temperature.

1 pint heavy cream
1/2 cup butter
4 ounces cream cheese
1 leek, thinly sliced
3/4 cup parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
salt and pepper, to taste
1 lb frozen shrimp (I prefer using salad shrimp)
1 lb cheese tortellini pasta, cooked and drained
garnish with parsley or chives, for decoration

Steps:

  • Cook tortellini as directed on package. Meanwhile, thaw the frozen shrimp in a colander using cold running water. Remove the tails. If using uncooked shrimp, devein and remove tails and then sauté in a teaspoon of the butter. Remove shrimp and set aside. Do not overcook. In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Leeks, Parmesan Cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat. Toss the tortellini with the shrimp and sauce, coating well. Add the parsley or chives and serve.

2 cups fresh small broccoli florets (or use cauliflower)
1 small onion (finely chopped, about 1/3 cup) (optional)

1 lb cooked small shrimp (can use more if desired)
1 (16 ounce) bottle golden caesar salad dressing
2 cups cherry tomatoes, halved

Steps:

  • Cook the tortellini according to package directions; drain well under cold water then place in a large bowl.
  • Add in broccoli, onion (if using) artichokes, olives, cooked shrimp and dressing; toss well to combine.

36 fresh cheese tortellini
1 tablespoon olive oil
1 tablespoon minced garlic
24 large cooked shrimp
12 skewers
12 cherry tomatoes
1 (16 ounce) container sour cream
1 (1 ounce) package dry ranch dressing mix (such as Hidden Valley Ranch®)

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook tortellini in the boiling water until tender yet firm to the bite, 2 to 3 minutes; drain.
  • Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant and tender, 1 to 2 minutes. Add shrimp and cook until heated through, 2 to 3 minutes. Mix tortellini into shrimp mixture, remove skillet from heat, and cool until easily handled.
  • Thread tortellini, shrimp, tortellini, shrimp, and tortellini onto a skewer, ending with a tomato. Repeat with remaining ingredients.

My sister frequently makes this for summertime gatherings. There is never a bite left! So cool and fresh! The original recipe calls for Pesto tortellini, but you may use any kind you like. It also calls for fresh snowpea pods, but frozen may be substituted.

2 cups tortellini
1 lb large shrimp, cooked and chopped
1/2 lb peapods, fresh
1/4 cup parmesan cheese, grated
4 green onions, chopped including green tops

1/2 cup mayonnaise
romaine lettuce
fresh basil, chopped

Steps:

  • Cook tortellini as per package directions until al dente.
  • Blanch peapods in boiling water for 2 minutes. Drain and rinse with cold water.
  • Combine tortellini, shrimp, snowpea pods, cheese, green onions, salt, pepper and mayonnaise. Toss well.
  • Chill at least 1 hour.
  • Line bowl with Romaine lettuce leaves, pour in salad and garnish heavily with chopped fresh basil.

8 1/2 ounces Ricotta spinach tortellini
2 pounds jumbo shrimp, peeled and deveined
1/4 small red onion, sliced thin
2 stalks celery, sliced
1 ounces capers
1/4 cup sliced black olives
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
2 tablespoons olive oil
1 clove garlic, minced
1/2 tablespoon red wine vinegar
1 juice of one fresh lemon
3/4 teaspoon kosher salt
1 dashes fresh black pepper, to taste

Steps:

  • In a large pot of salted boiling water, cook tortellini according to package directions. Using a large mesh spoon, transfer the pasta to a colander and rinse under cold water.
  • Return water to a boil and add the shrimp, poach for 2 to 3 minutes, until they are just pink, rinse under cold water to stop them from cooking, drain and cut into large pieces.
  • In a small bowl whisk together the dressing ingredients.
  • In a large bowl, mix the onion, celery, capers and olives and pour the dressing over; mix well.
  • Add the shrimp, tortellini and remaining ingredients. Adjust salt and pepper to taste and chill before serving.

Pesto Dressing (Recipe follows)
1 pkg (9 oz) fresh tortellini or 1 pkg (7 to 8oz) dry tortellini
1 med-size red bell pepper (about 5 oz)seeded and cut into thin bite-size strips
6 ounces tiny cooked and shelled shrimp

Steps:

  • Prepare Pesto dressing and set aside. In a 4 to 5 qt pan, cook tortellini in 3 quarts boiling water just until tender to bite (4 to 6 min for fresh tortellini, 15 to 20 mins for dry); or cook according to package directions. Drain, rinse with cold water; and drain well again. In a large bowl, lightly mix the tortellini, Pesto Dressing, bell pepper strips, and shrimp. Cover mixture and refrigerate for at least 1 hour or up 8 hours. Pesto Dressing In a blender or food processor, combine 1 cup lightly packed fresh basil leaves (or 3/4 cup fresh parsley leaves and 2 TB dry basil); 1 large clove garlic coarsely chopped; 1/2 cup grated Parmesan cheese; 2-1/2 TB red wine vinegar; and 1/2 cup olive oil. Whir until pureed.

90 tri-color cheese tortellini
30 cherry tomatoes
1 clove garlic, minced finely
2 tablespoons olive oil
30 6 inch wooden skewers
4 cloves garlic, unpeeled
1 cup mayonnaise
1/4 cup parmesan cheese
1/4 cup milk
1/2 teaspoon black pepper

Steps:

  • Cook tortellini according to package instructions.
  • Heat the olive oil in a nonstick frying pan, saute the minced garlic for several minutes until tender.
  • Add the shrimp and heat through.
  • Drain the tortellini and add to the shrimp.
  • Mix throughly and remove from heat.
  • When cool enough to handle, thread the skewers with a tortellini, a shrimp, a tortellini, a shrimp, a tortellini, a cherry tomato.
  • Arrange on serving platter and serve with dip.
  • Dip: Heat skillet over medium heat, add the unpeeled garlic and cook (turning) until skin is browned on all sides and garlic is softened, about 7 minutes.
  • Cool the garlic then peel and mash.
  • Mix the mashed garlic, mayonnaise, parmesan, pesto, milk and pepper throughly and put in serving dish.

Creamed Spinach Tortellini
1 lb. of stuffed tortellini, cooked & drained
3 T of butter
2 T of flour
1 1/2 cups of half & half
1/2 t of salt
1/2 t of roasted garlic powder
1/2 t of fresh ground black pepper
1/4 t of nutmeg
1 cup of parmesan cheese
4 oz. of room temperature cream cheese
1/2 cup of smoked gouda cheese
16 oz, of frozen spinach, thawed and drained
Pinch of red pepper flakes
Old Bay shrimp
1 lb. jumbo shrimp, cleaned
1 T Old Bay Seasoning
1/2 t of salt
1 1/2 T olive oil

Steps:

  • In a saucepan, over medium heat, melt the butter. When the butter is melted, whisk in the flour and cook for about 90 seconds until the flour taste has cooked out. Then, add in the half and half and stir well to combine. It's a good idea to make sure the heat is on high at this point and as soon as it starts to thicken, lower the heat back to medium. Add in all of the other ingredients except the tortellini and stir occasionally to combine well and to prevent from sticking. Once the sauce is thick, toss in the pasta and serve. Toss the shrimp together with the olive oil, salt, and Old Bay. Get a skillet hot and then sauté the shrimp on both sides until they're cooked through. Serve immediately.

4-6 Med shrimp per person, peeled. You can use thawed frozen shrimp or fresh.
1 sm clove garlic per person, chopped.
1-2 Tbs chopped sundried or roasted tomatoes per person.
1/4 - 1/3 pound spinach per person, roughly chopped and rinsed (water should adhere to the leaves). You can use frozen spinach or fresh.
1/8 - 1/4 tsp Paul Prudhomme's Seafood magic seasoning per person.
1 Tbs grated Romano cheese per person.
1 -2 Tbs extra virgin olive oil.
1/2 cup cooked cheese tortellini per person.

Steps:

  • Heat olive oil in saute pan. Saute tomatoes and garlic on medium/low heat 5 minutes until tomatoes are soft. Add shrimp and seasoning and saute 1-2 minutes per side until shrimp begins to turn opaque. Add spinach and cover pan. Cook, stirring occasionally, until spinach is wilted. Add cooked tortellini and mix. Cover and simmer on low 3-5 minutes until flavors blend. Uncover pan, mix in Romano cheese. Serve in warm bowls.

1 lb tortellini or 1 lb cheese ravioli (fresh or frozen)
1 bunch fresh spinach, thoroughly washed,stemmed,and very coarsely chopped
1 lb thin fresh asparagus, trimmed and cut into 2 inch lengths
1 cup lightly packed chopped fresh parsley leaves
1/2 cup chopped fresh basil leaf
2 tablespoons chopped fresh oregano
3 -4 scallions, sliced lengthwise and chopped (green onions)
1/2 cup white wine
1/2 cup dry sherry
2 teaspoons chicken bouillon granules or 2 chicken bouillon cubes
3 tablespoons cornstarch
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 tablespoon minced fresh garlic
1/2 cup finely chopped onion
1/2 lb fresh mushrooms, cleaned and thinly sliced
2 medium portabella mushrooms, wiped clean,stemmed,and cut into 1/4 inch wide slices or 1/2 lb cremini mushroom, cleaned and quartered
1/2 teaspoon fresh ground black pepper
1/2 red bell pepper, seeded and cut into 1/4 x 1 inch slices
4 -5 roma tomatoes, seeded and coarsely chopped
1 cup heavy cream
1/4 cup freshly grated parmesan cheese, plus additional for passing if esired
1/2 cup crumbled gorgonzola or 1/2 cup feta cheese
1/2 cup coarsely chopped walnuts
salt & freshly ground black pepper

Steps:

  • Do all of your ingredient preparation and set out everything before you ever turn on the stove for final preparation.
  • This recipe is really just an Italian stir-fry.
  • Just about everything can be done up to a day ahead and refrigerated until you are ready to cook.
  • Bring all ingredients to room temperature before starting to cook.
  • Cook tortellini according to package directions.
  • Drain, toss with a little olive oil to prevent sticking, and spread on paper towels to cool.
  • Very lightly steam spinach until slightly wilted but still bright green in color, about 1-2 minutes, rinse under cold water to stop cooking, and drain thoroughly.
  • Steam asparagus for about 2-3 minutes, rinse under cold water, and drain.
  • Combine parsley, basil, oregano, and scallions, and set aside.
  • Combine wine and sherry, add bouillon granules, and stir to dissolve.
  • Stir in cornstarch, and set aside.
  • Heat olive oil and butter in a wok or very large nonstick skillet over medium-high heat.
  • Add chopped onion, and cook for 1 minute.
  • Add minced garlic, and continue cooking until garlic is fragrant and onions are slightly translucent.
  • Increase heat to high, add shrimp, and cook, stirring constantly, for about 1 minute.
  • Add both types of mushrooms and freshly ground black pepper, and continue cooking until the mushroom start to give up their juice.
  • Add red bell pepper and tomatoes, and saute for 1 minute.
  • Reduce heat to medium-high, and add parsley-basil mixture, combining thoroughly.
  • Cook for about 2 minutes, stirring and tossing constantly.
  • Add spinach, and stir to combine.
  • Add cream and Parmesan cheese, and stir to combine.
  • Add tortellini and asparagus, and toss gently.
  • Stir wine-cornstarch mixture, and pour over all.
  • Add Gorgonzola cheese and walnuts, and stir gently to combine.
  • Cook until thickened and thoroughly heated through, about 2-3 more minutes, stirring gently to coat everything with the sauce.
  • Adjust seasoning to taste with salt and more freshly ground black pepper.
  • Pass more freshly grated Parmesan cheese on the side if desired.
  • Serve with a crisp vinaigrette salad and hot garlic bread.

The perfect weeknight dinner, this Three Cheese Tortellini with Pesto Shrimp and Asparagus comes together in less than 30 minutes.

(1) 9-ounce package of Buitoni Three Cheese Tortellini
½ lb. asparagus, tough ends removed and cut into two-inch pieces
1 tablespoon + 1 teaspoon olive oil, divided
Salt and pepper, to taste
1 clove garlic, minced
8 ounces jumbo shrimp, peeled and deveined
¼ cup sun dried tomatoes (about 6 pieces), sliced
¼ cup Buitoni pesto
Optional: shredded parmesan cheese and freshly cracked black pepper

Steps:

  • Pre-heat oven to 425 degrees F. Line baking sheet with parchment paper.
  • Cook tortellini according to package instructions. Reserve ¼ cup of pasta water. Drain pasta and set aside.
  • While tortellini is cooking, toss asparagus with 1 teaspoon olive oil and season with salt and pepper to taste. Place asparagus on parchment lined baking sheet and roast for 10 minutes, or until asparagus is tender.
  • In a large sauté pan, heat remaining olive oil (1 tablespoon) over medium heat. Add garlic and cook for 60 seconds, or until fragrant.
  • Add shrimp and cook until bright pink and opaque, about 3-5 minutes on each side.
  • Add asparagus, sun dried tomatoes, tortellini, pesto, and 3-4 tablespoons reserved pasta water and toss to combine until evenly coated.
  • Serve hot and option to garnish with shredded parmesan cheese and freshly cracked black pepper.
