15 ounces teriyaki sauce (no more than 2 grams sugar per serving)
6 tablespoons sesame oil
1/4 teaspoon minced garlic
1 lemon, juiced
1 tablespoon sugar substitute (recommended: Splenda)
2 pounds boneless, skinless chicken thighs
1 tablespoon sesame seeds, toasted
1 cantaloupe half filled with melon balls, optional

Steps:

  • Soak bamboo skewers in water for 1 hour to keep from burning later.
  • Mix all marinade ingredients together in a non-reactive container large enough to hold all of the chicken. Cut chicken into 1/2-inch strips and submerge them in the marinade, cover, and refrigerate for at least 1 hour.
  • Preheat oven to 375 degrees F.
  • Thread 1 chicken strip on each skewer towards end of the stick, and line up on a sheet pan. Place in oven and bake for about 30 minutes, or until fully cooked through. Sprinkle with sesame seeds before serving. Serve by sticking skewers straight out of the side of a cantaloupe half filled with melon balls, if desired.

10 bamboo skewers
15 fluid ounces teriyaki sauce
6 tablespoons sesame oil
2 tablespoons lemon juice
¼ teaspoon minced garlic
1 packet Sweeteners, NUTRASWEET, EQUAL, packet
2 pounds skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
2 tablespoons sesame seeds

Steps:

  • Soak bamboo skewers in warm water for 1 hour.
  • While skewers soak, mix teriyaki sauce, sesame oil, lemon juice, garlic, and sweetener together in a large glass or ceramic bowl. Add chicken, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour; the longer you marinate, the better the flavor.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thread chicken onto bamboo skewers and place on a nonstick shallow baking pan. Discard marinade. Sprinkle chicken with sesame seeds.
  • Bake in the preheated oven until chicken pieces are no longer pink in the centers and juices run clear, 30 to 40 minutes.

4 chicken breasts
sesame seeds
4 -6 wooden skewers
100 ml soy sauce
1 tablespoon sesame oil
100 ml water
75 ml sugar
3/4 inch fresh ginger, grated (2 cm)
50 ml chopped fresh cilantro

Steps:

  • Cut each chicken breast into 4 long strips.
  • Combine all marinade ingredients and marinate chicken strips in the refridgerator for 3 hours.
  • Preheat oven to 175°C.
  • Wet wooden skewers and thread chicken strips onto skewers.
  • Pour some of the marinade on the bottom of an ovenproof pan, place the skewers in the pan and sprinkle them with sesame seeds.
  • Bake for 20 minutes or until done.

Slaw and skewers
2 cups shredded green cabbage
2 cups shredded red cabbage
1 large red bell pepper, cut into matchstick-size strips

1/2 cup thinly sliced green onions
4 skinless boneless chicken breast halves, each cut lengthwise into 4 strips
16 wooden skewers, soaked in water 1 hour

Steps:

  • For dressing:
  • Puree honey, ketchup, sesame oil, green onions, garlic, and ginger in processor until smooth. With machine running, gradually add soy sauce. (Dressing can be made 1 day ahead. Cover and refrigerate.)
  • For slaw and skewers:
  • Combine first 6 ingredients in large bowl. Cover slaw and refrigerate. (Can be made 4 hours ahead. Keep refrigerated.)
  • Mix chicken with 1 cup dressing in medium bowl to coat. Marinate chicken 1 hour at room temperature.
  • Prepare barbecue (medium-high heat). Thread 1 chicken strip onto each wooden skewer. Sprinkle chicken with sesame seeds. Grill skewers until chicken is charred and cooked through, about 3 minutes per side. Transfer chicken skewers to plate.

thumb-sized piece ginger , grated
1 large garlic clove , grated
1 tsp honey
1½ tsp soy sauce
1 tsp sesame oil
½ lime , juiced
1 tbsp sesame seeds
1 skinless chicken breast , cut into 10 pieces
10 raw king prawns
1 broccoli head , cut into 20 florets
20 cocktail skewers

Steps:

  • Combine the ginger, garlic, honey, soy sauce, sesame oil, lime juice and sesame seeds. Divide between two bowls, then add the chicken pieces to one and the prawns to the other. Toss both mixtures well, then leave to marinate in the fridge for 15 mins.
  • Cook the chicken in a frying pan over a medium-high heat for 3 mins, then push to one side and add the prawns to the other side of the pan. Cook for 2 mins until the prawns are pink and the chicken is cooked through (use two separate pans if anyone you're cooking for has an allergy or is a pescatarian). Put the broccoli in a microwaveable bowl with a splash of water, then cover and cook on high for 5 mins.
  • Thread half of the skewers with chicken and broccoli and the other half with prawns and broccoli.

I thought this amount of thyme will make the recipe pungent but it actually taste yummy marinated with the chicken then barbecued and the flavour is strong but not overpowering. 3 tablespoons extra virgin olive oil
750 g chicken breast fillets, chopped into bite size pieces
8 wooden skewers
2 tablespoons sesame seeds, toasted
15 g fresh thyme leaves
1/2 teaspoon salt
chili oil (optional) or chili powder, with olive oil (optional)
1 -2 lemon, cut into wedges (optional)
mixed salad green (optional)
pita bread (optional)

Steps:

  • Soak 8 wooden skewers in cold water for 30 minutes.
  • To make the zathar spice mix, put the sesame seeds into a dry frying pan and toast over medium heat until golden and aromatic. Remove, let cool then transfer to a spice grinder (or clean coffee grinder). Add the thyme and salt and then blend to a coarse powder. Alternatively, use a mortar and pestle. You will need 3 tablespoons for this recipe (put the remainder into an airtight container and keep in a cool place for future use).
  • Put the 3 tablespoons of zathar spice mix and olive oil into a shallow dish and mix well. Cut the chicken into bite-sized pieces, add to the Zathar oil and toss well until coated. Let marinate in the refrigerator for at least 2 hours.
  • Preheat the barbecue, then thread the chicken pieces onto the soaked wooden skewers and cook over hot coal for 2-3 minutes on each side. Remove from heat, let rest briefly, sprinkle with chilli oil and lemon juice and serve hot with salad or pita bread.

1 pkg 6-inch wooden skewers
1/2 C soy sauce
2 green onions, with green tops, finely chopped
3 T sesame seeds
1 clove minced garlic
1 t dark sesame oil (or just vegetable oil if you don't have it)
1/2 t dry mustard
1/4 t ground ginger
1 lb skinned and boned chicken breasts, cut into 4 x
1 x 1/2-inch strips
non-stick cooking spray
2 T orange marmalade
2 T fresh orange juice

Steps:

  • In large zip-lock bag, mix 1/4 C of the soy sauce, onion, oil, sesame, garlic, mustard and ginger. Add chicken and seal bag tightly. Refrigerate at least 2 hours, turning bag now and again. Preheat oven to 425. Spray 2 baking sheets with cooking spray. Thread each chicken strip onto a 6-inch skewer and place on baking sheet. (If you can only find longer skewers, you can cut them in half.) Reserve the marinade. Bake chicken uncovered about 8 mins or until cooked through, turning and basting with the marinade. In small bowl whisk remaining 1/4 C soy sauce with marmalade and orange juice. Serve this sauce alongside the chicken.

This is a recipe that I have to make every Christmas. It is so easy but tastes like you really had to work hard for it. It is great warm or at room temperature so it is good for a party where there are people coming in late. They just better not come too late; they will all be gone!

2-3 boneless skinless chicken breasts
1 c pineapple juice
1/2 c brown sugar
1/3 c soy sauce
1 inch of fresh ginger, grated fine
1 Tbsp fresh garlic, grated fine
2 Tbsp sesame seeds

Steps:

  • 1. If the chicken is fresh, place on a baking sheet and put it in the freezer for 15-20 minutes to slightly firm it so that it will be easier to slice. If it is frozen, slightly thaw it for the same reason.
  • 2. Slice the chicken across the grain in about 1/4 inch slices. they can be different lengths, that is ok.
  • 3. Mix all of the other ingredients except for the sesame seeds in a large bowl.
  • 4. Place the chicken in the mixture and stir to coat the chicken pieces. Place the bowl in the refrigerator for at least 30 minutes but up to 6 hours. 6 hours is really best.
  • 5. Place each piece of chicken on a wooden skewer in a zig zag fashion and sprinkle on the sesame seeds.
  • 6. Broil in the oven flipping them once to get the other side of grill them for a smoky flavor.
