POTATOES WITH BASIL



Potatoes with Basil image

Number Of Ingredients 7

2 potatoes (2 medium-size potatoes, peeled and sliced into ¼-inch thick)
2 teaspoon salt (2 teaspoons salt)
4 tablespoons olive oil (4 tablespoons olive oil)
2 shallots (2 shallots peeled and very thinly sliced)
2 tablespoons champagne vinegar
¼ cup basil (¼ cup loosely packed fresh basil leaves, shredded)
salt and pepper (salt and pepper)

Steps:

  • Place the potatoes sliced in a large saucepan and cover with cold water. Add the 2 teaspoons salt and bring to a boil. Lower the heat and gently boil for 10 minutes or until the center of the potato's slices are just tender. Be careful not to overcook them. Once ready, drain them and run cold water over them to stop the cooking process. (At this point the potatoes can be refrigerated for 2 days)
  • In a heavy 12-inch skillet heat the oil. Add the shallots and toss over medium heat until the thin slices become translucent, 1 to 2 minutes. Do not brown.
  • Add the potatoes and 1 tablespoon vinegar and gently toss over high heat for 3 to 5 minutes. Add the basil, salt, black pepper, and more vinegar to taste. Serve immediately.

4 medium baking potatoes
1 tablespoon olive oil
1-1/2 teaspoons dried basil
1/2 teaspoon onion salt
1/2 teaspoon garlic powder

Steps:

  • Scrub potatoes and cut in half lengthwise; place cut side up on an ungreased baking sheet. Brush with oil. Sprinkle with basil, onion salt and garlic powder. Bake at 400° for 35-40 minutes or until tender.

This is one of the many ways I like to cook potatoes. French Fries in a new way. Kids LOVE them!!

Number Of Ingredients 8

6 large potatoes (any kind you like)
1 Tbsp garlic, minced
1/2 tsp onion powder
3/4 tsp seasoned salt
1/2 tsp dried basil
1 small onion, optional
1 small green pepper, optional
1 stick butter or olive oil

Steps:

  • 1. If you chose to have onions and peppers, clean them, then chop them into bite sized chunks and set aside.
  • 2. Clean potatoes (don't have to peel) and slice into about 1/4 inch slices.
  • 3. In a small bowl, combine butter, garlic, onion powder, and basil.
  • 4. Put the potatoes (onions and peppers if wanted) in a glass baking dish and cover in the butter mixture making sure all potatoes are covered. spread them out evenly in the pan and sprinkle with seasoned salt.
  • 5. Bake for about 35 minutes or until they are cooked for your liking.

2-1/2 pounds small Yukon Gold potatoes, cut into eighths
8 tablespoons olive oil, divided
3 tablespoons lemon juice
1 tablespoon Dijon mustard
3 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 medium red onion, thinly sliced
1/3 cup chopped fresh basil

Steps:

  • Preheat oven to 450°. In a large bowl, toss potatoes with 2 tablespoons oil. Transfer to a greased 15x10x1-in. baking pan. Bake 22-28 minutes or until tender, stirring occasionally., In a large bowl, whisk lemon juice, mustard, garlic, salt, pepper and remaining oil. Stir in onion and basil. Add roasted potatoes; toss to coat.

4 tablespoons finely chopped fresh basil
2 large shallots, minced

  • Pierce potatoes in several places with fork. Melt butter in heavy large skillet over medium heat. Add potatoes and season with salt and pepper. 1/2 cup fresh lemon juice, plus 2 teaspoons
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1 teaspoon lemon zest
1/4 cup chopped fresh basil leaves

Steps:

  • Place the potatoes, chicken stock, lemon juice, 2 tablespoons olive oil, 1 teaspoon salt, and 1/4 teaspoon black pepper in a medium saucepan. Bring to a boil over medium-high heat. Reduce the heat and simmer until the potatoes are tender, about 20 to 25 minutes.
  • Drain the potatoes and place in a serving bowl. Drizzle with the remaining olive oil. Add the lemon zest and 3 tablespoons of the basil. Toss well and garnish with the remaining chopped basil.
