3/4 cup reduced-sodium soy sauce
1/4 cup Worcestershire sauce
2 garlic cloves, minced
2-1/2 pounds beef tenderloin, cut into 1-inch cubes
2-1/2 pounds pork tenderloin, cut into 1-inch cubes
HORSERADISH SAUCE:
1 cup sour cream
3 tablespoons prepared horseradish
1 tablespoon chopped onion
1 teaspoon white vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
BARBECUE SAUCE:
1 can (8 ounces) tomato sauce
1/3 cup steak sauce
2 tablespoons brown sugar
6 to 9 cups peanut or canola oil

Steps:

  • In a 1-cup measure, combine soy sauce, Worcestershire sauce and garlic. Divide mixture between two large resealable plastic bags. Add beef to one bag; add pork to the second bag. Seal bags and turn to coat; refrigerate for 4 hours, turning occasionally. , Meanwhile, in a small bowl, combine the horseradish sauce ingredients. In another bowl, combine the tomato sauce, steak sauce and brown sugar. Cover and refrigerate sauces until serving., Drain meat and discard marinade. Pat meat dry with paper towels. Using one fondue pot for every six people, heat 2-3 cups oil in each pot to 375°. With fondue forks, cook meat in oil until it reaches desired doneness. Serve with sauces.

4 slices, country-style bread
Olive oil
Salt and pepper
2 tablespoons olive oil
1 tablespoon unsalted butter
4 beef fillet steaks, about 6 ounces
Salt and coarsely ground black pepper
1 pound shiitake mushrooms, cleaned and quartered
2 shallots, finely diced
1 cup red wine
1 cup beef broth
2 tablespoons Dijon mustard
2 tablespoons cold unsalted butter
2 tablespoons olive oil
3 large Spanish onion, peeled and sliced thinly
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
4 large potatoes, peeled and sliced thinly
3 tablespoons balsamic vinegar
1 1/4 cups heavy cream
1/4 cup finely chopped fresh parsley
1 cup grated Gruyere cheese

Steps:

  • Preheat oven to 400 degrees F. Place bread on a work surface and using a 3-inch cookie cutter, cut a round crouton from the center of each piece of bread. Brush both sides of the croutons with olive oil and season with salt and pepper, to taste. Place the croutons on a baking sheet and bake for 5 to 7 minutes or until lightly golden brown.
  • Heat olive oil and butter in a large skillet over high heat. Season the fillets with salt and press the coarsely cracked black pepper onto 1 side of each fillet. Place the fillets pepper-side down into the skillet and sear until golden brown, turn the fillets over and continue cooking for 4 to 5 minutes for medium-rare doneness. Remove the steaks to a plate. Remove all but 3 tablespoons of the fat in the pan and return to high heat. Add the mushrooms and cook until golden brown and their liquid has evaporated. Add the shallots and cook until soft. Add the red wine and reduce by half. Add the broth and cook until reduced by half. Whisk in the mustard and butter and cook for 30 seconds. Season with salt and pepper, to taste. Place each fillet on top of a crouton and spoon some of the sauce over.
  • Heat oil in a large saute pan over medium heat. Add the onions and cook slowly until caramelized. Add the garlic and balsamic vinegar and cook for 2 minutes. Preheat oven to 375 degrees F. Butter a 9-inch baking pan a place a layer of potatoes on the bottom and season with salt and pepper. Spoon 1/5 of the onion mixture over the potatoes and top with 1/4 cup of the heavy cream and a tablespoon of parsley. Repeat to make 5 layers. Sprinkle the cheese over the top of the potatoes. Bake for 50 to 60 minutes, or until the potatoes are soft and the cream has been absorbed.

3 red onions, peeled and cut in eight pieces
2 1/4 lbs all purpose potatoes, peeled, cut for French fries
4 fresh peruvian yellow chili (Yellow, green or orange-colored fresh hot pepper or chili. This is the most common aji used in Peru,)
4 tomatoes, cut in eighths
2 tablespoons chopped parsley
1 tablespoon balsamic vinegar
2 tablespoons soy sauce
1 1/4 cups oil
1/2 teaspoon key lime juice

Steps:

  • Preparation:
  • Heat ½ cup oil in a large skillet over high heat. Add beef and quickly sauté until beef is seared and browned on all sides. Remove pan from heat and transfer beef to a plate. Save covered.
  • Return pan to medium-high heat and add 1 ½ tablespoons oil. Add onions and sauté until edges are seared and they begin to soften, about 2 minutes.
  • Add aji amarillo, tomatoes, parsley, salt, pepper, soy sauce and vinegar. Sauté until tomatoes have softened, about 2 minutes.
  • Add beef and toss gently.
  • Optional: For a special taste pour ¼ cup Pisco over boiling meat and ignite. Cover and set aside.

½ cup beef broth
1 (8 ounce) package sliced fresh mushrooms

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Add onions; cook and stir until tender, about 10 minutes. Transfer to a bowl.

Salt to taste, if desired
Freshly ground pepper to taste
1 tablespoon peanut, vegetable or corn oil
1 tablespoon butter

Steps:

  • Preheat oven to 425 degrees.
  • Sprinkle meat on all sides with salt and pepper. Rub with oil.
  • Place beef in small, shallow roasting pan and put it in oven. Bake 20 minutes, turning once or twice as it roasts.
  • Pour off fat from the pan and add butter to the pan. Continue baking three to five minutes.

1/2 lb boneless sirloin steak (preferably top butt; about 1 inch thick)
1 tablespoon all-purpose flour
4 tablespoons olive oil, divided
4 garlic cloves, thinly sliced
1 1/2 tablespoons chopped rosemary
2/3 cup dry white wine

Steps:

  • Trim excess fat, then thinly slice steak. Toss with flour, 3/4 teaspoon salt, and 1/2 teaspoon pepper.
  • Heat 1 1/2 tablespoons oil in a 12-inch heavy skillet over medium-high heat. Sauté steak in 2 or 3 batches until no longer pink on the outside, about 2 minutes per batch, adding 1 1/2 tablespoons more oil as needed. Transfer to a plate.
  • Sauté garlic and rosemary in remaining tablespoon oil over medium-high heat until golden, 1 to 2 minutes. Add wine and 1/2 teaspoon each of salt and pepper and boil, scraping up brown bits, until reduced by half. Return beef with juices to skillet and warm through.

LOL! Here's what I made for the main course last year, and it was to DIE for. Almost too pretty to eat....almost! Enjoy!!! *Prep-time does not include chilling time.

2 nice-sized thick filet mignon steaks, 2 inches thick at least
2 tablespoons unsalted butter, softened
fresh coarse ground black pepper
1/2 teaspoon minced garlic (optional if you don't like garlic) (optional)
2 slices swiss cheese or 2 slices monterey jack cheese, thick
1 sheet puff pastry, rolled out just a little bit
1 egg
1 tablespoon olive oil
1 cup sour cream
1 -2 tablespoon horseradish, to your preference, and not the the cream style, the real deal
1/4 teaspoon Dijon mustard (optional)

Steps:

  • Trim any fat from the steaks, sprinkle with pepper, spread tops of each with 1 Tbl butter.
  • In shallow roasting pan, bake in pre-heated oven, buttered side up, at 425º for 10 minutes.
  • Place in fridge til cold.
  • Roll out puff pastry a little and cut in half.
  • Spread steaks with garlic, top with cheese.
  • Place cheese side down onto center of pastry squares, fold pastry over, moisten edges and seal well.
  • Place seam-side down onto baking sheet lined with parchment paper.
  • Prick top with a fork, cover with plastic wrap, and re-chill for 1 hour.
  • Beat egg with oil, and brush pastry with it.
  • Bake in center of pre-heated 425º oven for 25 minutes for med-rare.
  • Serve with horseradish sauce if desired.
  • Serves 2.

4 fresh yellow peppers, sliced into thin strips (optional)
4 tomatoes, cut in eighths

1 tablespoon white vinegar
2 tablespoons soy sauce
1 1/4 cups oil
pepper
red wine (to flame de meat) (optional) or Pisco (to flame de meat) (optional)

Steps:

  • Preparation:
  • Heat ½ cup oil in a large skillet over high heat. Add beef already with pepper and garlic and quickly sauté until beef is seared and browned on all sides.you can add in this moment red wine or pisco to flame the meat, Remove pan from heat and transfer beef to a plate. Save covered.
  • Return pan to medium-high heat and add 1 ½ tablespoons oil. Add onions and sauté until edges are seared and they begin to soften, about 2 minutes.
