Bow Tie Pasta with Mushroom Cream Sauce and Chicken image

This Mushroom Cream Sauce is a flavorful, creamy sauce with white wine, tender sauteed chicken, and wilted spinach tossed in bow tie pasta spiced up with a little cayenne pepper.

1 lb bowtie pasta
2 tbsp olive oil
1 lb chicken breasts
2 tbsp butter
2 tbsp sliced garlic
3/4 cup white wine
10 ounces sliced mushrooms
2 cups heavy cream
1/2 cup fresh shredded parmesan
1 1/2 cups chopped spinach
2-3 tsp cayenne pepper
salt and pepper
Red pepper flakes, if desired.

Steps:

  • In a large pot, boil dried bowtie pasta according to package directions. This can be done while the other ingredients are being worked on.
  • Place chicken breasts between two pieces of plastic wrap. Hammer flat with the flat side of meat tenderizer until chicken is one uniformed thickness, about 1/2 inch. Sprinkle with a little salt and pepper.
  • Heat oil in large saute pan over medium heat. I used a large enamel cast iron. Cook chicken for about 5-6 minutes per side, or until chicken is done all the way through. Remove from pan, cover, and set aside.
  • In the same pan, melt butter. Saute sliced garlic for about 2 minutes.
  • Add white wine and deglaze the pan. Let simmer for a few moments while you scrape up any bits stuck to the pan and mix the contents.
  • Add sliced mushrooms. Reduce heat and let simmer in the sauce for about 8 minutes or until the wine reduces down by at least half. Add heavy cream and cayenne pepper. Bring to low boil, stirring frequently with a whisk. Simmer for about 5 minutes, or until sauce is thickened. Mix in parmesan. Add chopped spinach and continue cooking for about 5 minutes, or until spinach is wilted.
  • Monitor sauce by tasting frequently. Add salt, pepper, and cayenne as your tastes prefer.
  • Chop chicken into little strips about 1 inch long, 1/2 in wide, or whatever size you prefer.
  • Toss cooked bowtie pasta into sauce. Coat well. Add chicken.
  • Top with red pepper flakes if preferred. Serve with a side of garlic bread and enjoy!

1 pound sliced fresh mushrooms
1/2 teaspoon salt
1/4 teaspoon pepper

1/4 cup chicken broth

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the mushrooms, salt and pepper in butter until tender. Add spreadable cheese and broth; cook and stir until blended. Drain pasta; add to skillet and toss to coat.

2 Boneless Skinless Chicken Breasts
1/2 c milk
1/4 c flour
1/2 package mushrooms
1 Green Pepper
1/2 Onion
8 Slow Roasted Tomatoes (see recipes)
1/2 box bowtie pasta
1/2 c half and half
1 TBSP Olive Oil
1 TBSP Butter
Salt
Pepper
Garlic
Parsley
Herbs (chives, oregano, basil)

Steps:

  • Slice chicken breasts into strips. Soak in milk, coat with flour. Start water for pasta. Sear in olive oil. Don't cook completely just get the breading crisp. Put on cookie sheet at 350 until cooked through. Add pasta to water. Saute onion and garlic until onion is translucent. Add mushroom and pepper saute until green pepper is cooked through. Cool about 10 - 20 degrees. Add half and half, salt, pepper, herbs. (if its winter or your are short of herbs use hidden valley garlic and herb about 2 TBSPs or Mrs. Dash garlic and herb. Drain pasta. Plate with pasta, then cream sauce with mushrooms and green peppers. Top with chicken. Slice tomatoes add to top of dish. Serve

1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
2 boneless skinless chicken breast halves (5 ounces each)
2 bacon strips, diced
1/2 cup sliced fresh mushrooms
1 green onion, sliced
1 garlic clove, minced
1 cup uncooked bow tie pasta
1 tablespoon butter
4 teaspoons all-purpose flour
1/2 cup half-and-half cream
2 tablespoons chicken broth
1/2 cup plus 2 tablespoons shredded Asiago cheese, divided
1-1/2 teaspoons cream cheese, softened
1 plum tomato, seeded and diced

Steps:

  • Rub pepper and cayenne over chicken. Broil 4-6 in. from the heat for 4-5 minutes on each side or until juices run clear. Set aside and keep warm. , In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 teaspoons drippings. In the drippings, saute mushrooms, onion and garlic. Remove from the heat; set aside., Cook pasta according to package directions. Meanwhile, in a saucepan, melt butter over medium heat; stir in flour until smooth. Gradually add cream and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add 1/2 cup Asiago cheese and cream cheese; stir until cheese is melted. , Cut chicken into strips. Drain pasta. Toss chicken, pasta, bacon and mushroom mixture with cream sauce. Top with tomato and remaining Asiago cheese.

4 boneless skinless chicken breasts
2 tablespoons olive oil
1/2 red bell pepper, chopped small
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
12 kalamata olives, pitted and quartered
1 (14 ounce) can diced tomatoes
1 cup chicken broth
1 tablespoon chopped fresh rosemary
1 pinch salt
1/2 cup crumbled feta
1/4 cup shredded parmesan cheese

Steps:

  • Cook pasta according to package directions and transfer to a large serving bowl.
  • While pasta is boiling, cut chicken breasts into 1/4 to 1/2-inch pieces.
  • In a large skillet, sauté chicken pieces in the olive oil until cooked through. Add to pasta and mix. Add peppers, garlic and pepper flakes to pan, cook 2 minutes stirring frequently.
  • Add olives, tomatoes, chicken broth, rosemary and a pinch of salt. Bring the mixture just to a boil. While waiting for liquid to boil, sprinkle cheeses over the pasta and chicken. Pour boiling contents of saute pan over the chicken and pasta and toss.
  • Toss and top with parmesan.

I attended a pasta making class this winter and these were demonstrated. Wowww!! They are a lot of work but they make a ton and can be frozen or will keep in the fridge for up to 5 days.

Number Of Ingredients 9

1 lb ground chicken, cooked (I have used a deli chicken de-boned and run through the processor)
1 tablespoon chopped fresh rosemary
1 tablespoon minced fresh garlic
salt and pepper
2 eggs (can use egg substitute)
2 -3 tablespoons water
1 tablespoon olive oil
1 cup white flour
1 -2 cup semolina flour

Steps:

  • For filling, place all ingredients in a blender or food processor, blending into a paste. Add broth, milk, or cream as needed to moisten.
  • Set aside.
  • Blend the eggs, water, and oil.
  • In a medium bowl place white flour and 1 c semolina.
  • Make a well in the center and pour in egg mixture.
  • Knead about 10 times adding flour and water as needed.
  • It will be a very stiff dough.
  • Wrap in plastic and let rest at least 30 minutes.
  • Divide in fourths.
  • Roll out to setting 5 on pasta maker and form sheets 25" by 5".
  • You can hand roll the dough to these specifications as well.
  • If you have a ravioli press place dough on top of forms, and place 1 or 2 tsp of filling into each ravioli. With no press put two balls of filling down the dough strip at a time.
  • Brush water on edges and between filling balls.
  • Place A strip of dough on top and seal according to your press.
  • If by hand use a roller or by hand to seal sides and cut into ravioli.
  • Let them dry at least 10 minutes.
  • Cook in boiling water for 10 minutes.
