CHEF JOHN'S RICOTTA MEATBALLS

Chef John's Ricotta Meatballs image

Ricotta-spiked meatballs are so tender, so flavorful, and so delicious. There are hardly any ingredients. Of course we're going to throw this over some spaghetti, because we're Americans and that's what we do with meatballs.

Categories     World Cuisine Recipes     European     Italian

Time 1h

Yield 8

Number Of Ingredients 14

½ onion, minced
2 tablespoons olive oil
3 cloves garlic, minced
1 pound ground beef
1 cup whole milk ricotta cheese
¼ cup packed chopped Italian parsley
1 egg, beaten
1 ½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
⅓ cup dry bread crumbs
2 tablespoons olive oil
1 (28 ounce) jar marinara sauce
1 cup water

Steps:

  • Saute onion in 2 tablespoons olive oil in a skillet over medium heat until onion is translucent, about 5 minutes. Stir garlic into onion and turn off heat. Transfer onion mixture to a large mixing bowl.
  • Stir ground beef, ricotta cheese, parsley, egg, kosher salt, black pepper, and cayenne pepper with onion mixture until almost combined; stir in bread crumbs and continue to mix until thoroughly blended.
  • Roll about 2 tablespoons of mixture into a 1-inch ball for each meatball. Pour 2 tablespoons olive oil in same skillet used to cook onions. Place skillet over medium heat and brown meatballs on all sides in hot oil, about 5 minutes. Hold a crumpled paper towel in a tongs and use it to remove excess grease from skillet.
  • Pour marinara sauce and water over meatballs in skillet. Stir to combine and bring to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until meatballs are cooked through and no longer pink in the center, about 30 minutes.

SPAGHETTI AND MEATBALLS WITH RICOTTA

Spaghetti and Meatballs with Ricotta image

Provided by Bobby Flay

Categories     main-dish

Time 2h45m

Yield 4 to 6 servings

Number Of Ingredients 29

1 cup plus 2 tablespoons olive oil or canola oil
4 cloves garlic, finely chopped
1/2 small Spanish onion, finely grated
1/4 cup freshly grated Parmesan
1/4 cup finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh oregano
2 large eggs
Salt and freshly ground black pepper
Salt and freshly ground black pepper
8 ounces ground chuck (80/20)
8 ounces ground pork (80/20)
4 to 6 tablespoons breadcrumbs
2 cups all-purpose flour
3 eggs
Kosher salt
2 tablespoons olive oil
1 small Spanish onion, finely diced
2 cloves garlic, finely chopped
Pinch of red pepper flakes
One 28-ounce can crushed tomatoes
1 teaspoon finely chopped fresh oregano
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Pinch of sugar, if needed
3 tablespoons chopped fresh basil
Fresh ricotta, for garnish
Parmesan, for grating on top
Fresh basil sprigs, for garnish
Fresh parsley leaves, for garnish

Steps:

  • For the meatballs: Heat 2 tablespoons of the oil in a small saute pan over medium heat. Add the garlic and onions and cook until soft, about 1 1/2 minutes. Remove from the heat and let cool slightly.
  • Whisk together the Parmesan, parsley, oregano, eggs, 3 tablespoons cold water, the sauteed garlic and onions and some salt and pepper in a large bowl until combined. Add the chuck and pork and gently mix together until combined. Begin adding breadcrumbs a few tablespoons at a time until the mixture just holds together. Cover and refrigerate for at least 1 hour and up to 8 hours. The longer you let the mixture sit, the more the flavor develops.
  • For the fresh pasta: In a food processor, combine the flour and eggs. Pulse until it comes together as a dough. Remove and knead until smooth. Let rest for at least 30 minutes.
  • For the tomato sauce: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 4 minutes. Add the garlic and red pepper flakes and cook for 30 seconds. Increase the heat to high, add the tomatoes and oregano and season with salt and pepper. Cook, stirring occasionally, until slightly thickened, about 15 minutes. Taste for seasoning (adding a pinch of sugar if needed) and stir in the basil.
  • Form the meatball mixture into 1 1/2-inch balls. Heat the remaining 1 cup of oil in a large saute pan over medium-high heat until it begins to shimmer. Add the meatballs and fry until golden brown on all sides.
  • Add the meatballs to the sauce, reduce the heat to medium and continue cooking until the meatballs have cooked through and the sauce has thickened more, about 15 minutes longer.
  • To cook the pasta, bring a large pot of water to a boil and add salt.
  • Roll out the dough in portions using a pasta roller. Cut out spaghetti using a pasta cutter and place the fresh pasta on a tray lined with parchment.
  • Boil the pasta until al dente, 1 to 2 minutes. Toss the pasta with some of the warm sauce and a little bit of pasta water in a saute pan.
  • Transfer the sauced pasta to a platter and top with the meatballs (using a slotted spoon). Ladle the remaining tomato sauce over the spaghetti and meatballs. Dollop ricotta on top and grate lots of Parmesan over the top. Garnish with fresh basil sprigs and parsley leaves.

RICOTTA MEATLESS MEATBALLS WITH SAUCE

Ricotta Meatless Meatballs with Sauce image

"Polpette di ricotta al sugo", as these are known in Italian, are meatless balls made out of ricotta cheese and homemade bread crumbs. Think meatballs, but without the meat! The soft balls are then simmered in a simple homemade tomato sauce. I like to serve these with a side of greens, such as broccoli rabe.

Ricotta is the secret to tenderness in these all-purpose meatballs. Serve them plain, with a marinara sauce for dipping, or simmer the meatballs in tomato sauce for serving over spaghetti. Ground chicken is a great alternative and will yield cheesier tasting meatballs.

SAVORY TURKEY-RICOTTA MEATBALLS

Savory Turkey-Ricotta Meatballs image

I'm not one to usually do turkey in my meatballs, but I saw this recipe in the recent issue of Cooking Light and decided to try since they are lower in fat. These can be used in spaghetti, substitute for beef in Stroganoff, or serve as as appetizer with warmed marinara dip, as the magazine suggests. Ricotta helps keep the lean ground turkey breast moist. Prepare them in advance, if you like, and store in the freezer for up to three months.

1 1/2 teaspoons coarse salt
Freshly ground black pepper
3 cups cubed crusty white Italian bread, crusts removed

1 cup Basic Tomato Sauce
1/2 cup ricotta cheese
1/4 cup grated Parmigiano-Reggiano cheese

Steps:

  • Make the meatballs: Preheat oven to 350 degrees.
  • Run bread under water and gently squeeze out excess liquid. Transfer bread to a large bowl and add veal, beef, pork, egg, onion, parsley, basil, cheese, and oregano; season with salt. Using your hands, mix until well combined. Divide mixture into 8 equal portions and roll each portion into a large round meatball. Place meatballs in a large baking dish.

CHICKEN, LEMON & RICOTTA MEATBALLS WITH LINGUINE

Chicken, lemon & ricotta meatballs with linguine image

Flavour-packed, easy to make and nutritious - our zesty chicken meatballs tick all the boxes for a family meal

Provided by Melissa Thompson - Journalist and food writer

Categories     Dinner

Time 40m

Number Of Ingredients 11

2 chicken breasts
2 lemons, zested
200g ricotta
3 tbsp parsley, chopped
150g fresh breadcrumbs
100ml milk, plus 2 tbsp
1 medium egg, beaten
25g plain flour, for dusting
1 tbsp olive oil
300g linguine
320g green beans, trimmed and halved

Steps:

  • Cut the chicken into very small pieces using a sharp knife. You can use a food processor, but pulse so it doesn't turn into a paste. Put in a bowl and add half the lemon zest, half the ricotta, half the parsley, the breadcrumbs and mix together. Add the 2 tbsp milk, the egg and a good pinch of seasoning. Mix again.
  • Dust a plate lightly with flour. Wet your hands, take a golf ball-sized piece of the meatball mixture and roll into a ball. Set on the floured plate and repeat until all the mixture has been used up.
  • Heat a heavy-based frying pan over a medium heat, add the oil, then the meatballs, ensuring they don't touch each other. Cook for 10-15 mins, turning so they brown on all sides. Transfer to a plate.
  • Meanwhile, heat a large pan of salted water and add the linguine. Cook following pack instructions, and 3 mins before the end of the cooking time, add the green beans. Drain, saving the pasta water. Rinse the linguine and beans under cool water to stop them cooking further.
  • Add the remaining ricotta to the frying pan, breaking it up as much as possible. Pour in the 100ml milk and 2 tbsp of reserved pasta water, then cook down to thicken slightly for a couple of minutes. Add the pasta, beans and remaining lemon zest and parsley. Season to taste, mix in the meatballs and serve.

CHICKEN MEATBALLS WITH HOMEMADE RICOTTA

Chicken Meatballs with Homemade Ricotta image

Provided by Food Network

Categories     appetizer

Time 1h10m

Yield 6 to 8 appetizer servings

Number Of Ingredients 18

2 pounds ground chicken (white and dark meat)
2 cups breadcrumbs
1 roasted red pepper, minced
1/4 cup buttermilk
1 tablespoons chopped fresh parsley
1 tablespoon dried oregano
1 tablespoon dried thyme
10 fresh basil leaves, minced
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon black pepper
1 pinch crushed red pepper flakes
Oil, for greasing the baking sheet
1/2 gallon whole milk
1 quart buttermilk
1 quart heavy cream
1 tablespoon salt
Homemade or store-bought tomato sauce, for serving

Steps:

  • For the meatballs: Preheat oven to 350 degrees F.
  • Combine the chicken, breadcrumbs, roasted red pepper, buttermilk, parsley, oregano, thyme, basil, garlic, salt, pepper and red pepper flakes in a large bowl and mix thoroughly. Roll the mixture into 2- to 3-inch balls, though the meatballs can be made into any size desired.
  • Place the meatballs on a lightly-greased baking sheet and roast until cooked through and a little brown, 35 to 40 minutes.
  • For the ricotta cheese Bring the milk, buttermilk, heavy cream and salt to a boil in a large stockpot over medium heat, then turn off the heat and let sit for 30 minutes.
  • Using a very fine strainer or cheesecloth, strain the milk mixture to separate the thick parts, or curds, from the remaining liquid, or whey, over a bowl or container. Discard the whey. For thicker ricotta, let the mixture strain longer so more liquid is removed. Let cool and adjust seasoning if necessary.
  • Serve the meatballs hot with your favorite homemade or store-bought tomato sauce and garnish with pieces of ricotta.

1/2 cup cubed day-old bread
1/4 cup whole milk
11/2 pounds medium-ground pork (20% fat)
1/2 cup ricotta cheese
1 garlic clove, minced
1 shallot, minced
2 tablespoons chopped fresh flat-leaf parsley
Grated zest of 1 lemon

In a large bowl, combine the pork, soaked bread, ricotta, garlic, shallot, parsley, lemon zest, coriander, cinnamon, and salt. Mix with your hands to combine. Form into meatballs using ¹/³ cup of the mixture for each one. It is easiest to form meatballs with slightly damp hands. You should have about 12 to 15 meatballs. 3/4 pound ground pork
3/4 pound ground turkey
4 ounces (1/2 cup) whole milk ricotta
1/3 cup minced flat-leaf parsley leaves
1/3 cup panko bread crumbs
1/2 medium onion, grated (about 1/2 cup)
3 tablespoons finely grated pecorino
1 slice bacon, finely minced
2 large cloves garlic, minced
2 tablespoons milk
1 tablespoon minced fresh thyme or lemon thyme
1 large egg, beaten
2 teaspoons kosher salt
2 dashes Worcestershire sauce (about 1/2 teaspoon)
Freshly ground black pepper
1 cup extra-virgin olive oil
2 to 3 cups homemade or quality jarred marinara sauce
Small fresh basil leaves

Steps:

  • Mix the ground meats, ricotta, parsley, panko crumbs, onion, pecorino, bacon, garlic, milk, thyme, egg, salt, Worcestershire, and black pepper, to taste, in a large bowl. Mix until just combined; don't overmix. The mixture will be pretty soft.
  • Using your hands, gently form mixture into 1 tablespoon small meatballs (about the size of ping pong balls). Put them on a large plate or pan; cover and refrigerate at least an hour or up to 24 hours.
  • Heat the oil in a medium nonstick skillet over medium-high heat. Add about 1/3 the meatballs and cook, turning occasionally, until well browned on all sides, about 6 minutes. Transfer the meatballs to a plate and repeat with the remaining meatballs.
  • Drain off the oil and wipe out the skillet. Return the meatballs to the skillet and pour in the marinara sauce. Bring to a boil, lower the heat, cover, and simmer until the meatballs are cooked through, about 15 minutes.
  • Serve the meatballs, skewered on a platter with a dollop of the sauce and a fresh leaf of basil. They can be serve warm or at room temperature.
  • The meatballs can be stored, covered, in the refrigerator for 3 days, or frozen for up to 6 weeks.

TURKEY & RICOTTA MEATBALLS FROM SMALL VICTORIES

Turkey & Ricotta Meatballs from Small Victories image

Courtesy of Julia Turshen, author of Small Victories "The first thing I ever cooked for my wife, Grace, were these meatballs. I made the mixture at my apartment, then packed it up with a box of pasta, ingredients for sauce, and a pot (she told me she had only a skillet) and took it all to her apartment . . . which soon became my apartment, too. A small victory here is not only about getting someone to marry you (!), but also about making meatballs that are incredibly light and tender by incorporating a generous amount of ricotta cheese in the mixture. In fact, I've found that by adding ricotta, you can skip the usual bread crumbs and eggs (which also makes this recipe gluten-free, if that's important to you)-I love any addition that allows you to let go of a few things. Another small victory is baking the meatballs instead of frying them. It's much less messy and so easy-win-win. Please note that while most of the recipes in this book serve four, I've made this one a bit larger because whenever I make meatballs, I like to make a ton so that I can freeze some. That way, I can have meatballs on the spur of the moment. I thought you might like that too, but feel free to cut the recipe in half if you prefer. Serve the meatballs with pasta, polenta, rice, garlic bread, or just on their own! Whichever way you choose, be sure to sprinkle them with plenty of grated Parmesan cheese." -from Julia Turshen, author of Small Victories

Time 55m

Yield 30 meatballs, 8 serving(s)

Number Of Ingredients 9

2 (28 ounce) cans whole canned tomatoes
7 tablespoons extra-virgin olive oil
7 garlic cloves, 4 thinly sliced, 3 minced
kosher salt, to taste
1 cup fresh basil leaf, finely chopped
1 cup fresh Italian parsley, finely chopped
1 1/2 cups fresh whole milk ricotta cheese
1/2 cup finely grated parmesan cheese
2 lbs ground turkey, at room temperature (preferably dark meat)

Steps:

  • Pour the contents of the tomato cans into a large bowl (set the cans aside) and crush the tomatoes with your hands (this is a messy but fun job, and a very good one for children). Rinse one of the cans with about 1/4 cup [60 ml] water, pour it into the second can and swish it around to get all the excess tomato out of the cans, and then pour the water into the tomato bowl.
  • In a large saucepan or pot over medium-high heat, warm 3 Tbsp of the olive oil, add the sliced garlic, and cook, stirring, until it begins to sizzle, about 1 minute. Add the tomatoes and a very large pinch of salt and bring to a boil. Lower the heat and let the sauce simmer, stirring every so often, until it is slightly reduced and has lost any tin-can taste, about 30 minutes.
  • Meanwhile, preheat your oven to 425°F [220°C]. Line a baking sheet with aluminum foil. Drizzle 2 Tbsp olive oil on the baking sheet and use your hands to rub it over the entire surface of the sheet. Set aside.
  • In a large bowl, combine the minced garlic, basil, parsley, ricotta, Parmesan, turkey, and 1 Tbsp salt. Blend everything together gently but authoritatively with your hands (they're the best tool for the job) until well mixed. Then, use your hands to form the mixture into golf ball-sized meatballs; the mixture will be sticky, so wet your hands with a bit of water to help prevent the meat from sticking to them. Transfer the meatballs to the prepared baking sheet as you form them (it's okay if they are touching a little). Drizzle the meatballs with the remaining 2 Tbsp olive oil and roast until they're browned and firm to the touch, about 25 minutes.
  • Use tongs or a slotted spoon to transfer the meatballs to the simmering sauce (discard whatever juice and fat is left on the baking sheet). Cook the meatballs for 10 minutes in the sauce (they can be left in the gently simmering sauce for up to 1 hour) and serve.
  • SPIN-OFFS.
  • FOR SAUSAGE AND RICOTTA MEATBALLS, instead of ground turkey, use 2 lb [910 g] of your favorite sausage meat. Just take it out of its casings and proceed as directed. I like using half sweet and half spicy Italian sausage.
  • FOR A SLIGHTLY MOROCCAN RIFF, use ground lamb instead of turkey and finely crumbled feta instead of Parmesan. Leave out the ricotta. Add a handful each of toasted pine nuts and raisins to the mixture, and use mint instead of basil. Add a cinnamon stick to the tomato sauce (remove it before serving the meatballs).

GIANT VEAL AND RICOTTA MEATBALLS BRAISED IN TOMATO SAUCE

GIANT VEAL AND RICOTTA MEATBALLS BRAISED IN TOMATO SAUCE image

Categories     Beef

Yield 12 large

Number Of Ingredients 18

The Braising Sauce
3 tablespoons unsalted butter
1 large yellow onion, finely chopped
1 celery stalk with leaves, finely chopped
2 garlic cloves, minced
1 bay leaf
2 cups tomato juice (I used more of a tomato puree)
2 cups chicken stock
The Meatballs
1 cup fresh bread crumbs made from day-old rustic white bread
1/2 cup buttermilk (or whole milk)
3/4 cup whole-milk ricotta cheese
1/4 cup freshly grated parmigiano reggiano
1/4 cup chopped flat leaf parsley
1 large egg, lightly beaten
1 teaspoon coarse salt
Fresh ground black pepper to taste
1 1/2 lbs ground veal

Steps:

  • For the braising sauce: Heat the butter in a large, deep skillet over medium heat. add the onion, celery, and garlic and cook, stirring occasionally, until soft and barely translucent but not at all browned, about 10 minutes. Season with salt and pepper Add the bay leaf, tomato juice, and stock. Bring to a simmer, stirring once or twice, and simmer for 15-20 minutes While the sauce is simmering, make the meatballs: Combine the bread crumbs and buttermilk in a small bowl. Stir the bread crumbs around to moisten them. Let sit 5-10 minutes. In a medium bowl, combine the ricotta, Parmigiano, parsley, egg, salt and pepper. Add the soaked bread crumbs and buttermilk and stir everything until well mixed. Break off hunks of the ground veal and drop them into the bowl. Then gently knead the meat to work in all the other ingredients. The goal is to blend everything evenly without overworking the meat - if you overmix it, the meatballs can become tough and heavy. Shaping the meatballs: Using a 1/3 cup measure, scoop out a heaping portion of the veal mixture for each meatball and shape it into a round ball. Again, take care not to squeeze or overmanipulate the mixture. Arrange the balls on a large platter or tray without touching one another. The braise: When the sauce is ready, reduce heat to medium-low and one by one, lower the meatballs into the skillet using a wooden spoon. Once all the meatballs are in the pan, spoon a little sauce over the top of each one and cover the pan. Adjust the burner so that the sauce stays at a low simmer and bubbles lazily rising to the surface. If it simmers too fast, the meatballs will toughen and the full exchange of flavor between sauce and meat won't occur. After 20 minutes, carefully turn the meatballs with a a large spoon. They're fragile spoon sauce over the tops again, cover, and continue to simmer until the meatballs feel firm to the touch, indicating they are cooked all the way through, 35-45 minutes.
