1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1 box (4-serving size) Jell-O™ raspberry-flavored gelatin
1 cup boiling water
1/2 cup cold water
1 container (8 oz) Cool Whip frozen whipped topping, thawed
Fresh raspberries, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan).
  • Make and bake cake as directed on box for 13x9-inch pan. Cool completely in pan, about 1 hour.
  • Pierce cooled cake all over with fork. In small bowl, stir gelatin and boiling water until smooth; stir in cold water. Pour over cake. Run knife around sides of pan to loosen cake. Refrigerate 2 hours. Frost with whipped topping; garnish with raspberries. Store covered in refrigerator.

1 (15.25 ounce) package white cake mix (such as Pillsbury®)
1 cup water
⅓ cup vegetable oil
3 eggs
1 (14 ounce) can sweetened condensed milk
1 (10 ounce) jar raspberry preserves
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 (3.5 ounce) package sweetened flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix cake mix, water, oil, and eggs together in a bowl until batter is smooth; beat with an electric mixer for 2 minutes. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 34 to 38 minutes. Poke holes into the cake using the handle of a clean wooden spoon.
  • Drizzle sweetened condensed milk over the top of the warm cake, ensuring the holes get filled. Refrigerate cake until cool, about 1 hour.
  • Spread raspberry preserves over cooled cake; refrigerate until cool, about 10 minutes.
  • Spread whipped topping over raspberry preserves layer and sprinkle coconut over the top.

This is another version of "poke-cake" recipes. We like to make this in summer when the raspberry supply is plentiful. Note: Cooking time includes the 1-hour cooling time and 2 hours in the refrigerator before serving.

1 (18 ounce) box white cake mix with pudding
1 1/4 cups water
1/3 cup vegetable oil
3 egg whites
1 (3 ounce) box raspberry Jell-O gelatin, 4 serving size
1 cup boiling water
1/2 cup cold water
2 cups frozen whipped topping, thawed
fresh raspberry (to garnish)

Steps:

  • Heat oven to 350 degrees. Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make cake mix as directed on box, using water, oil and egg whites. Pour into pan.
  • Bake 28-33 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • Pierce cake every 1/2 inch with fork. In small bowl, stir gelatin and boiling water until smooth; stir in cold water. Pour over cake. Run knife around side of pan to loosen cake. Refrigerate 2 hours. Spread whipped topping over top of cake; garnish with raspberries. Store covered in refrigerator.

1/2 cup vegetable oil
1 cup water
3 eggs
1 (3 ounce) box raspberry Jell-O flavored gelatin
1 cup boiling water
1/2 cup cold water
1 (8 ounce) package cream cheese (softened)
1/4 cup butter (softened)
1 teaspoon vanilla
3 Tablespoons milk
3 cups powdered sugar
1 cup fresh raspberries
1/2 cup sliced almonds

Steps:

  • Preheat oven to 350 degrees F.
  • Make and bake cake as directed on box for a 9 x 13 inch glass pan. Our cake mix called for vegetable oil, water, and eggs. Let cake cool completely.
  • Poke holes all over cooled cake with a fork.
  • In a small bowl, whisk together Jell-O and boiling water until Jell-O is dissolved; stir in cold water.
  • Pour over cake and refrigerate for 30 minutes.
  • To make the frosting, beat together cream cheese and butter until fluffy.
  • Beat in vanilla, milk and powdered sugar until smooth. Spread on top of cake.
  • Top cake with fresh raspberries and sliced almonds.

1 box white cake mix (+ Ingredients listed on box to prepare cake)
1 box raspberry flavored gelatin (Jello)
2 cups hot water
1 jar (10 oz.) raspberry preserves
1 tub (8 oz.) Cool Whip, thawed
1 bag (7 oz.) shredded coconut

Steps:

  • Preheat oven and prepare the cake according to package directions. Pour the batter in a 9x13 pan and bake for the allotted time on the package.
  • Remove the cake from the oven and allow to cool. Once cooled, use the handle of a wooden spoon to poke holes in the cake every inch or so, only pressing down halfway.
  • Combine raspberry gelatin and hot water until dissolved. Pour evenly over the cake, filling in the holes.
  • In a small bowl, microwave raspberry preserves until easy to spread, about 30 seconds. Pour on top of the cake and spread evenly.
  • Top with Cool Whip and shredded coconut. Refrigerate for at least 4 hours before serving.

Water, vegetable oil and egg whites called for on cake mix box
2 cups boiling water
1 box. (4-serving size) Jell-O™ raspberry-flavored gelatin
1 box. (4-serving size) Jell-O™ lime-flavored gelatin
1 container (16 oz) frozen whipped topping, thawed

Steps:

  • Make and bake cake mix as directed on box in 2 (9-inch) round cake pans, using water, oil and egg whites. Cool completely, about 1 hour.
  • Return cooled cake layers into 2 clean 9-inch round cake pans. With thin stirring straw, toothpick or skewer, pierce cakes at 1/2-inch intervals.
  • In 2 separate medium bowls, add 1 cup of the boiling water into each flavor of gelatin. Beat each with whisk until completely dissolved. With large spoon, drizzle raspberry gelatin over 1 cake; drizzle green gelatin over remaining cake. Refrigerate 1 to 3 hours to allow gelatin to set up in cakes.
  • To remove cakes from pans, dip pans in warm water 10 seconds. Unmold 1 cake onto serving platter; spread 1 1/2 cups of the whipped topping on top of cake. Unmold second cake; carefully place on first cake on platter.
  • Frost entire cake with remaining whipped topping. Refrigerate 1 hour before serving, or until ready to serve.

2/3 cup ice water
1 8-oz. tub cool whip
2-3 cups sweetened flaked coconut

  • Bake cake per manufacturer's instructions for a 13x9 pan. Cool cake completely in the pan. Poke holes in cake using a serving fork, skewer or whatever gets it done (try not to use a regular fork if the tines are pretty close together because it might tear up the cake too much). Mix gelatin with boiling water and stir until completely dissolved. Stir in ice water then slowly pour gelatin mixture evenly over cake. Cover cake and refrigerate until cool. Ice cake with cool whip then sprinkle evenly with coconut. Cover and refrigerate until ready to serve.

This cake is a re-make for my White Chocolate Raspberry Ribbon Cake which I had submitted to Duncan Hines. I omitted the white chocolate and added the mint to the frosting instead of the cake. Let me know what you think.

1 box white or yellow duncan hines cake mix; bake as directed
1 box raspberry jello
1/2 c water, boiling
1 c water, cold
1 lb confectioners' sugar
1 c shortening
2 Tbsp meringue powder
1 tsp clear vanilla
1/4 tsp pure mint extract
4 oz heavy cream
6-8 mint leaves
8-10 fresh raspberries

Steps:

  • 1. Bake the cake as directed using 2-8" or 2-9" cake pans. Let the cake cool completely in the pans.
  • 2. While the cake is cooling prepare the Jello with 1/2 cup hot water, making sure the Jello is completely melted before adding the cold water. Stir completely until clear and set aside to cool.
  • 3. When the cake layers are cool, using a fork, poke holes all over the cake and make some of them deep. Pour the jello evenly all over the two cake layers and place the pans into the refrigerator to chill for at least 2 hours.
  • 4. Weigh out the confectioners sugar and sift into a large bowl; set aside. Measure out 8oz of shortening and set into a large mixing bowl fitted with a paddle. Add in the meringue powder and beat on low speed until combined. Add in the vanilla then drizzle in the heavy cream, once combined turn the mixer up to medium and let it beat for about 2 minutes. Slowly add in the confectioners sugar; a cup at a time to prevent splashing; scrape down the sides of the bowl as well. When all of the sugar is incorporated turn the mixer on high for about one minute to smooth out the lumps. Add in the mint extract at this point.
  • 5. Carefully remove the cake layers from the pans and assemble the cake. Garnish with fresh raspberries and mint. Place the cake back into the refrigerator until ready to serve or serve right away. Enjoy!
