Vegetarian Mexican Pizza is a deliciously quick and easy dinner made from simple everyday ingredients. Make your own pizza crust or use store-bought, and load it up with corn, smashed black beans and red bell peppers.

1 teaspoon Olive Oil
400g / 14.5oz can Black Beans, drained and rinsed
2 large Pizza Bases (see notes)
1/2 cup Tomato Paste
1/2 Brown / Yellow Onion, finely diced
1/2 Red Capsicum / Bell Pepper, finely diced
1/2 cup Corn Kernels (fresh or frozen)
1 1/2 cups Shredded Mozzarella Cheese (or more, to taste)

Steps:

  • Preheat the oven to 200C / 390F and prepare two baking trays lined with a silicone mat or baking paper.
  • Heat oil in a small saucepan on medium heat, then add black beans and cook, stirring regularly, for a few minutes until soft. Pour the beans into a bowl and mash them up with a fork.
  • Put pizza bases on the prepared trays and spread tomato paste over your pizza bases. Next, scatter toppings over the base in this order - onion, capsicum / bell pepper, black beans, corn and cheese.
  • Place the trays in the oven and cook for 15 minutes, or until cheese is melted and golden.

This vegetarian copycat Mexican Pizza Taco Bell recipe is a real treat, and you wouldn't guess that it's healthy! Low in calories, made with whole foods, and ready in less than 30 minutes!

⅓ cup refried black beans
1 tsp taco seasoning (more to taste)
¼ cup mexican 4 cheese blend
1 whole wheat or sprouted wheat tortilla (100-120 calories, with at least 5g fiber)
⅛ cup red onion (diced)
1 roma tomato (seeded and diced)
½ red (or orange/yellow) bell pepper (diced )
2 tbsp Salsa
2 tbsp Guacamole

Steps:

  • Crisp up the whole wheat tortilla in either a toaster oven or a regular oven at 350 degrees for 10 minutes (or until it's crispy like a chip).
  • Heat up your beans in a small pot on low heat, and stir in the taco seasoning.
  • Spread the beans on the tortilla, and then top with veggies.
  • Top the pizza with cheese. Heat in a toaster oven (on medium low) or under a broiler (on high for 2-3 minutes) until the cheese has melted.
  • Top with salsa and guac, and enjoy!

15 ounce can refried black beans ((or regular refried beans) - you'll use half)
1/4 salsa ((use your favorite; a peach-mango tomato salsa is mine))
1 flat bread round or blind-baked pizza crust ((such as Boboli*))
2 cups chopped vegetables ((see suggestions below))
1 cup of a grated melty cheese ((such as quesadilla or fontina))
1 tablespoon minced cilantro

Steps:

  • Preheat oven to 400°F.
  • Heat 1/2 can of refried beans in a small sauce pot over medium/low heat, until soft and stirrable. Add the salsa and reduce heat to low, stirring occasionally to keep the black beans from drying out.
  • Place the pizza round on a baking pan. Spread the black bean sauce over the crust, leaving a finger-hold's width along the edges (an offset spatula or sandwich spreader works really well here).
  • Sprinkle the vegetables over the sauce evenly, followed by the cheese.
  • Bake for 8-10 minutes (or according to the instructions of your pizza crust - the toppings will be okay, whatever the length).
  • Top with the cilantro, and serve immediately.

1 lb ground beef
1 packet taco seasoning
2 tbsp vegetable or canola oil
8 soft taco flour tortillas
1 (15 oz) can refried beans
2/3 cup red enchilada sauce
2 small tomatoes (diced)
1 (8 oz) block colby jack cheese
3 green onions (sliced)
sliced olives
green chiles
minced cilantro

Steps:

  • In a large skillet set over medium heat, brown beef and season.
  • Meanwhile in a small skillet set over medium-high heat, add the oil. Fry the flour tortillas just until golden brown, transfer to a paper towel lined plate.
  • Place four tortillas on a lined baking sheet. Spread tops with a layer of refried beans, then add the taco meat. Place the remaining tortillas over top, then spread with enchilada sauce and top with tomatoes, cheese, green onions (olives and green chilies if desired).
  • Place into the oven and broil until the cheese is bubbly and begins to brown. Remove and garnish with cilantro, if desired. Serve hot.

I always thought that Mexican pizzas sounded really cool and fun to make but always got discouraged at the lack of vegetarian options, since I think a lot of the commercial non-meat ground beef substitutes usually have a soapy taste plus tend to be expensive. Feel free to use homemade refried beans, I prefer the convenience of canned and many brands make vegetarian/vegan varieties. I use ID #389616, All Purpose Mexican Seasoning, feel free to use a commercial type or another mix.

4 eight-inch flour tortillas (preferably whole wheat)
1 (16 ounce) can vegetarian refried beans (black or pinto)
4 teaspoons taco seasoning (to taste, ID #389616)
1/2 cup monterey jack cheese, shredded
1/2 cup cheddar cheese, shredded
1 tomatoes, finely diced
1 small onion, finely diced (1/4 cup prechopped)
2 cups romaine lettuce, shreds
sour cream
your favorite salsa

Steps:

  • Place 4 eight-inch tortillas onto an ungreased cookie sheet. Spread the refried beans across each tortilla and season with the taco seasoning/Mexican spices. Leave about 1/2" of space around the edges like putting sauce on a regular pizza.
  • Bake at 400F for 10 minutes. While they're baking, mix up the cheeses (or measure out 1 cup premade cheddarjack blend) in a small bowl, and the veggies in another.
  • When the tortillas are done baking, top each one with 1/4 cup cheese, and equal amounts of the veggie mix and serve immediately.
