14 ounces heavy whipping cream, divided
¼ cup maple syrup
3 tablespoons pumpkin puree
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1 (14 ounce) can sweetened condensed milk

Steps:

  • Whisk 4 ounces cream, maple syrup, pumpkin puree, pumpkin pie spice, and vanilla extract together in a microwave-safe bowl. Heat pumpkin mixture in the microwave in 30-second intervals, stirring between intervals, until heated through and completely blended, 1 to 3 minutes.
  • Pour sweetened condensed milk, remaining 10 ounces cream, and pumpkin mixture into a container, cover the container with a lid, and shake until completely mixed. Store in the refrigerator.

Rich and creamy vegan non-dairy pumpkin spice coffee creamer! It's so simple - just cashews, pumpkin, spices, maple syrup, and water. Cozy up!

1 cup raw cashews
1 1/2 cups water
2-4 tablespoons pure maple syrup
2 tablespoons pumpkin puree
1 tablespoon pumpkin pie spice**
1/8 teaspoon fine-grain sea salt

Steps:

  • Place cashews in a bowl. Cover with water and let soak overnight. Alternately, use the quick-soak method by boiling the water first. Soaking time will be reduced to 20-30 minutes.
  • Strain and rinse cashews. Discard soaking water. Add soaked cashews to the pitcher of a blender (preferably high-speed like Vitamix). Add 1 1/2 cups water, 2 tablespoons maple syrup, pumpkin puree, pumpkin pie spice mix, and salt. Puree until completely smooth, about 1 minute on high.
  • Taste and add more pure maple syrup if desired. I don't like super sweet coffee creamer, and I find that about 3 tablespoons total is my sweet spot. No pun intended.
  • The following step is completely optional, but if you'd like an extra smooth creamer, you can strain it through a nut milk bag or a fine-mesh sieve lined with cheesecloth (the nut milk bag is much easier). But I usually skip this step.
  • Use the creamer right away, or pour it into an airtight container and refrigerate until ready to use. I stir about 2-3 tablespoons into each cup of coffee. Keeps for about 5 days. It may separate a bit in the fridge; simply give it a shake before using.

3/4 cup(s) sugar (use 3/4 to 1 cup sugar to suit your taste)

  • *This makes enough to fill a 15 oz. container; be sure that container is air tight.

This recipe comes from a dear friend. She owns a pub and is a great cook.

Number Of Ingredients 7

1 cup of organic whole milk
1 cup of organic heavy whipping cream
3 - 4 tablespoons of organic pumpkin puree (i used 4-ha!)
1 teaspoon of pumpkin spice
4 tablespoons maple syrup (i prefer pretty high quality you can taste the difference)
1 teaspoon of vanilla extract
1 teaspoon cinnamon

Steps:

  • 1. Whisk milk, cream, pumpkin, syrup, and pumpkin spice together over medium heat.
  • 2. When it gets steamy remove from heat and add in the vanilla and cinnamon.
  • 3. Use a strainer to transfer the cream into a carafe or pitcher... do not skip this step, trust me.
  • 4. I used a recycled frapachino bottle! Let it cool down and chill it the refrigerator.
