1 (14.75 ounce) can salmon, drained and flaked
2 eggs, beaten
¼ cup garlic and herb seasoned dry bread crumbs
¼ cup dry potato flakes
1 medium onion, minced
1 clove garlic, minced
¼ teaspoon dried dill weed
¼ teaspoon celery salt
salt and pepper to taste
2 tablespoons olive oil

Steps:

  • In a medium bowl, mix salmon, eggs, garlic and herb seasoned dry bread crumbs, dry potato flakes, onion, garlic, dill weed, celery salt, salt, and pepper. Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.
  • Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned.

3/4 pound lean ground beef (90% lean)
3/4 cup finely shredded potatoes
1/4 cup finely chopped onion
2 tablespoons chopped green pepper
1 large egg, beaten
1/4 teaspoon salt
1 tablespoon canola oil
1 cup tomato juice
1 tablespoon all-purpose flour
1/4 cup water

Steps:

  • Combine the first 6 ingredients. Shape into 4 patties; press to flatten slightly. In a large skillet, heat oil over medium-high heat. Brown patties on both sides; drain. Add tomato juice. Simmer, covered, until a thermometer inserted into meat reads 160°, 20-25 minutes. Remove patties to a serving platter; keep warm. , Whisk flour into water; gradually add to skillet. Reduce heat to medium-low; cook, stirring constantly, until thickened. Spoon over patties. Serve immediately.

2 cups cooked smashed potatoes (plain, boiled and fork-smashed potatoes work best)
1 cup shredded mozzarella cheese (can substitute cheddar)
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder or 2 tablespoons thin sliced green onions
1/4 teaspoon black pepper
1 egg, lightly beaten
1 cup breadcrumbs
1/4-1/2 cup vegetable oil

Steps:

  • Combine first 7 ingredients; chill.
  • Shape mixture into 6 patties.
  • Dip each patty into lightly beaten egg then lightly coat with breadcrumbs.

My mom was never much of a cook(bless her soul). She learned on her own. This was one of her "mistakes" that turned out just great! I've changed it ever so slightly. Time to prepare includes chilling time.

14 3/4 ounces canned red salmon
1 1/2 cups cold mashed potatoes (no gravy,pls)
2 tablespoons unsalted butter, room temp., divided
1/4 cup matzo meal (can use cracker meal)
1 egg, slightly beaten
1/2 yellow onion, finely grated (optional)
1/4 teaspoon white pepper
1/4-1/2 teaspoon salt (I use salt substitute)
1/2 teaspoon fresh lemon zest (fresh is important)
2 tablespoons light vegetable oil

Steps:

  • Drain and remove skin from salmon, leave bones.
  • Mix everything but the oils and 1 tbsp butter together. Let rest in refrigerator for at least 30 minutes.
  • Make all the patties and place them on a plate. If they feel a bit too soft to you from the handling, place back in refrigerator for awhile. Don't make more than recipe calls for or they will be dry on the inside.
  • Keep them about the size of your palm -- they will be fat -- press down but don't mash flat.
  • Spray large frying pan with Pam. Heat over medium-high. Add 1/2 tbls butter and one tbsp oil to coat pan nicely. Swirl butter around.
  • Fry four patties at a time til golden brown on both sides.
  • Add rest of butter and 1 tbsp oil. Repeat.
  • These are good either hot or cold.

Mom made these when we had leftover mashed potatoes. We all loved them since they were crispy and tasty. They could even become a meal topped with left over gravy and meat.

1 c shredded cheddar cheese
butter or margarine

OPTIONAL ADDITIONS:

Steps:

  • 1. In a medium bowl mix potatoes, eggs, onions, and cheese. With about 1/2 cup of mixture form potatoes into individual patties. Heat skillet and melt some butter or margarine in it. Fry patties until outside is crispy and inside is hot. Serve with sausage links or other simple main dish.
  • 2. OPTIONAL: You can top patties with sour cream or left over gravy.
  • 3. MAKE THIS A MEAL BY TOPPING PATTIES WITH A MEAT AND GRAVY MIXTURE. Mom might use left over turkey or chicken and gravy, for example.

2 tbsp olive oil
zest and juice 1 lemon
50g fresh breadcrumb
500g pack pork mince
50g grated parmesan
2 tbsp chopped parsley
1 large garlic clove , crushed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss potato wedges in a large roasting tin with 1 tbsp oil and lemon juice. Spread out in a single layer. Bake for 35-45 mins, turning halfway, until golden brown and crisp.
  • Meanwhile, place the breadcrumbs in a mixing bowl and moisten with 2 tbsp cold water. Add the mince, Parmesan, parsley, garlic and lemon zest. Season, mix well, then shape into 4 large, flat patties.
  • Heat remaining oil in a pan and cook the patties for 7 mins on each side, or until they have a golden crust and are cooked through (alternatively, cook on the barbecue). Serve with the wedges and a tomato and rocket salad, if you like

1 lb chicken breast, boneless and skinless, cut into 1 inch pieces
2 garlic cloves, minced
1 small onion, finely chopped
1 egg, slightly beaten
3 tablespoons chopped cilantro
1/2 teaspoon ground cinnamon
1 teaspoon ground turmeric
1 pinch cayenne
black pepper
flour, as needed
corn oil, for shallow frying

Steps:

  • Bring a large pot of water to a boil and add the salt and chicken.
  • Cook 5-10 minutes until done, then remove, let cool, and dice finely.
  • In a bowl put the mashed potatoes, garlic, onion, egg, chicken, parsley, cinnamon, turmeric, cayenne and salt and pepper to taste.
  • Mix well, if mixture is too dry add a little of the cooking liquid and then add enough flour, if needed, to easily form them into patties.
  • Wet or flour your hands and form mixture into patties.
  • In a heavy skillet heat 1/2 inch of oil to 350 degrees.
  • Slide in the patties and cook until golden brown, 3-5 minutes per side.
  • Do not crowd the pan, work in batches if necessary.
  • Drain on paper towels and serve garnished with cilantro.

This combines 2 of my favourite foods salmon and sweet potato and being diabetic friendly is a big bonus. From BH&G Australian Diabetic Living. They suggest serving it with a garden salad or you could stuff into pita bread with salad or put them in a wrap with salad or on bread or roll of choice.

600 g sweet potatoes (orange peeled chopped into even sized pieces)
80 ml water (1/3 cup)
210 g red salmon (canned no added salt drained bones and skin removed and flaked)
125 g corn kernels (casnned drained)
35 g breadcrumbs (1/2 cup fresh made from day old wholemeal grain bread)
2 spring onions (green part finely chopped)
1 egg (50 gram lightly whisked)
1/4 teaspoon ground black pepper (or to taste)
45 g breadcrumbs (dried 1/2 cup)
cooking spray

Steps:

  • Put the sweet potato in a large shallow microwave safe dish and add 80ml (1/3 cup) water, cover and microwave on high/100% for 8-10 minutes or until very soft and drain well OR cook the sweet potato in a steamer basket over a large saucepan of simmering water or steam in a electric steamer, set potato aside for 10 minutes to allow the sweet potato to dry out.
  • Preheat oven to 180C (fan forced).
  • Line 2 baking sheets with baking paper.
  • Put sweet potato in a large bowl and mash until smooth and then add the salmon, corn, fresh breadcrumbs, spring onion and egg and then season with pepper, mixing until well combined.
  • Divide the mix into 16 equal portions and shape into patties.
  • Put dried breadcrumbs on a large plate and coat each patty in the breadcrumbs.
  • Divide the patties between the baking trays and spray with cooking spray on each side and cook in the oven, turning once, for 20 minutes or until browned and cooked through.
  • TIP 1 - You can prepare these patties to the end of step 6, then keep them in the fridge for up to 2 days and when ready to serve continue from step 7 of the recipe or, prepare and cook the patties, keep them in the fridge for up to 2 days and then serve cold or at room temperature.
  • TIP 2 - To freeze the patties, make up to the end of step 6 and then wrap individual patties in freezer wrap and place in a resealable freezer bags, expel air, then label and date and freeze for up to 6 months - when ready to serve, defrost on a plate in the fridge and then continue from step 7 of the recipe.

¼ cup flaked coconut

¼ cup pineapple juice
¼ teaspoon cayenne pepper
¼ cup oil for frying

1 medium about 300g orange sweet potato, peeled, coarsely chopped
1 (425 g) can tuna in water, drained
2 eggs, lightly whisked
25 g dried breadcrumbs (packaged)
1 -2 tablespoon fresh parsley, chopped
salt & freshly ground black pepper
1 tablespoon olive oil

Steps:

  • Steam the kumera in the microwave until tender.
  • Drain and refresh under cold running water. Transfer to a large bowl.
  • Use a potato masher or fork to mash the sweet potato until coarsely mashed. Add the tuna, egg, parsley and breadcrumbs, and stir until well combined. Season with salt and pepper.
  • Divide the tuna mixture into 8 equal portions.
  • Use wet hands to shape portions into 8cm patties.
  • Heat oil in a large non-stick frying pan over medium-high heat.
  • Add the patties and cook for 3-4 minutes each side or until golden brown. Remove from heat.
  • Divide among serving plates and season with salt and pepper.

1 1/2 cups fresh breadcrumbs made from crustless French bread, divided
1/2 cup finely grated carrots
1/4 cup finely chopped red bell pepper

1/4 cup finely chopped fresh cilantro
2 tablespoons finely chopped peeled fresh ginger
1 serrano chile, stemmed, minced
1 teaspoon salt
2 large eggs
1/3 cup (or more) vegetable oil
Ginger-cilantro chutney
Chaat masala* (optional)
Paprika
*Chaat masala is an Indian spice blend available at specialty foods stores and Indian markets.

Steps:

  • Place potatoes in medium saucepan. Add enough water to cover by 1 inch. Bring to boil, then reduce heat to medium and cook potatoes until tender, about 20 minutes. Drain; cool.
  • Peel cooled potatoes, place in medium bowl, and mash. Add 1/2 cup breadcrumbs, carrots, and next 6 ingredients. Mix lightly (do not mash). Divide mixture into 12 portions, using about 1/4 cup for each. Shape each portion into ball, then press lightly to form patty about 2 1/2 inches in diameter. Do ahead Can be made 6 hours ahead. Transfer patties to large plate, cover, and chill.
  • Preheat oven to 200°F. Whisk eggs in medium bowl to blend. Place remaining 1 cup breadcrumbs on large plate. Coat patties first in egg, then in breadcrumbs, pressing to adhere. Transfer patties to clean large plate. Heat 1/3 cup oil in large skillet over medium heat. Working in 2 batches, cook patties until brown, about 5 minutes per side, adding more oil by tablespoonfuls as needed. Place patties on rimmed baking sheet. Transfer sheet to oven to keep patties warm.
  • Place 2 patties on each of 6 plates. Drizzle patties with Ginger-cilantro chutney , sprinkle with chaat masala, if desired, and paprika.

MASHED POTATO POLPETTI (PATTIES)

1/2 cup grated Parmesan
Flour, for dredging
1/4 cup extra virgin olive oil
Leftover gravy

Steps:

  • Re-season potatoes with salt and pepper, stir in cheese. Take a mayonnaise or peanut butter lid, line with plastic wrap to use as a mold. Pack the potato mixture into the lid, unwrap it and place the patty on a baking sheet. You may refrigerate them covered with plastic wrap until the next day, or fry immediately.
  • To cook, dredge the patties in flour. Heat olive oil in a skillet over medium-high heat, add patties. Just before frying, dredge the patties again with flour.
  • Add the patties to the oil without crowding them (you may have to cook them in batches). Cook until underside is golden brown, about 5 minutes, flip and brown the other side. Remove from the skillet and drain on paper towels. Serve hot with leftover gravy.

My mom usually bought a whole bird for Thanksgiving dinner but no one but Grandma would eat anything other than the breast resulting in a lot of leftover dark turkey meat. If your family is the same way this is a great way to get rid of that left over turkey. You can use chicken and fish instead of turkey.

2 cups mashed potatoes
1 lb turkey, shredded
3 garlic cloves, minced
3/4 cup onion, minced
1 egg, beaten
1 tablespoon parsley
1 teaspoon turmeric
1/4 teaspoon cayenne
1/4 cup flour, you may need more
oil

Steps:

  • Mix everything together until well blended.
  • Add enough flour so that the mixture isn't too sticky.
  • Shape into patties and fry until golden brown about 3-5 minutes on each side.

Since I make these all the time I really don't even bother to measure, the ingredient amounts listed are close to the amounts I usually use you can adjust the amounts to taste, I have left the Parmesan as optional I like to add it in --- for the best texture the potatoes must be russet and they should be oven-baked --- I have use panko in place of the butter crackers but I think the crackers give a better taste --- yield is only estimated depending on the size you make the croquettes --- you may make the mashed potato mixture up to 24 hours in advance and refrigerate until ready to roll and bake ----- you will love these!

3 large russet potatoes (or use 4 medium)
2 cups cheddar cheese, shredded
1/4 cup butter, cubed
1 -2 green onion, finely chopped
1/4 cup fresh parsley, finely chopped
1 1/2 teaspoons seasoning salt (or to taste) or 1 teaspoon white salt (or to taste)
1 teaspoon black pepper
1 pinch cayenne pepper
1/2 teaspoon garlic powder (can use more) (optional)
1 teaspoon onion powder
1/4 cup parmesan cheese (optional)
1 large egg, slightly beaten
2 1/2 cups crushed Ritz crackers

Steps:

  • Cook the potatoes until fork-tender, transfer to in a large bowl then mash with a potato masher or a fork until fluffy.
  • Add in the remaining 10 ingredients; mix very well to combine and adjust all seasonings to taste; cool slightly then mix in the egg.
  • At this point you may refrigerate for 1-2 hours.
  • Shape about 3 tablespoons of mixture into a ball.
  • Roll into the cracker crumbs and place on a baking sheet.
  • Press down with hands to flatten just slightly.
  • Repeat with remaining mixture.
  • Set oven to 375 degrees and bake for about 30 minutes or until golden brown.

I seem to always have some leftover mashed potatoes and never quite know what to do with them. This is a nice recipe to make patties that go well with eggs in the morning.

2 c leftover garlic mashed potatoes
1 c mozzarella cheese, shredded
1 large egg, lightly beaten
1/2 tsp salt
1/2 tsp onion powder
1/4 tsp pepper
1 large egg, slightly beaten (for coating)
1 c soft bread crumbs
1/2 c canola oil

Steps:

  • 1. Combine first 6 ingredients; shape into 6 patties.
  • 2. Dip patties into egg, and lightly coat with breadcrumbs.
  • 3. Pour oil into a large, heavy skillet. Fry patties in hot oil over medium heat until lightly browned, turning once.
  • 4. Drain on paper towels.
  • 5. NOTE: You can substitute 2 cups cooked, mashed potatoes plus 1/2 teaspoon garlic powder for the garlic mashed potatoes.
