Categories     Cakes & Pies

Time 1h10m

Number Of Ingredients 9

2 or 3 large organic apples, about (300g), washed and cut into pieces (do not peel, but remove the core/seeds)
2 Tbsp lemon juice
3 eggs
1 1/8 c (250g) sugar
1 3/4 c (275g) all purpose flour (plain flour in the UK)
2 1/2 tsp baking powder (or 1 packet Italian Paneangeli vanilla baking powder)
1/3 c (100g) butter, softened
1/3 c (110g) plain Greek yogurt
1 Tbsp grated fresh lemon zest/peel

Steps:

  • Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
  • In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
  • Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
  • Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
  • Pour into prepared cake tin.
  • Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
  • Let cool completely before cutting and serving.
  • The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

Time 1h15m

Number Of Ingredients 11

1½ cups low fat Greek yogurt
⅔ cup olive oil
1½ cup sugar
3 eggs
1 tsp orange zest (finely zested)
2 tablespoons orange juice
1 teaspoon vanilla
2½ cups all purpose flour
2½ teaspoons baking powder
¾ teaspoon baking soda
½ teaspoon sea salt

Steps:

  • Preheat your oven to 350 degrees
  • Prepare a springform pan by buttering the sides of the pan and using a parchment circle on the bottom (butter the parchment as well)
  • Mix together the flour, sea salt, baking powder and baking soda in mixing bowl
  • In a mixing bowl add the sugar, Greek yogurt, eggs, olive oil, orange juice, orange zest and vanilla. Make sure the ingredients are well blended and creamy.
  • Add in the dry ingredients mixing just enough until well blended with no visible lumps
  • Pour the batter into your prepared springform pan and place in your preheated oven on the middle rack.
  • Bake for 50-60 minutes. The cake should have a rich golden brown color, if it looks as though the cake is getting too brown you can cover it with foil.
  • The cake is done when a toothpick comes out clean from the center.
  • Allow to cool for 10 minutes on a wire rack, then remove the outside of the springform pan, allowing to cool for 15 more minutes.
  • Remove the bottom and parchment and serve warm with homemade whipped cream and fresh berries.

Yield Makes one 8-inch round cake

Number Of Ingredients 15

Unsalted butter, for baking pan
1 large navel orange, cut into 8 wedges
1 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of coarse salt
1/2 cup plain whole milk yogurt
1 teaspoon grated orange zest
1 large egg
3 tablespoons honey
1/2 teaspoon pure vanilla extract
1/4 cup freshly squeezed lemon juice
1/4 cup confectioners' sugar
Bill Yosses's Baked Apples

Steps:

  • Preheat oven to 350 degrees. Butter an 8-by-2-inch round cake pan; line with a parchment paper round and butter again.
  • Bring 4 cups water to a boil in a medium saucepan. Add orange and boil for 5 minutes. Drain, refill saucepan with 4 cups water and boil again. Add orange and boil for 5 minutes.
  • Meanwhile, in a medium bowl, sift together flour, 1/2 cup granulated sugar, baking powder, baking soda, and salt; set aside.
  • Remove orange from boiling water and add remaining 1 cup granulated sugar to boiling water. Cook, stirring, until sugar is dissolved. Return orange to boiling water and cook, until orange is softened, about 5 minutes. Drain and transfer orange to the bowl of a food processor along with 1/4 cup yogurt, orange zest, egg, honey, and vanilla. Process until well combined.
  • Add flour mixture to bowl of food processor; process until combined. Transfer to prepared cake pan and bake until golden brown and a cake tester inserted into the center of the cake comes out clean, 25 to 30 minutes.
  • Meanwhile, in a small saucepan, whisk together lemon juice, confectioners' sugar, and remaining 1/4 cup of yogurt. Bring to a boil over medium-high heat. Let boil until glaze is thickened, about 3 minutes.
  • Remove cake from oven and invert onto a wire rack set over parchment paper. Remove parchment paper round; pour glaze over cake. Let stand until glaze is absorbed. Serve cake with sliced baked apples.

ORANGE YOGURT CAKE

This is a very moist, very sweet cake. I like it a lot with coffee. UPDATE: I have corrected the recipe, and the batter now contains 1 cup of sugar. Thanks to Cookgirl for catching my mistake, and my apologies to anyone who might have been inconvenienced. :o

Time 1h15m

Yield 20 serving(s)

Number Of Ingredients 17

2 1/2 cups unbleached white flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 eggs
1 cup sugar
3/4 cup melted butter
2 teaspoons orange rind, grated
1 teaspoon vanilla
1 cup plain low-fat yogurt
1/2 cup orange juice (I use fresh-squeezed)
1 cup sugar
1/2 cup water
1/2 cup orange juice
1 cinnamon stick
2 -3 pieces orange peel

Steps:

  • Preheat the oven to 350°F Butter and flour a 9x13 cake pan.
  • Combine the dry ingredients (the first five listed).
  • Beat together the eggs and sugar until foamy. Add the butter, grated orange peel, and vanilla.
  • Add yogurt, juice, and dry ingredients to the egg mixture gradually.
  • Bake for 45 minutes, until the cake is firm and golden.
  • Combine all syrup ingredients in a small saucepan and bring quickly to a boil.
  • Lower heat and simmer for 10 minutes.
  • Allow to cool, and remove the cinnamon stick and orange peel.
  • Poke holes into the top of the cake and pour the syrup over it while the cake is still warm. It's going to seem like an awful lot of syrup, but keep pouring!
  • I think this cake tastes best when it's completely cooled, so try to wait a while before eating.
