I've been researching liqueur recipes to make as hostess gifts for Rosh Hashana. This one is delicious, great drizzled on some vanilla ice cream.

3 large oranges
3 cups vodka
1 1/3 cups superfine sugar

Steps:

  • Wash the oranges well with soap and water.
  • Pare very thinly the bright-colored rind from the oranges (no white).
  • Blot the peel on paper towels to remove any excess oil.
  • Put the peel in a 4 cup screw-top jar.
  • Add 2 cups vodka.
  • Close jar.
  • Store in a cool, dark place for 2 days or until the vodka has absorbed the flavor.
  • Remove the peel and add the remaining vodka, along with the superfine sugar.
  • Close the jar and store in a cool dark place at least 1 month to age.

3 tablespoons confectioners' sugar
3 tablespoons orange liqueur
1 large orange, juice and zest reserved
1 lemon, juice and zest reserved
1 vanilla bean
1/2 pint whipping cream
1 pint premium vanilla ice cream

Steps:

  • Toss the strawberries with the confectioners' sugar, liqueur, juices, and zest. Allow to marinate refrigerated for 30 minutes. Split the vanilla bean open with a knife and scrape out the seeds. Add the seeds to the whipping cream in an ice cold bowl and whip the cream to soft peaks just prior to serving. Serve one scoop of ice cream in a martini glass, spoon some marinated strawberries over the ice cream and serve with a dollop of whipped cream on top.;

1 cup sugar
1 cup water
2 teaspoons orange zest
2 tablespoons Cointreau liqueur

Steps:

  • Combine sugar and water in a medium saucepan.
  • Bring to a boil; add cranberries, return to a boil.
  • Reduce heat and boil gently for 10 minutes, stirring occasionally.
  • Remove from heat. Add orange zest and Cointreau (or Grand Marnier) and stir.
  • Let cool at room temperature.
  • Refrigerate until cold, or serve at room temperature.

1 (9 inch) refrigerated pie crust
1 cup fresh strawberries, hulled
¾ cup water
¾ cup white sugar
3 tablespoons cornstarch
3 tablespoons orange liqueur (such as Grand Marnier®)
3 cups fresh strawberries, hulled

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Bake the pie crust in the preheated oven until puffed and golden-brown, 20 to 25 minutes. Remove to a wire rack and cool completely.
  • Puree 1 cup of strawberries in a blender until smooth. Pour pureed strawberries into a saucepan. Stir in the water, sugar, and cornstarch. Bring to a boil over medium heat until thickened, stirring often. Remove from heat and stir in the orange liqueur. Set aside.

I tossed this together at the last second for a fruit salad and it turned out wonderful. I did not have time to chill the salad, but it was fine at room temp. Use cold fruit so the salad does not have to be chilled before serving or bananas and apples may turn brown.

1 peeled orange, sectioned, seeds & white cover removed
1 granny smith apple, peeled and cut into small chunks
15 red seedless grapes or 15 green seedless grapes
1 banana, ripe but still firm, sliced
1 tablespoon light brown sugar
1 tablespoon orange-flavored liqueur (Grand Mariner etc.)
1 tablespoon sweetened flaked coconut (optional)

Steps:

  • Toss fruit together adding banana last to keep from mashing it.
  • Sprinkle brown sugar over fruit and toss gently.
  • Sprinkle orange liquor over fruit and toss again gently.
  • Chill and serve.
  • Sprinkle coconut over top if you like.

FROZEN CHOCOLATE MOUSSE WITH ORANGE LIQUEUR

2 cups heavy cream
8 ounces bittersweet chocolate, finely chopped
4 large eggs, separated
1/2 cup plus 1 tablespoon orange liqueur (preferably Grand Marnier)
3/4 cup plus 1 tablespoon granulated sugar
4 ounces bittersweet chocolate, finely chopped
1 tablespoon coconut oil
Confectioners' sugar, for dusting

Steps:

  • Make the mousse: Line a 7- to 8-inch bowl with plastic wrap, leaving a 2-inch overhang. Beat 1 cup heavy cream in a large bowl with a mixer on medium-high speed until stiff peaks form, about 2 minutes. Refrigerate until ready to use. Clean and dry the beaters.
  • Put the chocolate in a large heatproof bowl. Heat the remaining 1 cup heavy cream in a small saucepan over medium heat until hot but not boiling, then pour over the chocolate and stir until melted. Set aside.
  • Bring 1 1/2 inches of water to a boil in a wide pot; reduce the heat to maintain a gentle simmer. Whisk the egg yolks, 1/2 cup orange liqueur and 1 tablespoon granulated sugar in a medium metal bowl. Set the bowl over the pot of simmering water (do not let the bowl touch the water). Continue whisking, frequently scraping down the sides of the bowl with the whisk, until the mixture is thick, has almost doubled in volume and leaves a trail when you lift the whisk, about 5 minutes. Remove the bowl from the pot. (If the yolk mixture thickens too quickly or starts to scramble, remove the bowl from the pot and let cool slightly, whisking, then return to the pot.)
  • Put the egg whites and the remaining 3/4 cup granulated sugar in a large metal bowl and set it over the simmering water. Beat on medium speed with a hand mixer until fluffy and shiny, about 3 minutes. Remove the bowl from the pot and continue beating until stiff peaks form, about 4 more minutes.
  • Using a rubber spatula, fold the egg yolk mixture into the melted chocolate mixture until combined, then fold in the beaten egg whites until combined with some white streaks. (Do not overmix.) Gently fold in the whipped cream until no streaks remain. Fold in the remaining 1 tablespoon orange liqueur. Scrape the mixture into the plastic wrap¿lined bowl. Cover with plastic wrap and freeze at least 6 hours and up to 2 days.
  • Make the chocolate shell: Combine the chocolate and coconut oil in a medium microwave-safe bowl; microwave in 30-second intervals, stirring, until smooth. Remove the mousse from the freezer and uncover. Invert onto a platter and gently remove the plastic wrap. Pour the chocolate shell over the mousse and spread with the back of a spoon or a pastry brush to make a thin layer. Return to the freezer until the chocolate hardens, at least 10 minutes. Dust with confectioners' sugar right before serving.

ORANGE LIQUEUR RASPBERRIES

2 half pints raspberries
2 tablespoons sugar
2 tablespoons orange flavored liqueur
8 ounces creme fraiche, to serve
6 Cinnamon Elephant Ears (see recipe)
1 cup sugar, divided
Pinch kosher salt
1/4 teaspoon cinnamon
1 sheet puff pastry, defrosted (recommended: Pepperidge Farm)

Steps:

  • Pour the raspberries in a bowl and add the sugar and orange flavored liqueur. Stir lightly. Gently mash half the raspberries with a fork. Cover the bowl with plastic wrap and allow to sit for about 1 hour until softened and juicy.
  • To serve, fill the bottom half of a stem glass with the raspberries and spoon a dollop of creme fraiche on top, and place a Cinnamon Elephant Ears cookie on top of the creme fraiche.
  • Preheat the oven to 450 degrees.
  • Combine 1/2 cup of the sugar and kosher salt and pour it over a flat surface such as a wooden board or marble slab. Unfold the sheet of puff pastry onto the sugar mixture.
  • Combine 12 cup of the sugar and the cinnamon and spread it evenly on the puff pastry. This is not about sprinkling, it's about an even covering of sugar. With a rolling pin, lightly roll the dough until it's a 13-inch square and the sugar is pressed into the puff pastry on top and bottom. Fold the sides of the square toward the center so they go halfway to the middle. Fold them again so the two folds meet exactly at the middle of the dough. Then fold one half over the other half as though closing a book. You will have 6 layers. Slice the dough into 38-inch slices and place the slices, cut side up, on baking sheets lined with parchment paper.
  • Bake the cookies for 6 minutes, or until caramelized and brown on the bottom, then turn with a spatula and bake for another 3 to 5 minutes, until caramelized on the other side. Transfer to a baking rack to cool.

ROASTED PEPPER TURKEY WITH ORANGE LIQUEUR

1/2 cup white wine
Pepper Rub
1½ teaspoons dried basil
1 1/2 teaspoons dried oregano
1 teaspoon cayenne pepper
1 tablespoon paprika
1 1/2 teaspoons salt
3 tablespoons Grand Marnier Seasoning, 5 cloves garlic; 2 small onions, sliced; 2 carrots, cut in rounds; 1 bay leaf; 2 orange slices

Steps:

  • Preheat oven to 350 degrees F. Remove the neck and other organs from the turkey cavity and reserve to make stock at a later time. Rinse the turkey in the sink and let the water gush inside the cavity
  • Mix all ingredients for the rub together with the Grand Marnier. Spread it over the outside of the turkey, reserving 1 tablespoon. Spoon the 1 tablespoon into the cavity of the turkey. Stuff the cavity with all of the seasoning ingredients.
  • Set the turkey in a roasting pan and pour in the wine. Cover the turkey with foil and roast. After 2 hours, uncover turkey and baste with the cooking juices. Continue to baste turkey with the juices every 20 minutes for the next 1 1⁄2 hours, until it is done. Total roasting time should be 3 1⁄2 hours.
  • Let the turkey cool for at least 15 minutes before carving.

1/4 cup water
1/2 cup butter or 1/2 cup margarine
1/4 cup orange juice
3/4 cup sugar
1 teaspoon orange zest
1/2 cup triple sec or 1/2 cup other orange-flavored liqueur

Steps:

  • Sprinkle pecans in bottom of a greased and floured 10-inch Bundt pan.
  • Set aside.
  • Combine remaining ingredients except Glaze in a large mixing bowl.
  • Beat 30 seconds at low speed of electric mixer, then 2 minutes at.
  • medium speed.
  • Pour into prepared pan.
  • Bake at 325 degrees for 1 hour or until a wooden pick inserted in.
  • center comes out clean.
  • Cool in pan 10 minutes; remove and let cool.
  • completely on wire rack.
  • Using a wooden pick, pierce cake at 1-inch intervals.
  • Spoon Glaze over cake.
  • Glaze: Melt butter in heavy saucepan.
  • Stir in orange juice and sugar.
  • Bring to a boil.
  • Boil 5 minutes, stirring constantly.
  • Remove from heat and stir in orange peel and liqueur.
  • Makes 1 1/4 cups.

  • Preheat an oven to 425 degrees F (220 degrees C). Scrub and dry the potatoes, then prick several times with a fork and place onto a baking sheet.

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  • Sift flour and baking powder together in a bowl. Beat white sugar and butter together in a separate bowl using an electric mixer until smooth and creamy; beat in eggs. BLOOD ORANGE LIQUEUR



Blood Orange Liqueur image

4 blood oranges
1 lemon
fresh ginger, 2-inch piece peeled and sliced
2 cups vodka
1 1/2 cups simple syrup

Steps:

  • Make simple syrup by heating 2 1/2 cups water and 3 cups sugar in a saucepan over medium heat until it comes to a boil. Lower heat and simmer 5 minutes. Let cool before using. Any extra will keep in the refrigerator for a month or so, and is good for sweetening iced tea, etc.
  • Wash, dry and peel the zest from the oranges and lemons, being careful not to take any of the pith. Place in a large glass jar.
  • Remove pith from two of the oranges. Cut up the fruit and add to the jar. (You will not use the remaining oranges in this recipe).
  • Stir to smash the fruit a bit, add the vodka, ginger and lemon and seal the jar.
  • Place in a cool, dry spot, away from sunlight for two weeks, swirling it about occasionally.
  • Stir in the simple syrup, reseal, and again set aside for two weeks, swirling occasionally.
  • Strain the liqueur.
  • Filter it through a double layer of cheesecloth into a pitcher.
  • Filter a final time through 2 new layers of cheesecloth into the final bottle.

CORNISH GAME HENS WITH KUMQUATS AND ORANGE LIQUEUR SAUCE

My family calls games hens "Bak-baks." Any family crazy enough to nickname poultry is crazy enough to cook with kumquats. We have our own kumquat tree, so the hunting and gathering is kept to a minimum. I've served this for Thanksgiving instead of roast turkey - a very nice change!

2 large rock cornish game hens
chicken giblets, from rock cornish game hen (optional)
50 kumquats (about)
1 bunch fresh tarragon
6 large garlic cloves
1/4 cup frozen orange juice concentrate
2 tablespoons granulated sugar
2 tablespoons sifted flour
2 tablespoons orange liqueur
1 (10 ounce) can chicken broth
1/2 cup water

Steps:

  • Preheat oven to 375 degree Fahrenheit.
  • Remove tarragon leaves from the stems; place aside. Wash and dry kumquats; slice in half and remove all seeds; place aside. Crush, dice, or press the garlic cloves; place aside. Rinse game hens with cold water and pat dry.
  • Separate the skin from the game hen's breast. Push in the tarragon leaves and crushed garlic under the skin; the skin protects the leaves and garlic from burning. Place tarragon stems inside the hen's cavity, along with about 35-40 seeded kumquats.
  • Place game hens on a raised rack in a roasting pan. Add 1/2 cup of water to the bottom of the pan to prevent the juices from burning. Cook for about one and ½ hours at 375 degrees Fahrenheit. Baste frequently and replenish the water in the pan as needed.
  • Optional: Place giblets in a saucepan and cover with water. Cook over medium heat until done, about 1 hour. Remove and allow to cool. Chop and set aside.
  • Coarsely chop the remaining 10 to 15 kumquats. In a sauce pan, combine the orange juice, sugar, and kumquats. Bring to a slow boil and reduce heat to a low simmer. Stir frequently and cook until done, about 30 to 45 minutes. Set aside.
  • Remove the game hens from the oven after 90 minutes or when golden brown and done. Transfer the game hens to a serving platter. Remove and discard the tarragon stems. Reserve the cooked kumquats and decoratively place around the hens.
  • Deglaze the roasting pan and transfer the drippings to a saucepan. Carefully add the flour to make a roué. Add chicken broth and cook over medium heat until the gravy is thickened, about 5 to 10 minutes. Add giblets (optional).
  • Combine the orange liqueur with orange juice/kumquat sauce and add to gravy. Simmer another 5 minutes. Transfer to gravy boat.
  • Carve game hens and serve each portion with gravy and kumquats.

This recipe is from the book "Small Batch Canning" by Topp and Howard. I haven't made this yet but the peaches are starting to hit the farmer's market and it looked simple and easy.

3 cups peaches, peeled and chopped
2 cups granulated sugar
2 tablespoons lemon juice
2 tablespoons orange liqueur (or frozen orange juice concentrate, thawed)

Steps:

  • Place peaches and sugar in a deep 8 cup microwavable container.
  • Stir in lemon juice.
  • Microwave, uncovered, on High (100%) for 7 minutes, stirring twice.
  • Microwave uncovered, on High for 12 to 15 minutes or until mixture will form a gel, stirring every 4 minutes.
  • Stir in liqueur.
  • Ladle into sterilized jars and process 5 minutes in boiling water.

BROILED LAMB CHOPS WITH A MINT-ORANGE LIQUEUR SAUCE AND WHITE ASPARAGUS



Broiled Lamb Chops with a Mint-Orange Liqueur Sauce and White Asparagus image

1/2 cup orange liqueur (recommended: Grand Marnier)
3 sprigs fresh mint, leaves chopped
1/4 cup beef stock
2 tablespoons butter
Kosher salt and freshly ground black pepper
2 racks of lamb, frenched and cut into chops
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 sprigs fresh rosemary, leaves chopped
2 tablespoons butter
2 tablespoons olive oil
2 bunches white asparagus, bottoms trimmed
Kosher salt and freshly ground black pepper

Steps:

  • For the sauce: In saute pan add the orange liqueur. Pour the alcohol into the pan and carefully ignite with a match or click lighter. Return the pan to the stove top over medium-high heat and gently swirl to reduce the flames. Add the mint and beef stock and reduce by half. Finish the sauce with the butter and season with salt and pepper. Hold warm. For the lamb: Preheat the oven to broil.
  • Sprinkle the lamb with salt, pepper and rosemary. Broil the lamb 2 minutes per side for medium-rare. Remove and let rest 5 minutes under foil .
  • While the lamb is resting, start the asparagus: Heat a saute pan over medium-high heat. Add the butter, olive oil and asparagus and saute until the asparagus is al dente, about 7 minutes. Season with salt and pepper.
  • To serve, place 2 to 3 lamb chops per plate, drizzle with the sauce and garnish with the asparagus.

Champagne Punch with Raspberry & Orange Liqueur Recipe - (4.2/5) image

6 tablespoons sugar, divided
1/2 teaspoon McCormick ground ginger
2 (750ml) bottles Brut champagne
32 ounce white cranberry peach cocktail (or white grape juice)
1/2 cup raspberry liqueur
1/2 cup orange liqueur (like La Belle Orange or Solerno Blood Orange)
1 orange, sliced thin
1 cup fresh raspberries
5 to 6 fresh ginger slices

Steps:

  • Chill the champagne and fruit juice. Mix 3 tablespoons sugar with 2 tablespoons water in a small bowl. Microwave for 1 to 2 minutes, until the sugar dissolves. Pour into a shallow dish. Then mix the remaining 3 tablespoons of sugar with the ground ginger. Place in a separate shallow dish for dipping. In a large punch bowl, mix the champagne, juice and both liqueurs. Garnish with orange slices, raspberries and ginger slices. To serve, dip the rims of the punch glasses into the simple syrup. Then immediately dip them in the ginger sugar. Ladle the punch into the glasses and pass around. Cheers!
