1 1/2 teaspoons grated orange zest
2 1/3 cups all-purpose flour
3/4 teaspoon baking soda
1 1/2 teaspoons ground ginger

6 pieces dried crystallized ginger (not in syrup), sliced in half

BELGIAN WHITE BEER COOKIES WITH ORANGE ICING

Belgian White Beer Cookies With Orange Icing image

Make and share this Belgian White Beer Cookies With Orange Icing recipe from Food.com.

Provided by swissms

Categories     Drop Cookies

Time 50m

Yield 24-36 cookies, 12 serving(s)

Number Of Ingredients 15

2 (12 ounce) bottles belgian style white beer (recommended ( Hoegaarden)
5 tablespoons honey
3/4 cup unsalted butter, at room temperature
1 1/4 cups powdered sugar
1 large egg
1/2 teaspoon vanilla extract
1 medium orange, zest of
2 teaspoons ground coriander
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup powdered sugar
1 tablespoon orange juice
1 tablespoon whole milk
1 orange, zest of

Steps:

  • Put the beer and honey to a medium saucepan and reduce over medium heat until you have about 1/3 cup of liquid. You will occasionally have to skim the foam off the top of the beer. You will know you have hit 1/3 of a cup of liquid as the liquid will suddenly begin to aggressively foam due to the high concentration of sugar (This looks different from foaming due to carbon dioxide, the bubbles are much larger with the sugar foaming).
  • Let this reduction cool to room temperature.
  • Cream the butter and sugar together.
  • Add the egg and blend thoroughly. Then add the vanilla, orange zest, coriander, and beer reduction and blend again.
  • Mix the flour and baking soda together then slowly add to the batter.
  • Preheat oven to 350°F
  • Scoop mounds of cookies onto an aluminum cookie sheet lined with parchment. Make sure you do not overcrowd the cookies; you should be able to fit about 12 cookies on a half sheet pan.
  • Bake for 15-20 minutes. Let the cookies cool on the cookie sheet until they are cool enough (about 10 minutes) to transfer to wire racks to cool completely.
  • Icing:
  • Using the icing ingredients whisk the vanilla into the sugar.
  • Mix the orange juice and milk together.
  • Add milk and orange juice mixture to sugar until you reach the consistency of a thick paste. Add orange zest if desired.
  • Using a butter knife put a dollop of icing on each cool cookie and spread it over the top.
  • Cook's notes: This recipe has no salt in it. Because of the beer, adding salt can make the cookies too salty.
  • The cookies should be a little crispy on the outside, and cake like on the inside.

CARROT & ORANGE CAKE WITH CASHEW CREAM ICING

Carrot & Orange Cake With Cashew Cream Icing image

My DH is supplementing his diet with more raw foods and he asked me to make him a carrot cake with icing. I found this recipe on the Raw Chef site and tweaked it a little to suit my tastes. Its really good, and a little goes a long way as holds true with most raw foods. The reason raw food goes further then cooked IMHO is that the enzymes in the food are "alive", and because of this the ability for your body to process and digest them is better. You get the full nutritional benefit from the food when its raw. The satisfactory factor goes up when you eat raw. Please use organic where ever possible. NOTE: I didn't include the soaking time for the dates and the setting up time for the cake and icing in this recipe.

Provided by Chef Joey Z.

Categories     Dessert

Time 35m

Yield 12 serving(s)

Number Of Ingredients 16

3 cups carrots (finely grated)
2 cups pecans (ground in a food processor)
1/4 cup dried apricot (chopped rough and unsulpherated please)
1 teaspoon ground nutmeg
1 1/2 teaspoons mixed spice (see mixture below in the directions)
1 cup dates (soft and made into a paste)
1/2 cup orange juice
1/2 teaspoon celtic sea salt
1/2 teaspoon lemon zest (you could use lime or orange)
1/2 cup desiccated unsweetened coconut
1 1/2 cups raw cashews
1/2 cup filtered water
2 tablespoons agave syrup
3 tablespoons cocoa butter or 3 tablespoons coconut butter
1 tablespoon organic vanilla extract
1/4 teaspoon celtic sea salt

Steps:

  • FOR THE SPICE BLEND:.
  • 3 tablespoons cinnamon.
  • 1 teaspoons each ground cardamom and carraway.
  • 1/4 teaspoons each nutmeg, ginger and cloves.
  • FOR THE DATE PASTE:.
  • If your dates are hard, soak them for about 20 mts. in the orange juice. If your dates aren't soft in 20 minutes leave them in the juice until they are. This is important. Once soft process these in a food processor so that you have a nice paste.
  • ASSEMBLE THE CAKE:.
  • In the bowl of a stand mixer slowly mix all the ingredients. Either shape into individual cakes or press into an 8x8" glass pyrex dish.
  • Put into the fridge and let set up for at least 2 hours or *you can also dehydrate this by placing on a dehydrator sheet for 8-12 hours at 115'F.
  • FOR THE FROSTING:.
  • Blend all the ingredients in a high speed blender such as a Vita Mix, until smooth.
  • Place the frosting in the fridge to thicken up, then ice your carrot cake. You can do this all at once of add a little to each piece. Its up to you.
  • Garnish the cake with ground nutmeg.
  • Bon Appetit!

BROWNIES WITH ORANGE ICING (FROSTING)

Brownies With Orange Icing (Frosting) image

I've fallen in love with the chocolate and orange combination and wanted a brownie recipe to add to my collection. This is what I came up with. I didn't measure the zest or juice. I used half the zest of a large orange in each part and squeezed in enough orange juice to make a smooth icing.

WHOLE WHEAT CARROT CAKE WITH CREAMY ORANGE ICING (LOW FAT)

Whole Wheat Carrot Cake With Creamy Orange Icing (Low Fat) image

Many carrot cakes call for as much as a cup of oil, 4 eggs, 2 cups of sugar. But all that oil isn't necessary for this moist, delicious cake. I love this low fat cake. Use Whole Wheat PASTRY flour found in health food stores. You can use whole wheat flour but the cake will be denser. I also sifted my all purpose flour.

ORANGE-ALMOND CAKE WITH CHOCOLATE ICING RECIPE

Orange-Almond Cake with Chocolate Icing Recipe image

I love the taste of Chocolate covered orange candy so I worked to come up with a cake reflecting those flavors. I love the texture the almonds give this cake. It's always a hit at potlucks. I have made it as a layer cake, Bundt cake or cup cakes. Enjoy.

ORANGE ALMOND CAKE
3 large oranges
2 1/2 c all purpose flour
1 c whole almonds
2 Tbsp baking powder
1/2 tsp salt
2 cup + 1 Tbsp sugar
1 c (2 sticks) unsalted butter
4 large eggs
1 c whole milk
1/2 tsp vanilla extract
1/4 tsp almond extract (i also use orange extract or all vanilla)
1 1/2 c fresh orange juice
ESPECIALLY DARK CHOCOLATE FROSTING
1 c (2 sticks) butter
1 1/3 c hershey's special dark cocoa
6 c powdered sugar
2/3 c milk (i also use 1/2 & 1/2)
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350°F. Butter three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Dust with flour; tap out excess. Using vegetable peeler, remove peel (orange part only) in strips from oranges. Coarsely chop enough peel to measure 1/2 cup.
  • 2. Combine flour, 1 cup almonds, baking powder and salt in processor; blend until finely ground. Transfer to medium bowl. Place 2 cups sugar and orange peel in processor; blend until peel is finely minced.
  • 3. Using electric mixer, beat butter in large bowl until blended. Add sugar mixture and beat until fluffy. Beat in eggs 1 at a time. Mix milk and both extracts in small bowl. On low speed, beat flour mixture into egg mixture alternately with milk mixture in 3 additions each. Divide batter among prepared pans.
  • 4. Bake cakes until tester inserted into center comes out clean, about 25 minutes. Cool cakes in pans on racks 5 minutes. Turn cakes out onto racks and cool completely .
  • 5. Boil 1 1/2 cups fresh orange juice and remaining generous 1 tablespoon sugar in small saucepan until reduced to 1/2 cup, about 8 minutes. Brush warm juice mixture over tops of cooled cakes.
  • 6. Place 1 cake layer, orange syrup side up, on cake platter. Spread 1 cup Chocolate Icing over. Top with second cake layer, then 1 cup icing. Top with third cake layer, syrup side up. Spread remaining icing over top and sides of cake. (Can be prepared 1 day ahead. Cover with cake dome and store at room temperature.)Arrange additional almonds, orange triangles and mint leaves around top edge of cake. Slice cake and serve.
  • 7. FROSTING Melt butter, add to bowl of mixer. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

BANANA CAKE WITH ORANGE ICING

Banana Cake With Orange Icing image

Another great banana cake but with a blast of citrus; gives it an added zing! It is lower in fat than some and I quite often make it without the icing so it is not too sweet either. I often add something extra as well...often a handful of dried cranberries really sets it off. I usually bake it in a tube pan but that is my personal preference. This recipe originated in "Lighthearted Everyday Cooking" by Anne Lindsay.
