I don't know where I got this recipe from, but recipes are only guidelines for me, so I am not sure if this is the real recipe or my variation of the original. I didn't even know what to call it! I love this dish, and so does my entire family. I serve with Spanish rice or ranch beans and a salad.

4 skinless, boneless chicken breast halves
1 lime, or to taste
salt and ground black pepper to taste
1 cup chunky salsa
2 cloves garlic, minced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange chicken in the bottom of a 2-quart casserole dish. Squeeze lime juice over the chicken and season with salt and pepper.
  • Mix salsa and garlic together in a bowl. Spoon 1/4 cup of the salsa mixture over each chicken breast; top with more lime juice.
  • Cook chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 boneless chicken breast
2 -3 cloves garlic, peeled and chopped
2 tablespoons oil
1 1/2 teaspoons dry coriander powder
1/4 teaspoon turmeric powder
1/4-1/2 teaspoon red chili powder
1 1/2 tablespoons lemon juice
3 -5 coriander leaves, chopped,to garnish
salt

Steps:

  • Wash and cut the chicken into one inch pieces.
  • Heat oil in a pan.
  • Add garlic and salt.
  • Fry the former till it is light brown.
  • Add chicken pieces.
  • fry for 5-6 minutes, stirring constantly.
  • Add the masala powders.
  • Stir for another 3-4 minutes.
  • Check to see if the chicken is tender.
  • Remove from heat.
  • Add lemon juice.
  • Garnish with chopped corriander leaves.
  • Serve hot.

Delicious white bean chili. Cha Cha says: 'It's kinda spicy, so watch out!' Substitute mild green chiles for the jalapenos if you're scared! Use more chicken and cheese as desired.

1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese

Steps:

  • Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
  • Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

Quick, simple and veg packed Japanese style egg-fried rice makes use of leftover rice and vegetables. Most vegetables will work in this recipe, so use up what you have. For a lower fat option you could use chicken breast or prawns, or simply omit meat. Approx. 530 cals.

Steps:

  • Prepare the vegetables and cut chicken into small chunks.
  • Heat 1/2 tsp sesame oil on a low heat and add the garlic and chicken thigh, and fry until the chicken starts to turn white.
  • Add the rest of the oil and add the carrot, pepper, bottom part of the cabbage and white part of the spring onion and continue to fry until the chicken is cooked. If your rice is cold, heat it up now.
  • Move the chicken and vegetables aside, and crack the egg in the pan and put the hot rice on top. Quickly mix the eggs and rice, trying to separate the grains and distribute the egg evenly.
  • Add the sake and season with salt and pepper, then add the rest of the cabbage and spring onion and mix everything thoroughly.
  • Finally, add the soy sauce around the sides of the pan and stir it in, and serve immediately.
