MY OMAS LENTIL SOUP

This is one of my all time favorite soups. It is thick and hearty. It is a recipe that I grew up with. You can tinker around with it, but I have always loved that it is so simple. I have guessed at the prep time and cooking time as the soup can simmer for a while after it is done. Can omit wurst and sub vegetable broth for chicken if you want to make it vegetarian.

Number Of Ingredients 6

1 (16 ounce) bag brown lentils
4 potatoes, diced and peeled
2 large carrots, diced and peeled
4 cups chicken broth (may need more or can use some water too)
5 pieces bacon (cooked and broken up)
6 bratwursts

Steps:

  • Add first 3 ingredients to a large pot.
  • Add 3 cups of broth.
  • Cook over medium heat stirring occasionally until everything is tender.
  • You may need to add some more broth or water as it is absorbed.
  • 30 minutes before you want to serve it add the wurst or hot dogs if you wish and let them cook through.
  • Serve with hearty bread and a salad.

1 (16 ounce) bag lentils
4 celery ribs, chopped
1/2 large onion, chopped
1/2 teaspoon garlic, chopped
2 -3 fresh pork hocks
1/2 cup brown sugar

Steps:

  • Combine all but brown sugar after adding cold water to cover. Simemr about 2 hours. After simmering, add your brown sugar. If it does not taste sweet enouph to you add a little more brown sugar. Remove hocks, cool, take off meat and add to soup.

I got this lentil soup recipe from my mom. It is WW Core Friendly. I do not know where she got it from.

3 cups lentils, washed
10 cups water
2 tablespoons low-sodium instant chicken bouillon granules
1 onion, peeled and chopped
6 stalks celery, chopped
4 carrots, sliced
6 garlic cloves, chopped
2 tablespoons olive oil
2 tablespoons lemon juice
salt & pepper, to taste

Steps:

  • Combine all ingredients except the last 3. Cover & bring to a boil. Stir and reduce heat to simmer. Cook for 25 minutes more, stirring occasionally until lentils are soft and soup is thick. Add more water as needed. Add last 3 ingredients, stir. Reheat or freeze.
  • Suggestions: I usually use 16 ounces of lentils (2 cups). If you use more, you'll need to add more water during the cooking time. If not, it'll be too thick. I also adjust the celery and carrots. I like more carrots than I do celery, so I double the carrot and half the celery.
